I made my stand in the gas-stove culture war at Ikea. Well, not at Ikea per se, but on the Ikea website — where I purchased the Tillreda, a single-burner induction cooktop, for $69.99. It's a hot plate, basically, the size of two laptops stacked on top of each other, with the glossy black aesthetic of a control panel on the USS Enterprise. Its sleek glass top, I hoped, would offer me a glimpse of our electric-stove future.As you've no doubt heard, politically speaking, gas stoves are hot right now. Democrats want to ban them to limit carbon emissions and childhood asthma; Republicans are defending them on behalf of the Founding Fathers, whose wives and chattel slaves all cooked with fire. Never mind that <a href="https://www.eia.gov/todayinenergy/detail.php?id=53439" target="_blank" rel="noopener">most Americans already cook with electricity</a>. New York is considering a ban on gas stoves; the town where I live has already banned gas lines in new construction. Like it or not, induction is coming to a stovetop near you.But the key to winning any war is logistics. In this case, that means answering one simple question: How well does induction actually cook? Is it better than gas? Or is this going to be like when everyone had to buy low-flow showerheads, and then secretly swapped them out because they sucked? I bought the Tillreda to find out. But I'm a competent cook at best. So I also called a couple of experts in the science of getting dinner on the table.<h2>Now you're not cooking with gas!</h2>There are plenty of <a href="https://www.dl.begellhouse.com/references/5756967540dd1b03,6d280f305cda5f5e,1343ae6a1d424eb6.html" target="_blank" rel="noopener">ways to heat food</a>. You can burn wood or charcoal, as humans have for most of our history. You can ignite a flammable, oil-derived gas like propane or methane. You can push electrons through a metal coil, where resistance to the passage of electricity gets converted into heat. Or — and this is the new thing — you can push electrons through a tightly wrapped spiral of copper wire to create an oscillating magnetic field, which then heats up the metal atop it. That's induction.In the interests of cost and speed, you want as much energy as possible to get into the food instead of the air around it. The <a href="http://dx.doi.org/10.1016/j.applthermaleng.2015.10.061" target="_blank" rel="noopener">efficiency</a> of a gas stove is about 28% — meaning less than a third of the energy in the burning methane actually heats the food. Classic electric stoves, the much-derided ones with the glowing superhot coil, come in at 39%. But on an induction cooktop, it's a blazing 70%, which is part of what's driving the push to switch from gas to electric. But once that heat is in there? From a cooking perspective, it doesn't really matter where it came from."Heat is heat," says Harold McGee, the author of the invaluable book "On Food and Cooking: The Science and Lore of the Kitchen." "We have various ways of heating up a cooking vessel in order to heat the contents of that vessel. But once the vessel itself is hot, everything else is pretty much the same."After unboxing my induction plate I went to check my pots and pans. I got a magnet; if it doesn't stick to a pot, the pot won't work on an induction plate. This went badly for me. The only winners in my kitchen were the 50-year-old cast-iron pans and two nonstick skillets. That meant I couldn't do stuff on the Tillreda like boiling soup and pasta, things that require a long time on an inefficient gas flame. "In cases like that, the heat losses for a gas flame really add up," McGee says. "If you're sautéing something really quickly, that's not a big deal. If you're simmering something for hours, you're losing a lot of energy."I started cooking stuff with what I had. My first impressions were mixed. Just finding a place to store the cooktop when I wasn't using it turned into an unplanned, multiday epic reorganization of our tiny kitchen, which had negative consequences on household harmony. Balancing pans on the little glass plate was tricky. Controlling the heat level with a bleep-bloop digital interface felt distant and unintuitive compared with mechanically turning a flame up or down. Also, the Tillreda whines a little bit, and it runs a fan to keep its circuits from overheating. It was loud — like, "Is your laptop broken?" loud.The genuinely strange part was the difference in where my pans got hot. Induction <a href="http://dx.doi.org/10.1016/j.jfoodeng.2013.01.012" target="_blank" rel="noopener">tends to heat the bottom of pans evenly</a> but