Trogood offers millet parathas, millet chikki and peanut chikkis in the same price range as Lay’s, Kurkure and Balaji. Millets check all boxes of affordability, taste and nutrition. “In the ₹5 product range, most of them are oily snacks or junk snacks. “Millets are gluten-free, they have a low glycemic index. When you eat the millets, you're almost full of appetite and you will not be hungry for the next six to eight hours. Lastly, for the cultivation of rice and maize, they use nearly 4000 litres per kg of water consumption whereas millet takes at least 1/4 of the water consumption,” said Bhupati. After a little push from the central and state government, all Indian states are now embracing millets as part of their diet menus. “If you look at the middle class consumption patterns, millets take at least 20-35% share of the daily meal. Slowly, it is developing,” said Bhupati. After COVID-19, urban consumers have become more health-conscious and have embraced millets. Because of this growing acceptance, Bhupati is optimistic that millets will become a key part of the snacking industry. “In the next one to five years, millets will take around 15-20% share in the pie of snacks,” he said. The Manna brand which gained prominence with cricketer Ashwin Ravichandran as brand ambassador has millet-based idli/dosa/upma/poha/kichadi/Pongal and rava dosa mixes. Generally, millets are small-grained, annual, warm-weather cereals belonging to the grass family. They are highly tolerant of drought and other extreme weather conditions and have a similar nutrient content to other major cereals. Mayank Kulshreshtha, Area Executive Chef of Southern Region, ITC Hotels &amp; Executive Chef of ITC Grand Chola told IANS. The Atta product categories will see new offerings like oats atta, multigrain atta, nutrition bars and ready-to-cook packs. "Sales of millet-based products are expected to go up by 2.5 times. This is due to the creation of awareness about millets by the central and state governments, food companies promoting their products and the emergence of new categories based on millets," Narayanaswamy added. According to him, millet-based health drinks, breakfast cereals and noodles will grow. The breakfast cereals will turn into multigrain products with millets. While Southern Health is mulling an entry into the millet-noodles segment, the existing player the Mumbai-based Satvika Bio-Foods Private Ltd is expecting higher sales volumes within and outside India. "We have started exporting to Australia and the US. The big food products companies can no longer avoid the millet segment. And their entry will grow the market," Vinod Kumar, Founder and CEO of Satvika Bio-Foods told IANS. Terming noodles as a pan-India food now, Kumar said the overall noodles market size is about Rs 15,000 crore. Within that, the Atta noodles segment will be about Rs 500 crore. Though the Atta noodles segment is growing fast it will take a long time to grow to the size of the maida noodles market. Given this, the millet noodles segment is small but will log accelerated growth starting in 2023, Kumar said. Like millet noodles, there is millet pasta from Wholsum Foods under the brand Slurrp Farm. On the star hotels side, the 650-room meta ITC Grand Chola and beach resort Sheraton Grand Chennai Resort and Spa seems to have the first mover advantage having readied their special millet offerings to their guests. "Next year, we will have a focussed millet programme at our restaurants. We have incorporated millets in European dishes," Kulshreshtha of ITC Hotels said. 2. Swiss chard: Dark greens will continue to reign in 2014. But if you're tired of spinach and kale, consider bringing Swiss chard into the kitchen. The thick-ribbed vegetable has a slightly bitter taste but can be cooked just like other leafy green vegetables and packs the same nutritional punch. It's high in vitamin C, iron, and calcium. Saute it with a little olive oil, garlic, and crushed red pepper for a healthy dish.

4. Mangosteen: Native to Southeast Asia and touted for being rich in antioxidants, this tropical fruit may give the acai berry a run for its money. Despite its name, the mangosteen is not related to the mango.
It has a thick reddish-purple rind and sweet, juicy white flesh on the inside. For decades, fresh mangosteen was not available in the mainland United States because they can harbor insects pests. In August 2013, mangosteens became <a href="http://www.latimes.com/food/dailydish/la-dd-mangosteen-most-delicious-fruit-on-earth20130829,0,2629316.story#axzz2pG1quiXR" target="_blank">available at 10 Whole Food stores</a> in the Southern California area. You can tear off the rind and eat the white segments on their own or puree the fruit (including the rind) into a healthy juice.

4. Ancient grains: Thanks in part to the gluten-free craze, ancient grains like amaranth, quinoa, buckwheat, millet, and teff are making a comeback. These grains are called "ancient" because they have been around unchanged, for at least 1,000 years. (Modern-varieties of wheat and corn, for example, have been selectively bred so they are different from the older cultivated varieties).
Another old grain, called freekeh, is gaining popularity in America, although it has been enjoyed in Middle Eastern for many centuries. Because of the way it's processed, freekeh has more fiber than rice and is also high in protein, though it's not gluten-free.

5. Arctic char: The <a href="http://www.restaurant.org/Downloads/PDFs/News-Research/WhatsHot/What-s-Hot-2014.pdf" target="_blank">National Restaurant Association's</a> annual "What's Hot" culinary forecast, predicts that non-traditional fish, like Arctic char, branzino, and barramundi will be edging their way onto menus this year. Arctic char is a mild, yet rich fish that's related to salmon and trout. Because the Arctic char is mostly farmed, Seafood Watch has named it a "<a href="http://www.seafoodwatch.org/cr/seafoodwatch/web/sfw_factsheet.aspx?fid=193" target="_blank">best choice</a>" for the environment.

6. Kimchi: This pickled cabbage dish has long been a staple in Korea, but it's been gaining momentum in the U.S. as part of a growing trend in fermented foods. Fermentation is the process by which bacteria converts sugar into alcohol.
Some research also shows that fermentation can be good for you. <a href="http://www.ncbi.nlm.nih.gov/pubmed/21745625" target="_blank">One study</a> found that people who ate fermented kimchi for one month lost more weight and showed improvements in total cholesterol and blood pressure, compared to those who ate fresh kimchi.

The parade began at 12 pm (local time) at 38th Street and Madison Avenue in New York. It was organized by the Federation of India Association in New York as part of the 41st World Largest India Day Parade. With many holding the Indian tricolour and dressed in celebratory attire, and performers dancing and playing drums, the parade served as a vibrant convergence of cultures, patriotism, and shared values that unite India and America. Actor Jacqueline Fernandez, during the parade, was seen waving the Indian tricolour. Randhir Jaiswal, the Consul General of India in New York, also joined the parade. He said that India and the United States have shared democratic values and that the message of India is that they want to be a "force for global good." This year's tagline is "Mission Life", the same name as a mass movement launched by Prime Minister Narendra Modi. "Mission life is lifestyle about the environment. We want to tell the world that we must change our behavioural habits. We must change the way we live if we care about the planet," Jaiswal said. He further added that the global community is celebrating the year of millets which are considered superfoods that can also help the planet because they can be grown with less water than other foods. Regarding Mission Life, PM Modi highlighted that climate change goes beyond only government responsibility and needs contributions from individual, families and communities.
