A similar transformation is afoot in Americanised fast foods like burgers, pizzas and subs. However, this time the change is more organised as it’s driven by quick service restaurants or QSRs – instead of dhabas and hawkers, who had kickstarted the Indo-Chinese food revolution. According to a report by Sharekhan, over a quarter of the menus of top QSRs like Pizza Hut, Dominos, Subway, McDonald’s and KFC have been ‘Indianised’. Among these, the most Indianised of menus is offered by Burger King – with over 40% of its offerings like veg makhani burst burgers and <keyword id="1647327" type="General" weightage="80" keywordseo="aloo-tikki" source="Orion">aloo tikki</keyword> burgers. KFC’s biryani bucket combos that offer chicken legs with spiced gravy and flavoured rice is an Indian alternative to its popular international combo — rice with strips. “Big international brands such as Domino’s Pizza, Subway, McDonald’s and Burger King have incorporated to their menus a large range of products that are created to target the Indian taste palate. chasing. The Indian QSR market is expected to grow at 23% for the next three years driven by the post-pandemic surge in ordering via aggregator platforms like <keyword id="830092" type="General" weightage="50" keywordseo="zomato" source="Orion">Zomato</keyword> and Swiggy. “In post-Covid era, a large shift to branded products, increasing frequency of ordering on delivery platforms and strong traction for value products provides large scope for QSR players to fast expand its penetration in the Indian market,” the Sharekhan report said. The report also identified sweet spots in tier II, tier III and even tier IV cities where menu localisation will help grab more market share, along with providing value options for the cost-conscious young customers. With customers having become used to food being delivered to their doorstep at the touch of a button and at any time of the day, convenience has become key and is helping drive delivery growth, the report said. It is already moving away from occasion-based ordering to habitual ordering, the report added. However, to compete with the large ecosystem or unorganised players like local restaurants and food chains that offer every option, QSRs are having to work harder for their market share. “Indian customers’ demanding nature is driving QSRs to introduce products that go beyond the basic,” the Sharekhan report said. The company entered the Indian market in 1996. Since launching, McDonald’s has worked in sync with two licensed partners in India — Connaught Plaza Restaurants (CPRL) for the North &amp; East region and Westlife Development for West &amp; South. However, in 2013, it got embroiled in a legal battle with CRPL that has been ongoing for five years now and has impacted its financial performance over the years. In 2017, the company reportedly <a href="https://economictimes.indiatimes.com/industry/services/hotels-/-restaurants/mcdonalds-india-subsidiary-posts-net-profit-finally/articleshow/67250494.cms">saw a </a>net loss of nearly ₹3.05 billion, swinging to the profit of ₹6.52 million this year. However, the overall loss for the food major was ₹4.21 billion. While McDonalds launched in India in a joint venture with CRPL, it reportedly expelled Vijay Bakshi, then managing director of CRPL, discontinuing its franchise <a href="https://www.businesstoday.in/current/corporate/mcdonald-posts-its-first-ever-profit-in-india-after-22-years/story/304280.html">agreement</a> for its 169 outlets, resulting in a legal battle between the two. Presently, the fast-food chain is spread over 400 locations in India. McDonald’s just earned a profit in India for the first time since launching in the country over two decades ago

Not very long since the nation witnessed <a href="http://www.businessinsider.in/Nestle-India-CEO-admits-Maggi-ban-was-the-result-of-a-major-breakdown-in-communication-with-the-Govt/articleshow/49889701.cms">Maggi noodlemaker Nestle get into a rather ugly tussle with the food regulator FSSAI</a> for objectionable levels of lead in their product, it’s now fast food giant McDonald’s which seems to be in trouble. 
 
This may come as a shock to all the <a href="http://www.businessinsider.in/McDonalds-may-shift-more-jobs-to-India-as-part-of-cost-cutting-move/articleshow/52807564.cms">McDonald’s lovers</a>, but a few of the company’s outlets have ended in a soup as they have been reusing oil which is at least 15-16 days’ old, while cooking their yummy Aloo Tikkis, French fries and other items. This emerged during a recent routine check by the food inspectors headed by Chief Medical and Health Officer <keyword id="1243390" type="PERSON" weightage="100" keywordseo="Narottam-Sharma">Narottam Sharma</keyword>, who were undertaking their usual inspection drive that they do every summers, to ascertain the way ice creams are being made and served by restaurants. 
 