not heat the sides as much as gas stoves do. You can see it in thermal imaging. And every cookware maker layers aluminum, steel, and even copper alloys differently in their products, so the individual pot or pan makes a big difference. In 2016, a couple of food scientists from the University of Wisconsin-Stout <a href="http://dx.doi.org/10.1016/j.applthermaleng.2015.10.061" target="_blank" rel="noopener">tested</a> a bunch of pans on gas, electric coil, and induction cooktops. On the whole, induction was faster and more uniform. But the variations in where and how they heated up were wild. Some of the pots took two minutes to reach their maximum temperatures on induction; others took six. Without nerding out on your cookware you have, you can't know how they're going to behave until you mess with them.My limited selection of pans, and the different distribution of heat, made my attempts at induction cooking a bit hard to gauge, but I got used to it. The bacon I panfried for breakfast browned faster than over gas, but the eggs seemed to cook a bit slower. Smashed-style burgers didn't get that nice sear they do over gas, but maybe I should have squashed 'em harder, or clicked the induction plate to a higher setting. Korean-seasoned beef heated up and cooled off with lightning speed. Sausages browned faster; a big pile of veggies sautéed evenly and easily. I even bought an induction-ready stock pot. If induction is the future, then after a week of basic, household cooking, I'm all fired up.<h2>On my signal, open fire</h2>Cooking pros, of course, aren't using a tiny burner from Ikea like the one I got. "Most cheap induction units are huge liars," says Dave Arnold, a famed food-tech nerd who hosts the "Cooking Issues" podcast. "They give you that wattage for a little bit of time, and then the internal circuitry gets too hot and they throttle the power down. Ask any caterer. For some reason, they crap out on you."Arnold uses an induction cookplate called a Breville Control Freak. It's twice as big as my Ikea, and it runs about $1,500. He calls it the "gold standard" for induction cooktops: "It'll pull 1,700 watts out of the wall with an efficiency that all but the most screaming home gas burners can't compete with." But it doesn't take a Control Freak to make induction work. In general, he says, induction is way better than hard-to-control old-style electric, and it beats gas, too. "Nine times out of 10, induction is a dream. The fact I can go from full power and then throttle all the way down and not have to worry about it? With gas, when you throttle really low, you have to worry the flame is going to blow out."And that other one time out of 10? Those are cases that require an open flame. That's where induction just can't give you the results that gas does.Take wok hei, the charred-smoke flavor you get from a superhot stir-fry. It comes, in part, from <a href="https://www.nytimes.com/2020/09/04/dining/stir-fry-recipe-wok-hei.html" target="_blank" rel="noopener">aerosolized droplets of oil</a> getting ignited by the open flame and then mixing back into the food, which is hard to do if you don't have a blisteringly hot fire. "The people who do a lot of stir-fry, either with jumping-pan motion or woks — those are the people I feel the worst for," Arnold says. There's a solution to <a href="https://www.theatlantic.com/ideas/archive/2023/01/j-kenji-lopez-alt-induction-gas-stove-electric-coil/672897/" target="_blank" rel="noopener">stir-frying with induction</a>, though. Use a blowtorch over the top of the food — an auxiliary fire, in other words.And then there are tortillas. They're a significant part of meals in my house, and we heat them by putting them directly atop a gas flame until they puff and char a bit. I tried one in a cast-iron pan on the induction plate. I got only a little char, localized to one poker-chip-size spot, and no real puff or crisping.Arnold offers a kludgy fix: Cook one side of the tortilla over an induction burner, flip it, cook the other side, and then flip it again — this time pressing down with a towel "to get better thermal contact." "This is an opportunity to talk about how induction stoves are a better appliance, even if you don't give a hoot about health or climate," Brady Seals, a manager at the think tank RMI's Carbon-Free Buildings program, told Insider. "It cooks really fast, is easy to clean, and very energy efficient."Americans will need an education. Induction units are five to 10% more energy efficient than conventional electric stoves, and three times more efficient than gas stoves. This could