Netflix won just four awards in Sunday's telecast - for "Ozark," "When They See Us," and the interactive "Black Mirror" movie, "Bandersnatch" - as well as 23 in the creative arts presentations. Overall, it still took home more Emmys than in 2018.Netflix campaigns hard for Emmy awards to show that its originals can compete on the same stage as those from legacy networks like HBO. HBO held onto its crown at the 2019 Emmy Awards, while Amazon cleaned up in comedy

<ul class="summary-list"><li>"<keyword id="37013" type="ENTERTAINMENT" weightage="60" keywordseo="Brokeback-Mountain">Brokeback Mountain</keyword>" is revered as the quintessential queer movie, and is many people's go-to film when asked about their favourite LGBT movies.</li><li>The film is just as popular today, 15 years after it's release, thanks to an expertly crafted story, career-defining performances from stars Heath Ledger and Jake Gyllenhaal, and a legacy boosted by it's 2006 Oscar loss.</li><li>Insider spoke to several filmmakers about why <keyword id="104710" type="PERSON" weightage="60" keywordseo="Ang-Lee">Ang Lee</keyword>'s movie is still so important, including queer directors Craig Johnson and Daniel Ribeiro.</li><li>Johnson said: "It could've felt like a cheap porno. But it was exquisitely done, so undeniably moving and had such an impact."</li><li>However, the directors warned it could lose it's status as the ultimate gay movie as queer cinema evolves and the film industry starts to embrace LGBT representation in movies.</li></ul>"Brokeback Mountain" was released 15 years ago. That's a pretty long time in cinema — from "War of the Worlds" to "Avengers: Endgame." The sweeping romance follows Jack (Jake Gyllenhaal) and Ennis (Heath Ledger) as they engage in a complex, passionate, and forbidden love affair over two decades.Since the release of Ang Lee's movie, queer representation onscreen and behind the camera has increased substantially (although there is still a very long way to go). We've had the first-ever mainstream LGBT rom-com in "Love, Simon," cultural juggernauts like "<keyword id="4293215" type="PERSON" weightage="60" keywordseo="call-me-by-your-name">Call Me By Your Name</keyword>" and "Carol," about three Disney movies featuring Disney's "first-ever" LGBTQ character ("Beauty and the Beast," "Onward," and "Zootopia"), and "Moonlight," which did what "Brokeback Mountain" couldn't and became the first-ever queer movie to win best picture at the Academy Awards.Yet "Brokeback Mountain" is still viewed as the go-to gay movie. In Insider's recent chats with various queer and ally filmmakers about their favourite <keyword id="9424856" type="UNKNOWN" weightage="60" keywordseo="lgbtq-movies">LGBTQ movies</keyword>, Lee's seminal film was mentioned by every single person. The effect that "Brokeback" has had on the film industry, its filmmakers, and the queer community, is still rippling today — even 15 years later. We spoke to several queer filmmakers about what makes "Brokeback Mountain" the quintessential queer movie.<div type="image" title="Brokeback Mountain" height="1200" width="1600" msid="76715410" hostid="261"></div><h2>Universality — 'The two lovers here just happen to be men'</h2>It's probably wise to start off with the film's actual quality — which, by almost all accounts, is pretty high. It has a Rotten Tomatoes score of 87%, and most critics were enamoured with the movie the moment it first hit screens.David Calhoun, writing for <a href="http://www.timeout.com/film/83318.html">Time Out</a>, said: "Lee has taken a story of gay love and placed it where it should be — in the mainstream. He's delivered a beautifully crafted film to boot."Meanwhile, Kenneth Turan of <a href="http://www.calendarlive.com/movies/turan/cl-et-brokeback9dec09,0,186375.story">The LA Times</a> said: "It's a deeply felt, emotional love story that deals with the uncharted, mysterious ways of the human heart just as so many mainstream films have before it. The two lovers here just happen to be men."Striking a similar was Roger Ebert, writing for the <a href="http://www.rogerebert.com/reviews/brokeback-mountain-2005">Chicago Sun-Times</a>: "'Brokeback Mountain' has been described as 'a gay cowboy movie,' which is a cruel simplification."It is the story of a time and place where two men are forced to deny the only great passion either one will ever feel. Their tragedy is universal. It could be about two women, or lovers from different religious or ethnic groups — any 'forbidden' love."There's a tight rope to walk here — embracing queerness and queer characters but at the same time not alienating mainstream, predominantly straight audiences. "Brokeback Mountain" straddles this line expertly, presenting their leading queer characters