You eagerly braced yourself for the impact of powerful seasonings to crash over your taste buds, only to find it's still lacking in flavor. That disappointment right there is the result of faded spices and the top reason to label the open dates on spices and replace them on a semi-regular basis.</p><p>Chefs suggest changing out your spices every eight months, but let's be honest: That's costly and you don't cook with every member of your collection frequently enough to use up a bottle in that short of time. When store properly, it's possible to extend the life of your spices beyond that time period, but first it's important to understand why spices lost flavor.</p><h2><strong>What causes spices to fade?</strong></h2><p>The clock starts ticking long before spices reach your pantry. "Most spices take several years to get from the farm to your supermarket shelf, so the flavors are already faded before you even open the jar," says Ethan Frisch, co-founder of <a href="https://www.burlapandbarrel.com/" target="_blank" rel="noopener">Burlap &amp; Barrel</a>. On top of that, "a slow supply chain, poor storage conditions, and the process of grinding whole spices into powder all cause the flavors to fade over time."</p><p>Frisch recommends "buying spices from small companies who specialize in better, faster supply chains and sourcing spices directly from the origin."</p><p>Although they're considered shelf-stable products, dried ground and whole herbs and spices react to the air around us. Every time they're opened, they oxidize and degrade, weakening both the aromas and the colors. And as the scent and vibrancy loses potency, so does the flavor. It does so quietly, until one dreadful day, the dish that you're making comes out lackluster and dull.</p><p><strong>Quick tip: </strong>Keep herbs and spices in containers with good seals - preferably glass or ceramic - in a cool, dark corner of your kitchen to extend shelf life.</p><h2><strong>Do spices go bad?</strong></h2><p>As with many foods, printed dates are not about expiration, but rather about quality. "The sell-by date on spices is an arbitrary number, only connected to the date that the spices were packed into jars and not related at all to the date the spices were harvested," says Frisch. That said, there are general guidelines for whole and ground spices, herbs, seeds, and extracts and how long they stay in their best condition.</p><h2>Shelf life of herbs and spices</h2><ul><li><strong>Whole spices: </strong>Grinding your own spices not only provides more exuberant flavors, but whole spices last longer as well. Because there's less surface area exposed, individual whole spices can last for as long as four whole years. This category includes peppercorns, coriander, nutmeg, cloves, cinnamon sticks, lemongrass, and even whole dried chili peppers.</li><li><strong>Whole seeds: </strong>A subcategory of whole spices, these include ingredients like poppy, sesame, or caraway seeds. Unlike spices, they can actually go "bad" since the oils in seeds can go rancid. Lastly, while other spices and herbs are perfectly happy sitting in a dark corner of your pantry or a cabinet, seeds can benefit from being kept chilled without adverse effects to taste or texture. Hard dry seeds (mustard, fennel, cumin, etc.) can last in the pantry for up to three years, but more moist ones, like raw sesame seeds, max out at a year.</li><li><strong>Ground spices: </strong>These are the convenient, pre-milled versions of whole spices, including black pepper, dried chili flakes, and spice blends. They're best within three months of being bottled, but will stay in peak form for at least two, even three years if kept well. Ground spices have more surface area and oxidize faster than their whole counterparts.</li><li><strong>Dried herbs: </strong>Within this category are your leafy seasonings - basil, oregano, thyme, and anything else that used to be a green plant. This also includes herb blends. Spices may be present in them, but if they're more green than any other color, count them as an herb, which will remain reliable for one to three years if they're not fading in light.</li><li><strong>Extracts:</strong> When most folks think of extracts, they think of the sweeter ones commonly used in baking: vanilla, lemon, almond, maple, even mint. However, extracts can include flavors that range from liquid smoke to herbs and spices, such as ginger. They're great to have on hand to enhance or spark new life into tired herbs and spices and will take two to three years before fading. Vanilla lasts even longer - it's shelf life is typically listed as "indefinite."