save people money on their utility bills. Roman tweeted that she boils a large pot of water in under two minutes with her induction stove, versus boiling one in 10 to 15 minutes with the gas stove in her apartment at its highest setting. There are some drawbacks, though. Copper or aluminum cookware won't work on an induction stove — magnetic metals like cast iron and some stainless steels are best. It's also expensive to convert from gas because an electrician has to install a new outlet, according to Consumer Reports. But it's less pricey to make the switch from a conventional electric stove. The majority of US homes already use conventional electric stoves, while about 38% use gas stoves, <a href="https://www.eia.gov/todayinenergy/detail.php?id=53439">according to the US Energy Information Administration</a>. The price of induction stoves is also continuing to drop, with some selling for as low as $1,000, Consumer Reports found. With nonstick, you're safer from botching omelets, pancakes, or anything else that might glue itself to the surface of your skillet. Accidentally scratch that nonstick coating (be it Teflon, or other polymers), though, and it's game over. On the other hand, there's metal, which is great for searing, can handle higher heat, and is mostly dishwasher-safe — scratches merely offer character, not a death sentence, to a solid metal pan. Still, it's anything but nonstick, and generally requires generous assistance from oil or butter.Enter 2020, the year of HexClad (among...other things). The brand's unique three-ply pans offer the best of both worlds, which is why they're slowly replacing all of the cookware in my <keyword id="27180" type="ORGANIZATION" weightage="60" keywordseo="kitchen">kitchen</keyword>. Most of it is not novel, though. Similarly to <a href="https://www.businessinsider.com/all-clad-d3-armor-oval-fish-pan-review" target="_blank" rel="nofollow noopener sponsored">All-Clad's d3 pans</a>, HexClad's cookware consists of an aluminum core wedged between two layers of stainless steel (one of which is magnetic for compatibility with magnetic induction cooktops).What is new is the hexagonal pattern and the diamond dust finish. Diamond dust, or diamond powder, is something commonly used in the beauty trade to illuminate skin and hide blemishes, offering a sheen that also purportedly lends these pans their nonstick surface.The hexagonal pattern is actually a series of etchings that leave stainless steel ridges, or "peaks" and "valleys," as the brand refers to them, which also contribute to the cookware's nonstick properties. What you're left with is something virtually scratch-proof (the brand says scratch-resistant, but I've yet to manage a scratch at all) that functions every bit as well as more traditional coatings like <a href="https://www.carawayhome.com/pages/our-materials" target="_blank" rel="noopener">Teflon,</a> a material <a href="https://www.goodhousekeeping.com/cooking-tools/cookware-reviews/a17426/nonstick-cookware-safety-facts/" target="_blank" rel="noopener">that can release toxic chemicals</a> when it reaches 500 degrees. HexClad's pans are also free of PFOA/C8, by the way, which the <a href="https://www.cdc.gov/biomonitoring/PFOA_FactSheet.html" target="_blank" rel="noopener">CDC</a> and the <a href="https://www.cancer.org/cancer/cancer-causes/teflon-and-perfluorooctanoic-acid-pfoa.html" target="_blank" rel="noopener">American Cancer Society</a> list as a harmful substance to both humans and the environment. To get a better grasp of how this pan is supposed to work, we reached out to CEO and President of HexClad, Daniel Winer: "Our design is laser etched directly into the steel. Then the non-stick is added into the "valleys" and it is triple polished," he said. "So essentially, your food is resting on top of the steel, which is why you get the great sear." In my experience, all of this checks out. Even though I aggressively burned eggs and fish skin in my HexClad pan, all it took was a quick swipe of a sponge to ready my skillet for the next attempt. Then there's the handle. It's designed to stay cool while the skillet itself heats, and I have to say that I haven't developed a single burn from handling this pan. The handle also fits perfectly well in the palm of at least three different-sized hands, which, sadly, is not often the case. Sure, we're probably getting a little granular, and while I don't fancy myself much of a hippie or a hypochondriac, I try to keep gratuitous harmful substances out of my diet when and where it's within reason.Further, when I have owned nonstick cookware, it