and their forbidden love with so much sympathy that it turns to empathy.They are gay, and while most audience members may not understand exactly what it is like to love someone, and be something, that is deemed so taboo it could lead you to catastrophe, or, in "Brokeback Mountain's" case, death, Lee's movie depicts forbidden love, something a lot of people know of, so expertly and touchingly that it's hard not to get sucked into caring thoroughly about these characters — whether you're gay or straight.Ang Lee is responsible for that. Oscar-nominated "Precious" director Lee Daniels <a href="https://www.insider.com/lee-daniels-brokeback-mountain-ang-lee-2020-6">told Insider that he was originally set to direct "Brokeback" himself</a>, which led him to avoid watching the films for almost 15 years because he "didn't think that [Ang Lee] would do it justice.<div type="image" title="Lee Daniels 1" height="1200" width="1600" msid="76715412" hostid="261"></div>"When [Jack and Ennis] first had sex in the tent, I saw that scene how I would direct it, so I just couldn't imagine any other filmmaker doing it justice. Especially a straight filmmaker taking it on."Daniels, however, said that Lee's heterosexuality actually helped the film achieve the success it has — and, when he finally saw the movie, admitted it was excellent."He did it in a way that was palatable for many heterosexuals around the world. I would have probably been more in your face with it, and he did it from a different perspective, so kudos to him. And I told him that."<h2>'Brokeback Mountain' is 'above the radar,' but still embraces its queerness</h2>There is a danger here, of course, of straight-washing LGBTQ movies. Go too far to please the mainstream audiences, and you'll lose the queerness. The gay conversion camp drama "Boy Erased," while ably acted by its cast (particularly Lucas Hedges), almost seems scared of the subject matter. It never embraces it's queerness, despite a well-meaning message.<div type="image" title="boy erased" height="804" width="1071" msid="76715416" hostid="261"></div>It felt tailored to straight audiences, whereas "Brokeback Mountain," while not exactly tailored to queer audiences in the way that a modern TV show like "Pose" is, is so direct in its depiction of queer love and the dangers of being gay that it feels absolutely authentic.Craig Johnson, the queer director of Netflix's "Alex Strangelove" spoke to Insider about the impact that Lee's movie had on him as a viewer as well as a filmmaker."I came out as gay during the time 'Brokeback Mountain' came out, so it coincided with this time of me feeling like I couldn't live a lie anymore and wanting to finally embrace fully who I am," Johnson told Insider.<div type="image" title="Alex Strangelove" height="1200" width="1600" msid="76715421" hostid="261"></div>"Then I see this movie and it was a really emotional experience for me. Not only because in that movie you see what societal repression and internal repression can do to you. But also those feelings of like 'if you're gay, you're gay.' You can try to change it but you can't, and it's going to mess with you if you don't figure it out."Johnson said that it was this matter-of-factness that helped it as it became the first movie with queer themes and characters "just blew the doors off the culture."I remember before it came out, I was nervous, and people were joking about 'oh, it's the gay cowboy movie. And is it going to be silly? Is it going to make people laugh?' It could've felt like a cheap porno. But it was exquisitely done, so undeniably moving and had such an impact."It just felt like: 'I knew this moment was coming.' Everything else prior to that felt a little indie or under the radar, but 'Brokeback' was fully above the radar."<h2>The infamous Oscar loss actually helped the legacy of the movie.</h2>Back in 2006, "Brokeback Mountain" was tipped to become the first LGBT movie to win best picture at the Academy Awards. It had already won four Golden Globes (including best picture and best director) and three BAFTAS (including best picture and best supporting actor for Gyllenhaal) by the time the March ceremony rolled around.It was also the most nominated film of that year's ceremony, with eight Oscar bids in total, and crucially had support from several of the key branches of the academy that a film typically needs in order to win best picture — picking up nominations for directing, writing, and acting.But when presenter Jack Nicholson announced the winner, it "Crash" that he read out rather than "Brokeback Mountain." Nicholson sounded surprised himself when he called out the movie, and large sections of the audience can be seen not applauding.It was deemed a terrible injustice, and one of the Academy's biggest mistakes in its 93-year history. "Crash" was a good film, but didn't earn as good reviews as "Brokeback" did, nor did it make as much money ($101.2 million to "Brokeback's" astonishing $178.1 million), and it certainly wasn't the pop-culture juggernaut Ang Lee's movie is.Even now, after shocks like "Moonlight" beating "La La Land," "Green Book" winning over pretty much every fellow best picture nominee, and "The King's Speech" beating "The Social Network," the "Crash" is constantly cited as the worst in various publications' lists of worst <a href="https://www.theguardian.com/culture/2018/jan/25/the-20-greatest-oscar-snubs-ever-ranked">Oscar snubs.