Even as they found nothing wrong with the way ice creams were being served, this one trip by the officers last Friday to a particular McDonald’s Outlet in Jaipur’s posh Raj Mandir area near Panch Batti took them by surprise. The Food inspectors spotted oil black in colour being used to cook French fries and other items in the outlet.

“My officers checked the oil, and it turned out that it was Palmolive oil that was being used. An on the spot inspection of the oil revealed that it was at least two weeks’ old, and was being reused by the outlet,” Sharma told Business Insider.

The same oil was being heated to 360 degree temperature every day, due to which it turned thick and black in colour. Moreover, reheating and reusing oil depletes it of all the protein and nutrition, and converts it to saturated fatty acid which can cause direct health implications. 
 “We immediately took samples and destroyed at least 120 kg of <keyword id="3433721" type="UNKNOWN" weightage="100" keywordseo="stale-oil">stale oil</keyword> on the spot so that the outlet would not be able to use it any further,” Sharma said, adding that such irresponsibility from a fast food giant came as a shock to him and his team. 
 
However, the story did not end here. 
 
Now aware of such cooking measures at restaurants, Sharma decided to take rounds of some other outlets of McDonald’s and a few other fast food chains with his team to see if this was being practiced elsewhere too, and as the team was now expecting, this outcome was not a pleasant one either. 
 
“We went to McDonald’s outlet in Elements Mall. Even as they were using fresh oil, we spotted that they had 50 kg of reused oil stored in containers. We took samples from here too, and destroyed the reused oil then and there,” said Sharma, adding that his team also took samples of the salt that was being used as it did not have the right levels of potassium and minerals, and seemed unfit for consumption. 
 It wasn’t just this fast food giant, Sharma said, but others like <keyword id="6366667" type="COMPANY" weightage="100" keywordseo="Subway">Subway</keyword> and <keyword id="6376241" type="CITY" weightage="100" keywordseo="KFC">KFC</keyword> too where they picked up oil samples and samples of the biscuits being baked on the suspicion that these chains may also be resorting to similar unhealthy practices. 
 
What also comes as a shock is that these were not isolated incidents that took place in the Jaipur outlets only. Irregularities were reportedly also found in a Varanasi-based mall, where the Food Department officials found Palm Oil, Mayonnaise and Chipotle dressing unfit for consumption. The local media reported that McDonald’s staff here was not co-operative enough when the raids took place. 
 
When we asked Sharma if he found rash behaviour by the staff present on the scene in the Jaipur outlets, he said they were calm and co-operating with the authorities. 
 
He further informed us that all the samples collected have been sent to labs for testing, and if irregularities found are confirmed, the Food department will proceed to file a case against the companies in question. 
 
Meanwhile, we reached out to the company to seek a response on the matter, and they dismissed any wrongdoing on their part. Here’s what the company spokesperson McDonald’s India (North &amp; East) said: “The statement by the local food safety authorities is far from accurate. The way the information has been shared clearly reflects that our oil management system and the practices have not been understood by the authorities. We follow a comprehensive Oil management system in all our restaurants to ensure best quality food. We will be more than happy to demonstrate our oil management system and practices to all our stakeholders; and we are sure they would inspire confidence.” 
 
“An important aspect to understand is that FSSAI has not defined the standards for the oil in use...yet, we have a robust and reliable oil management system that ensures consistent quality and safe food is sold across all our restaurants. In fact, in one of the recent instances in UP, the Office of the Commissioner, Food Safety, pronounced an order in our favour underlying our contention,” the statement further read. 
 Even as both sides have their version, it remains to be seen whether we will see this fast food giant and others in a similar legal tussle with the Food department authorities as <keyword id="75190" type="CITY" weightage="100" keywordseo="Nestle">Nestle</keyword>.