hasn't lasted long in my hands. A couple of careless swipes with a metal spatula and it was game over and into the trash bin for those unfortunate (and unworthy) pieces of inventory within my already-too-crowded kitchen.So, when I received my sample to test from HexClad, the first thing I did was break out the stainless steel spatula and get to scraping. Rather than find flecks of carbon, steel, or whatever else in my freshly caught and filleted fish, I was going to get to the bottom of this pan immediately. But scratch and scrape I did, and there wasn't so much as a blemish on the surface of the pan. It passed its first test effortlessly. This, as I see it, is the ultimate nonstick cookware test. The egg ended up sticking some, but this is a freshly scrubbed pan. With a little seasoning, or a small drizzle of oil, there's no trouble, and a spatula is not necessary. The best part? The skillet goes right in the dishwasher.And, should anything horrific happen to your pan — though after three months of careless use I can't possibly imagine how — it's covered by a lifetime warranty, save for cosmetic damage that won't affect the quality of the cookware anyhow. <h2>The bottom line</h2>If cooking is a hobby of yours, you don't need a HexClad, but it will get any job done with relative ease compared to whatever else you're cooking in. If you're working with nonstick cookware already, upgrading to HexClad is worth it without a shadow of a doubt. And let me add that if you are using something like Teflon and not regularly disposing of it at the first sign of flaking, then you're flagrantly gambling with carcinogens.If you happen to view cooking as more of a chore than anything else, and want to be in and out of the kitchen as fast as humanly possible, you almost objectively need this pan (and I don't make recommendations lightly). If you're comfortable with what you have for now, great. The facilities are backwards integrated with the ability to in-house manufacture components required for its products, which reduces its dependence on third-party suppliers and OEMs for its components. The company has an integrated facility at Bengaluru comprising 12 manufacturing units to manufacture pressure cookers, non-stick cookware, hard-odized cookware, mixer grinders, and induction cooktops LPG stove, glass cooktops, IR thermometer and handy vegetable chopper. Sequoia-backed Stove Kraft IPO: The hefty grey market premium is not in sync with what analysts have to say

<ul class="summary-list"><li>Stella Guan, 33, felt burned by attempts at homeownership and long-term renting.</li><li>She's now living out of two suitcases and staying in short-term rentals around Los Angeles.</li></ul>This as-told-to essay is based on a conversation with Stella Guan, a 33-year-old designer, about her experience being a digital nomad living in short-term rentals after both owning a home and renting via traditional yearlong leases. The essay has been edited for length and clarity.In 2021, I bought a home in Los Angeles.There are so many hidden financial aspects of homeownership. You have an idea, of course, but there are just so many costs. I had to spend $50,000 to fix the house, including asbestos and black mold. <a target="_blank" href="https://www.businessinsider.com/stella-guan-bought-home-regret-pandemic-buyers-remorse-ibuyer-2020-11">I had to resort to an iBuyer to sell the house quickly</a> and get out, which meant I lost $100,000.I'm my own boss. I have a design school called Path Unbound where we teach UI/UX design. Most of our students are people who change their careers. I've been running it for four years now. I don't have to travel for that, but I choose to.Around this time last year I moved into a live/work space as I was focusing on a side hustle of designing furniture. It's very expensive in LA to have a showroom and a place to live at the same time, so it seemed like a good deal at $3,000 a month. There was a ventilation issue, however, and I had to leave.It was the last straw. I thought, "This housing thing is just not working out." I packed up my two suitcases in two hours. That's how I've been living and plan to live.