</a>This status as the Academy Award's most hard-done-by movie was further ratified when "Crash" director <a href="https://www.theguardian.com/film/2015/aug/12/paul-haggis-crash-best-picture-oscar">Paul Haggis said that his film didn't deserve to win best picture</a> as it wasn't the best movie of the year.All of this, however, just helped to build up a network of support and a sense of loyalty to "Brokeback Mountain." The furore following "Brokeback's" loss helped to give the film a longer life, and kept in many conversations for far longer than it probably would have been if it had just quietly won as expected.Queer cinema did later get its "revenge," when "Moonlight" beat "La La Land" in an embarrassing case of mistaken identity, but "Brokeback Mountain" will always remain the movie the Oscars let get away.<h2>'Brokeback' is so focused on repression, that it doesn't allow it's queer characters to ever truly enjoy their desires</h2>However, not everyone Insider spoke to was so taken with the movie. James Wilby, who starred as one half of an iconic gay couple himself in James Ivory's 1987 masterpiece "Maurice," told Insider that he was "irritated" by the movie despite also thinking it was "remarkable."In "Maurice," Hugh Grant's Clive represses his sexuality and lives life as a straight man, whereas Wilby's titular character embraces his identity as a gay man in Edwardian England.<div type="image" title="Maurice" height="1200" width="1600" msid="76715425" hostid="261"></div>"I thought the way that James Ivory handled Clive's transition from, if you want to call him or gay or if you want to call him something esoteric, into being straight was better [than 'Brokeback']," Wilby told Insider."As an audience, we know that he has lied to himself. It's intuitive. It's writ large without anybody doing anything. Whereas in 'Brokeback Mountain,' I didn't believe it. There was something wrong about that."What "Maurice" does so well that "Brokeback" perhaps doesn't is that it shows its queer characters enjoying their sexuality."Brokeback" is so consumed by presenting Jack and Ennis' tragic repression that it forgets to allow the characters to ever enjoy their own desires as queer people, which is something LGBTQ audiences are crying out for and "Maurice" delivers.Most of the love scenes in "Brokeback" are full of anger, like they hate the person they are making love to rather than loving them. Of course, it's themselves that they actually hate because of their repressed homosexuality, so anger is an understandable response in those circumstances. They are so ashamed of themselves that they want to resist and stop, but can't help their own desires — and that mix of feelings comes out in anger.There are some tender moments of affection, particularly in a scene in which Ennis gives in and goes to Jack in the tent, but in "Brokeback" every exchange is always laced with a sense of negativity, or guilt, or resentment.It's fine that "Brokeback" does this — Jack and Ennis face very dangerous consequences to embracing their sexuality, so the way they make love is understandable, and suits their characters perfectly.But, still, it's not an uplifting story, and queer audiences are getting tired of overt tragedy in LGBT movies.<h2>'I think the queer community deserves fairytales, too. We deserve Disney-like happy endings'</h2>"Philadelphia" follows a gay man with HIV (Tom Hanks) trying to sue his former company for wrongful dismissal. No prizes for guessing the ending.Charlize Theron plays a bisexual serial killer in "Monster."Tony Kushner's "Angels in America"follows a group of people during the AIDS epidemic."A Single Man" follows a gay man (Colin Firth) preparing for suicide following the death of his boyfriend."Boy's Don't Cry" tells the story of transgender man Brandon Teena, who was brutally killed.The list goes on.As "Tell Me I Love You" director Fiona MacKenzie told Insider: "Basically, they are all tragic. People die. It's pretty dark. I suppose it's appealing to an actor, to go all the way there. But you also need the light-hearted stuff."These are all great films, and important ones too, but queer audiences have outgrown these types of tragedy porn movies. We don't really want to be reminded about how brutal the world can be, and would love more variety in the LGBTQ movies we get, which is finally starting to happen.