So demand comes in from all channels. We have doubled delivery numbers year on year,” she said. Arvind said, “In the post-pandemic phase, the brand has gone to the next level, we have really amped up on our omni-channel convenience. Delivery is a very important lever for the business today. Over the last two years, we went to the consumer with our golden guarantee campaign. And that went a long way in reassuring consumers in the context of the pandemic, telling them food is safe to eat and also talking about stringent quality standards and safety standards the brand has always had, which elevated during the pandemic. Pre-pandemic, about 20-25% of the business was delivery and now 40-45% of the business comes from delivery. In fact, our overall convenience channels, which is our delivery, our drive through, our on the go is upwards of 50-60%. In its next phase of growth, the QSR giant aims to expand its presence further into the country and capture the coffee and fried chicken market. According to Edelweiss Securities report, India’s quick-service restaurant (QSR) market is expected to clock a compound annual growth rate of 23% between 2021 to fiscal year 2025. As per Technopak, India’s food services market was estimated at ₹4,236 billion in FY20. “We plan to open about 25-30 stores every year and are broadly open to emerging retail opportunities. Apart from metros like Mumbai and Bengaluru, even the smaller towns are doing very well. As an example, our drive throughs in some of the smaller towns were the first to recover post pandemic and they went up to over 50% of their original pre-pandemic sales. Our new products like McSpicy fried chicken are higher in demand in smaller towns, especially in the South,” said Arvind. Talking about the next phase of growth, Arvind added, “Future McDonald's would be something that plays across multiple dimensions. The first dimension would be categories, where we build leadership in burger, chicken and coffee. The second dimension would be across different dayparts. We are uniquely positioned as a brand to play across breakfast, lunch, snack, dinner and post dinner. NEW DELHI: <keyword id="6376241" type="CITY" weightage="100" keywordseo="KFC">KFC</keyword>, the Kentucky-based fast-food chain known for its “finger-lickin’ good” range of chicken fillets and burgers, has finally given in to India’s penchant for vegetarianism. In what appears to be a first across all KFC franchises globally, KFC India has unveiled a segregated vegetarian menu along with a strong message about its newfound bias for vegetarian offerings. 
 
Paneer Zinger and Veg Twister, in addition to the hot-selling Potato Krisper Burger, Veg Strips, Veg Rockin’ Burger and Veg Rice Bowl will now vie for consumer mind space along with their popular non-veg counterparts. The company has not only introduced new products under its veg range, it has also tweaked its global tagline “So good” to “So veg, so good” to show its commitment towards the category. 
 
Executives at the company say the new menu will help them satiate high local demand for vegetarian options. “We recognized an opportunity to deliver a significant vegetarian range for the Indian consumer, and to reach out to a broader target audience,” says Dhruv Kaul, director of marketing at KFC India. 
 Around 42% of Indian households are vegetarian, according to the Food and Agricultural Association of the <keyword id="6355833" type="ORGANIZATION" weightage="40" keywordseo="united-nations">United Nations</keyword>, and 35% of weekdays are vegetarian for rest of the non-vegetarian population. The apparent split is backed up by consumer choice at various fast food restaurants across the country. For instance, last month, on National Breakfast Day, out of the total free breakfast meals offered by fast food chain <keyword id="126895" type="CITY" weightage="40" keywordseo="McDonald">McDonald</keyword>’s, 66% customers chose a Veg McMuffin over Egg McMuffin. 
 
Interestingly, McDonald’s is the first global fast-food chain to bring in a customized vegetarian menu to India, which boasts of McAloo Tikki burgers, among others. Since then, it has steadily been increasing the number of vegetarian options on its menu, along with other chains such as Subway. 
 
Similarly, as reported earlier by TOI, nearly 70% of the total pizzas sold in the country are vegetarian pizzas even in regions like Punjab, which is known for its meat-loving populace. “It also helps that vegetarian options are more affordable than non-vegetarian ones,” says Arvind Singhal, chairman of retail consultancy Technopak. 
 In the future, vegetarian offerings are expected to play a big role for fast food companies in India, with more and more urban consumers preferring vegetarian food as it is considered healthier. At present, India is emerging as one of the fastest growing fast food markets in the world. According to a <keyword id="819559" type="ORGANIZATION" weightage="40" keywordseo="National-Restaurant-Association">National Restaurant Association</keyword> of India (NRAI) report, the fast <keyword id="194559" type="ORGANIZATION" weightage="40" keywordseo="Food-Industry">food industry</keyword> in India is estimated at Rs 8,000 crore and is growing at a CAGR of 35-40% annually.