<h2>I never thought I'd live in a tiny home, but I'm in love with how cozy it feels</h2> I've been following the tiny-home movement for a few years, watching videos on YouTube. There's an account called <a target="_blank" href="https://www.youtube.com/@livingbig">Living Big in a Tiny House</a> that I always found fascinating.As a designer, I really appreciate how clever these small-space designs can be. I always just thought, "That's a nice idea, but I'm not really into the RV lifestyle."I found a spot on Airbnb and moved in 10 days ago. This house is a tiny home on wheels, so technically it's an RV. You can actually tow it. I'm on the east side of LA in a neighborhood called Mount Washington. The owners have the house parked at the top of a hill, so I have a pretty amazing view of the city.I pay $60 per night. At the end of the month, with fees included, it'll be around $2,000. That's pretty on par with normal LA rent.The biggest upside is that it's so cozy. People think tiny homes would be claustrophobic. But if you design it well, it's perfect. You don't really need that many things with you.It's 390 square feet in total. The kitchen has been great — it's much bigger than many New York City kitchens I've seen. It has an induction cooktop and two really big windows for ventilation. When I cook, I make sure all the windows are open.It's very easy to have friends over. There's an amazing outdoor patio with a barbecue and benches for everyone to enjoy.Every day I work on top of a foldable table that functions as the home's dining-room table.For someone who hasn't been in this lifestyle, there'd be a learning curve. Storage would be the biggest issue, and potentially washing clothes. I bought a portable clothes dryer, but it wasn't much more effective than a hair dryer. I tend to just hand-wash everything every few days and let it hang dry outside.<h2>For those who work remotely and love to travel, I say give it a try</h2>With a tiny home, things are less permanent. You can leave quickly, and you can shop around.If there's one month where I want to spend less on housing, I can look for a cheaper rental. If there's a place I'm dying to go, I can search for rentals there.I'm staying here for 30 days, and then I have another Airbnb lined up on the west side of Los Angeles. It's not a tiny home but an ADU. It's completely different, a midcentury-modern design made of glass and steel.I've been to around 15 countries across Europe and Asia in my life. This year I plan on visiting lots of countries in the Balkans, like Albania, Serbia, Bosnia, and Montenegro.This is what I learned from traveling the world: I'm very happy with my two suitcases. Two things anyone considering this lifestyle needs are packing cubes to keep everything together and a mini transformer for your different electronics.Working remotely and loving to travel are really the two ingredients for this. If you're someone who's not comfortable with that much change, this could be very stressful.If you're someone who's able to work remotely and who loves freedom, I think this is really the way to go. You're not committed to something that may not work out in six months or 12 months.I'm loving this whole situation, but I know not everyone would. It depends on who you are.

Best electric kettles in India for hot water needs

New Delhi, Dec 6 () Kitchen appliances maker TTK Prestige on Friday said it aims to double its turnover by 2024-25, according to a top company official.
 The firm, whose growth rate has come down to single digit, is aiming to get back to its double-digit growth journey again across the segments, such as pressure cooker, cookware, gas stoves, rice cookers and induction cooktops.
 Besides, TTK Prestige has plans to expand its distribution network further and expects higher sales from fast-growing online channels.
 "We are expecting to double our turnover by FY 2024-25," TTK Group Chairman T T Jagannathan told .
 He further added, "This fiscal, we are expecting (a turnover of) Rs 2,100-Rs 2,200 crore."
 On the growth rate, Jagannathan said growth of TTK Prestige has come down but the company is still growing. "Last year, we had a double-digit growth."
 TTK Prestige on Friday also unveiled plans for 2020 aimed at increasing market share across geographies and getting back to double-digit growth in mature categories such as pressure cookers.
 "We are committed to growing our presence and aim to be the number one for consumers in India. As market leaders in the pressure cooker category, we endeavour to increase our share in the kitchen appliance space also," Jagannathan said.
 He also said that online sales currently contribute about 10 per cent of its total sales, and higher contribution is expected from this channel in the coming year.
 However, he also said, "This channel is evolving but the freight is expensive compared to the value of our products."
 In August 2017, the company had acquired the UK-based Horwood Homewares and had introduced Judge Brand in the Indian market. KRH HRS