<div type="image" title="Call Me By Your Name pool" height="1200" width="1600" msid="76715430" hostid="261"></div>"Call Me By Your Name" is the summer holiday to "Brokeback's" harsh, cold, slog.It's bright and joyous, and makes you want to be Elio (Timothee Chalamet) or Oliver (Armie Hammer), whereas you'd never want to be Jack or Ennis. It's also full of intense passion, and the love scenes let its queer characters enjoy being gay."Love, Simon" was a groundbreaking movie purely for exisiting, but gave us the fun and happy gay rom-com we've been dying for, for years. Craig Johnson's "Alex Strangelove" followed suit — a carefree, uplifting comedy that also wisely depicts one gay man's journey to self-acceptance.Even "Moonlight" and "Carol," both set in repressive societies, manage to squeeze positive moments, uplifting messages, and hopeful endings into their artfully made stories."Brokeback Mountain," for all of its quality and impact, does not.Daniel Ribeiro, who directed "The Way He Looks" (another captivating queer film), told Insider why queer audiences deserve happier movies."It's so important to have those types of serious movies because they represent reality, and we cannot live in this fairy tale world, but I think the queer community deserves fairytales, too. We deserve Disney-like happy endings," Ribeiro said."Although there is a lot of violence in the LGBT community, against the LGBT community, I think most people they find love, they have relationships, they find people they love. It is inevitable that it will lose its current status at some point.But that's a good thing. In years to come, once we've had a full taste of queer cinema as the film industry slowly begins to embrace LGBTQ representation, we will struggle to nail down just one film as "the quintessential queer movie." The more that happens, the less status "Brokeback Mountain" may have as cinema offers us stories and characters from a variety of LGBT backgrounds. Fast forward to 2021, when that dream finally took flight. I tried living in a few cities that first year (Lisbon, Warsaw, Amsterdam, Gdańsk, Nice, to name a few), but something was always missing. I couldn't name it, but I could feel it.It wasn't until after my first week of living in Vienna that I had a name for what I'd been lacking: belonging. I'd always sought belonging in people, places, and jobs, but it remained elusive, always slipping from my fingers. The award was given, in part, for the city's stability, healthcare and education systems, and other factors. And in our time here, I've gotten to learn why Vienna is so wonderful.<h2>I'm constantly finding new reasons to love this city</h2><h2><div type="image" title="Maria Theresa Platz, an old building with flowers outside of it" height="1080" width="1440" msid="103869666" hostid="261"></div></h2>Vienna seems to have an infinite array of cultural experiences, as varied as museums, concerts, and festivals. I love the many buildings with their grandeur and Baroque or Art Nouveau details.I love the clean streets, hundreds of cafés, beautiful vineyards, and all of the green space that covers <a href="https://www.wien.gv.at/english/environment/parks/" target="_blank" rel="noopener">half of the Vienna area</a>.I'm also regularly impressed by the city's public-transit system that seamlessly moves people around the city via buses, trains, trams, and underground lines.<h2><div type="image" title="A large building in front of water at night" height="2274" width="3024" msid="103869667" hostid="261"></div></h2>The relaxed city comes fully alive in the summer and the <a href="https://www.insider.com/best-states-to-visit-in-winter-season-us">winter</a>, too. Don't get me started on the famous Christmas markets — they're my favorite.I often find myself walking around the city, smiling at nothing and everything.<h2>The pace and price of living here makes it even better</h2><h2><div type="image" title="Sonya Matejko and her cat snuggled together on a couch" height="1741" width="2316" msid="103869670" hostid="261"></div></h2>Fortunately, the city is also <a href="https://www.insider.com/american-moving-to-europe-cheaper-than-us-summer-camp-2023-7">far more affordable</a> than where I've lived before. I've seen studio apartments in Vienna available for well under 1,000 euros, about $1,070. My rent in New York City was close to double that amount for one bedroom in a shared space. Overall, I've found the cost of living for me is lower here than it was in my hometown in Florida, too. Beyond affordability, it's Vienna's pace that I love the most. I no longer feel like I'm in a rush all of the time, and I feel and see an ease in the city that makes existing in it, well, easy.And, <a href="https://www.insider.com/expat-moved-from-uk-vienna-masters-hated-it-2023-7">contrary to what I hear from some ex-pats</a>, I've found it easy to make friends and build my community here using Facebook groups such as <a href="https://www.facebook.com/groups/188796762527090" target="_blank" rel="noopener">International Women of Vienna</a>, going to coworking spaces, and even joining local yoga studios.<h2>I've still got a lot to learn, but I enjoy being a student here</h2><h2><div type="image" title="Sonya Matejko and a friend on a ride in Vienna smiling" height="3024" width="4032" msid="103869672" hostid="261"></div></h2>As I continue learning more and getting involved with my community, I'm figuring out who I will become. For now, I can get by when ordering coffee and <a href="https://www.insider.com/what-its-like-flying-plane-for-groceries-alaska-living-2022-11">buying groceries</a>.I always appreciate the polite smiles as I do my best with new German words and phrases, and think it's kind when people switch to English when I get beyond what I've memorized. People here often tell me I'm in my honeymoon phase with Vienna, but I think they're mistaken. I like who I am here, and I'm committed to her and this beautiful city.

Chairs were placed at a perfect 45-degree angle to the table. Dishes were presented in line with Chiang's trademark Octaphilosophy and represented his chosen eight elements of food: texture, memory, pure, terroir, unique, salt, south, and artisan. Food lovers from as far away as Germany and Brazil would fly to Singapore for a taste of Restaurant André's S$450 ($333) degustation menu.In the fall of 2017, Chef André Chiang was on track for big success. He was poised to receive his third Michelin star, and Restaurant André was on the brink of being crowned <keyword id="21718" type="ENTERTAINMENT" weightage="60" keywordseo="Asia">Asia</keyword>'s best restaurant. A documentary crew was following Chiang around.And then, on October 10, Chiang announced that in four months' time he was shutting it all down.His staff sat dumbstruck as he delivered the news. So did the rest of the gastronomic world. And yet, in a recent phone call with Insider, Chiang called it his proudest moment."I had finished my masterpiece," he said.The chef came to the decision to close down operations on the same day that he made the announcement."That morning I was sitting on a sofa in the restaurant and I realized I had nothing to do," he said. "Everything was so perfect. Chef Ernest Toh is the Head Chef at Mume in Taiwan, which is also featured on Asia's Best 50 list. He says that Chiang's recognition has showed other young Chinese chefs that owning a global fine-dining restaurant is possible."I feel like it did make a difference, that the role of running an upscale restaurant with high expectations need not be limited to European chefs. Especially with chefs in Taiwan, they look to him as a role model," Toh told Insider.But Chiang, now 45, didn't always feel so directly connected to his roots.He left Taiwan at the age of 13 to live in Japan with his mother. Two years later, he moved to France to train at the three-Michelin star restaurant Le Jardin des Sens. Over the next nine years he worked his way up to become the chef de cuisine and went on to work for a series of renowned restaurants in France.In 2008, he moved to Singapore to open Jaan par André at Swisshotel The Stamford. Tables sold out and the restaurant drew rave reviews, which, Chiang said, encouraged him to open his own restaurant: "We were at the maximum of what we could deliver at Jaan par André, and if we expected to go higher in quality, experience, and detail, Restaurant André was the right thing to do."Two years later, he opened his self-titled restaurant in the posh Tanjong Pagar neighborhood. He installed an olive tree outside the front door, which he brought as a keepsake with him from France. It was at Restaurant André that he created his Octaphilosophy, which focused on the aforementioned eight elements. "Memory" was the only dish that never changed, as the warmed foie gras and truffle couli was the first dish he created on his own in France. Chiang retained the stars for another year and in 2017 was ranked No. 2 on Asia's Best Restaurants list. <h2>A return</h2>In 2017, Singaporean director Josiah Ng approached Chiang about being the subject of a feature documentary. But as Chiang drew closer to winning the title of the best restaurant in Asia and his third Michelin star, he began to question why he was doing it. "When I first became a chef, having the best restaurant in the world or three Michelin stars was my ultimate goal. But then I started to ask myself what are we doing? What are we chasing?""It was the same feeling as what people experienced during the pandemic. It's not the big house, fancy cars, or travel that was important - it was your family, friends, and health," added Chiang.He closed the midnight-blue doors of the colonial mansion-turned restaurant on February 14. A month later, Chiang moved home to Taiwan. "Each year I write a list of 10 things I want to achieve," Chiang said of the decision to return. "Coming back to Taiwan had gone from bottom of the list to the top of the list as I started to feel disconnected from my home country."In August, Ng's documentary, "André and the Olive Tree" was released. Much like Chiang's own philosophy on food, the 104-minute documentary is presented in eight chapters. It aired at film festivals in the US, Iceland, and Canada. In December, Netflix and the Discovery channel bought the rights to the documentary, which has become the top-grossing documentary release so far in Taiwan in 2021. The documentary even beat Disney's "Mulan" at the box office for two weeks.Media analyst Teresa Phillips, CEO of global technology and data company Spherex, told Insider it's not hard to see why "André And The Olive Tree" became a sensation in Taiwan."A confluence of factors contributed to the documentary's success in Taiwan," Phillips said. "The timed theatrical release, a story of a successful man giving up everything to come back to his roots, themes of hope in times of despair during the pandemic, and excellent marketing strategies."<div type="image" title="Chef Andre Chiang eating street food in Taiwan" height="1256" width="1675" msid="84060250" hostid="261"></div><h2>A recalculation</h2>Chiang's mission now is to train the next generation of Taiwanese chefs. Currently, chefs in Taiwan who want to specialize in fine dining have to travel to Europe to gain experience. "They have to register at Le Corden Bleu in Paris, then they come back," said Chiang. To change that, Chiang has become a visiting lecturer at two universities in Taiwan, where he runs a business masterclass for chefs: "What I teach is creativity, color, branding, flavor combination, trend, and calculation." He's also creating a culinary encyclopedia of Taiwanese flavors, cooking techniques, food history, and ingredients. He spent three months traveling around Taiwan, rediscovering flavor combinations such as serving "cooling" crab with "heaty" ginger.While he closed Restaurant André, he still has nine restaurants across Europe and Asia. Among those is RAW, which was awarded two Michelin stars in 2019, and Burnt Ends in Singapore, which is in the World's Best 50 list.He's also opening a hotel in Okinawa, Japan, which will be his first foray into travel. "It is being built from scratch. It will take three years to complete. We just have to wait to see what happens with the pandemic," said Chiang. For now, Taiwan seems to have brought out a more relaxed side of the chef. Keepsakes from Restaurant André can be seen scattered around his new home, including the sheep stools that his VIP guests used to use as handbag holders. He hasn't forgotten Restaurant André, but he's ready for his next chapter. Until then, he says: "I'm just happy sitting in my house in the country drinking coffee and looking at the rice fields."

<ul class="summary-list"><li>Mirazur is a three Michelin-starred restaurant located in the town of Menton, <keyword id="6354785" type="LOCATION" weightage="60" keywordseo="france">France</keyword>, that was ranked as the World's Best Restaurant in 2019.</li><li>After the restaurant was forced to close in March for the country's 55-day lockdown due to the pandemic, head <keyword id="3699" type="POSITION" weightage="60" keywordseo="Chef">chef</keyword> Mauro Colagreco spent time in the restaurant's gardens to develop a new <keyword id="62764" type="PERSON" weightage="60" keywordseo="Reopening">reopening</keyword> menu, says head sommelier Benoît Huguenin.</li><li>Chef Colagreco designed a new menu called Universe Mirazur, featuring meals that focus on four different themes (roots, fruits, flowers, and leaves) and is served to align with the lunar cycle.</li><li>The nine-course menu starts at €320, or USD$375, and rotates every three days at most, as does the biodynamic wine list.</li></ul>In June 2019 at the age of 24, Benoît Huguenin became the head sommelier at Mirazur, <a href="https://www.straitstimes.com/lifestyle/food/french-restaurant-mirazur-is-no-1-in-the-worlds-50-best-restaurants-2019">crowned the World's Best Restaurant of 2019</a>. He was by Argentinian chef Mauro Colagreco's side as Mirazur received the title in a glitzy ceremony in Singapore.It topped off an incredible year for the restaurant located footsteps from the Italian border in Menton on the French Riviera: <a href="https://www.hospitalityandcateringnews.com/2019/01/restaurant-mirazur-awarded-ultimate-three-stars-michelin/">Five months earlier it had been awarded its third Michelin star</a>. Mauro Colagreco/Matteo Carassale/Business Insider" height="999" width="1356" msid="78721385" hostid="261"></div>Fast forward to spring 2020 and the whirlwind four-day trip from the Côte d'Azur to Singapore and back again last summer seemed more like a lifetime ago.With Mirazur shuttered to the public during <a href="https://www.euronews.com/2020/05/09/france-spain-and-uk-prepare-to-ease-lockdowns-starting-monday">France's 55-day COVID-19 lockdown</a>, Huguenin's sole professional responsibility was in its kitchen, one of a team of six who had volunteered to prepare meals for local hospital workers three times a week. <h2>Chef Colagreco spent much of the confinement <a href="https://www.lotusinternational.net/news/mauro-colagreco-to-the-moon-and-back">tending to his gardens</a> that supply produce to the restaurant.</h2>The time allowed the celebrated chef to slow down, reflect, and reconnect with nature, according to Huguenin. In late April, as the country prepared for the easing of lockdown measures, Colagreco gathered his team to discuss plans for reopening the restaurant. He also shared his observations of the last two months. "The chef explained that, depending on the moon's cycle, some days the roots are different, as are the flowers, the leaves, and the fruits," Huguenin told Business Insider. "We spoke about this for three or so hours. He joked that maybe we should create a special menu around this."<div type="image" title="Mirazur's Chef Mauro Colagreco in the restaurant garden. Matteo Carassale photo" height="2664" width="3552" msid="78721390" hostid="261"></div>Two days later, Colagreco made it official: Mirazur would be opening with a new menu divided into four themes: roots, fruits, flowers, and leaves. Each day's theme would align with the lunar cycle. The intention was to bring the biodynamic principles practiced in the restaurant's gardens into the kitchen, allowing guests to experience what nature intended, when it intended it, as in at a specific point of the lunar cycle. Colagreco calls this concept "Universe Mirazur.""We worked all day every day for two weeks to imagine and prepare it," Huguenin said. He says the wine list, the (alcoholic and non-alcoholic) cocktails, the mignardises (bite-sized desserts served at the end of the meal), and every detail down to the table decoration were all reimagined.<div type="image" title="On flower days, dishes like this Rosace de gamberoni de San Remo (rosace of San Remo prawns) may be on the menu" height="1878" width="2500" msid="78721393" hostid="261"></div>"We even changed up the olive oils that accompany the sharing breads, to keep on the same theme. On roots day, for example, we may serve ginger-infused oil. On fruit days, the oil may be infused with mandarin," he continued.<h2>Despite being in the role since 2015, Huguenin feels like he's working in a completely different restaurant. </h2>Huguenin grew up near Châteauneuf-du-Pape, one of France's most famed wine regions in the southeast of the country, where his appreciation for the fine wines made on his doorstep was nurtured by his father. Having decided to pursue a career as a sommelier, a move to the Côte d'Azur and another of the region's decorated <keyword id="34615" type="ORGANIZATION" weightage="60" keywordseo="restaurants">restaurants</keyword>, the now-defunct Paloma in Mougins, followed. He joined Colagreco's then two-Michelin-star establishment when he was 19."It's now more complex," Huguenin acknowledged. "For not only us but for the clients, even for the people who work in the gardens."The nine-course <a href="https://www.mirazur.fr/reserver.php">Universe Mirazur menu</a> starts at $320 euros, or USD$375, and is changed every three days at most. (A further two are located two and seven miles away respectively). But, as Colagreco and his team worked to reimagine <keyword id="54972" type="ORGANIZATION" weightage="60" keywordseo="fine-dining">fine dining</keyword> in the era of <keyword id="8763838" type="UNKNOWN" weightage="60" keywordseo="covid-19">COVID-19</keyword>, a decision was made to incorporate this alfresco setting into the dining experience. "When clients arrive now, they are handed a mask and directed into the garden where they are served the aperitif," Huguenin explained. Beautifully plated and presented inside a picnic basket, it is designed to be enjoyed on a blanket carefully laid out at social distanced intervals. "COVID has put a lot of pressure on everyone," Huguenin said. "We wanted to create this stress-free bubble where our clients can take off their mask and see the water, the beach, and the gardens."<div type="image" title="Mirazur Tomatoes and fish on fruit days (credit Matteo Carassale)" height="1878" width="2500" msid="78721399" hostid="261"></div>Once the aperitif is finished, guests are guided back inside the restaurant where tables have been redistributed between the living room and bar to ensure appropriate distancing while maintaining its 45 covers.Floor staff wearing Mirazur and Michelin-liveried facemasks greet them (the kitchen team wear masks decorated with smiles — "for a bit of fun," Huguenin said). Having made a commitment to go plastic-free at the start of 2020, paper menus have also been swapped for QR codes and iPads.Even hand sanitizing hasn't been spared an artistic touch. Colagreco enlisted <a href="http://www.ceramique-montalto.com/entest/">Stéphane Montalto</a>, a local ceramist and holder of the prestigious Meilleur Ouvrier de France title, to handcraft 16 ceramic bowls. Painted in a turquoise and ivory hue to evoke the color of the Mediterranean Sea at Mirazur's doorstep, each is filled with a touch of alcohol and a blend of ingredients that change to match the theme of the day. <div type="image" title="Mirazur's homemade hand sanitizer, coordinated for a flower-themed dinner." height="676" width="900" msid="78721402" hostid="261"></div><h2>Three months after the restaurant — and its team of 60 — welcomed its first guests back to the dining room, certain rules are still enforced. </h2> "We have an alarm in the back office and in the kitchen that sounds every thirty minutes so that we can all wash our hands at the same time," Huguenin said.<div type="image" title="Mauro Colagreco and some of his team in smiley masks (credit Mirazur)" height="789" width="1053" msid="78721403" hostid="261"></div>Other rules have been slightly relaxed."At first, clients weren't able to go into the kitchen, but now we are more flexible. People can take a photo or greet the back of house team as long as they maintain social distancing," he explained. "We can't refuse clients everything." <h2>Matching a wine menu to the lunar schedule is a fine art.</h2>What pairings has Huguenin imagined up to accompany the four themes of Universe Mirazur? "It's weighted towards white wines," he explained. "For root days, I look to the Languedoc-Roussillon in France or the Alto Adige and Veneto regions in Italy to have more powerful wine like <a href="https://www.columbuswines.com/wines/2016-Italo-Cescon-Madre-w94969703l">Italo Cescon Madre 2016</a>."<div type="image" title="This beautifully presented squid dish is on Mirazur's leaf day menu. (credit Matteo Carassale)" height="1878" width="2500" msid="78721405" hostid="261"></div>"Flower days I tend more towards the Loire Valley and a Chenin Blanc or Sauvignon Blanc, or a Burgundian Chardonnay or Aligoté from <a href="https://www.kermitlynch.com/our-wines/domaine-arnaud-ente/">Domaine Arnaud Ente</a> for the minerality and freshness."Leaf days are better with a wine from the Southern Rhône like Marsanne or Roussanne or a Bordeaux Sémillon for better structure, texture and a smooth taste. Fruit days I match to Provence or a fruity Alsace Riesling from <a href="https://www.zusslin.com">Valentin Zusslin</a>. But of course, it also depends on the plate."And up to 70% of the wine list is biodynamic, he added.<h2>During the pandemic, the restaurant's clientele has been more local.</h2>Restrictions on international <keyword id="6354692" type="UNKNOWN" weightage="100" keywordseo="Travel">travel</keyword> have kept much of Mirazur's traditional clientele away."Normally the majority of our clients come from overseas; countries like the USA, Japan, and China," Huguenin said. "But this summer the clients have been predominantly French."In a country that boasts 29 three-Michelin-starred restaurants (only Japan, with the same number, rivals it), this home audience, he added, can sometimes be the biggest critics. "They have very high expectations," he explained.<div type="image" title="The exterior or Mirazur (credit Mirazur)" height="655" width="874" msid="78721406" hostid="261"></div>The restaurant is traditionally booked out months in advance. As international guests have been forced to cancel longstanding bookings, pockets of availability have opened up; however: particularly now the high season months of July and August have passed. <a href="https://www.mirazur.fr/reserver.php">Reservations are made via an online booking system</a> that is currently only taking bookings for 2020.