</li></ul><h2><strong>How to extend the life of spices</strong></h2><p>But not to fear - the lifespan of your precious spices can be surprisingly long when stored properly. By that, we mean:</p><ul><li>Airtight, as contact with oxygen lessens its potency</li><li>Away from moisture, which will cause clumping and caking</li><li>Out of direct sunlight and heat, which will leech color</li></ul><p>To reduce their exposure to air, make sure to close lids tightly and immediately whenever you use them. It's tempting to leave the jars open if you think you might need some more, but those extra few minutes give oxygen and moisture more chances to do their damage. Also avoid dumping spices directly into your <keyword id="27178" type="ORGANIZATION" weightage="60" keywordseo="cooking">cooking</keyword>, which allows steam to get into your jars. Moisture creates an environment for mold, which - aside from rancidity of oily spices - is the only way spices go truly "bad." </p><p>Frisch's opts to store whole spices in individual pepper grinders so that he can grind them fresh directly into <keyword id="6181" type="COMPANY" weightage="100" keywordseo="Food">food</keyword> as he needs them. "I also have a dedicated electric coffee grinder that I use to grind larger spices and to make my own spice blends." Tools like the battery-operated <a href="https://www.finamill.com/" target="_blank" rel="noopener">FinaMill</a> makes it even easier with interchangeable refillable pods so you don't need to clean up between grinds.</p><p><strong>Quick tip: </strong>Keep herbs and spices away from the stovetop. While it may be convenient to have them at hand's reach, prolonged contact with heat will cause the spices' flavors to dissipate.</p><h2><strong>Can I get sick from expired spices?</strong></h2><p>This answer is usually no. Herbs and spices are tremendously shelf-stable and "old" ones typically won't impact your well-being. The exception would be if you find mold in the container. If that's the case, it hasn't been stored right, has captured moisture, and is now contaminated. Toss this immediately. </p><h2><strong>How to salvage old spices</strong></h2><p>There are two ways to revive or breathe new life to lackluster spices. Fry them in hot oil right before cooking, so the heat can unlock the remaining essence of the spice, which then infuses the oil with its flavors and aromas. A gentle toast in a constantly-stirred, medium-low heated skillet is another great way to use heat to perk up a whole bottle of old ground spices. Let it cool thoroughly before repackaging, since you don't want to create an opportunity for condensation to collect in your jar. </p><h2><strong>Insider's takeaway</strong></h2><p>Spices can last anywhere from a few months to a few years, depending on the type and how they're stored. Do spices go bad? This is how you know it's time to toss them

Here's how it went:</p><h2>Anderson spices things up with a chocolate-chai milkshake</h2><div type="image" title="Sunny Anderson's recipe for milkshakes includes spices." height="3024" width="4032" msid="84808977" hostid="261"></div><p>I was excited to try <a href="https://www.foodnetwork.com/recipes/sunny-anderson/chocolate-chai-milkshake-recipe-1925415">this recipe from Anderson</a> because I love anything chai-flavored.</p><p>It starts with several warm spices I already had in my pantry, plus milk, chocolate syrup, and vanilla ice cream.</p><h2><strong>The recipe requires extra preparation time, but it's worth the wait</strong></h2><div type="image" title="Milk steeped in spices." height="3024" width="4032" msid="84808979" hostid="261"></div><p>The chocolate-chai recipe required about an hour of preparation. I started by steeping milk with cinnamon, pumpkin-pie spice blend, nutmeg, cardamom, fennel seeds, and black peppercorns on the stove for 20 minutes.</p><p>Then I strained this mixture into a mug and popped it in the fridge to cool. The recipe said to let it chill for 30 minutes but it still felt too warm so I left it in for 40.</p><div type="image" title="Blended chocolate milkshake" height="2745" width="3660" msid="84808984" hostid="261"></div><p>From there, I blended half the spiced milk with chocolate syrup and plenty of vanilla ice cream until smooth. </p><h2><strong>The spices gave this classic chocolate shake a major upgrade</strong></h2><div type="image" title="Chai chocolate milkshake." height="3024" width="4032" msid="84808987" hostid="261"></div><p>I could not stop sipping this shake. It wasn't overly chocolaty or rich. It had a nice amount of spiciness to it. I mostly tasted cinnamon, but it went so well with the chocolate. The texture was perfect, too.</p><p>This milkshake was thick, but it still came up through a straw with ease. I definitely plan to make this again.</p><p>It would also be amazing blended with a little espresso for a fancy frozen coffee <a href="https://www.insider.com/best-fast-food-restaurants-that-have-coffee-in-the-us">drink</a>.</p><h2>Goldman<strong> tops his chocolate malted shake with cookies</strong></h2><div type="image" title="Cookies, malt, chocolate ice-cream, milk, heavy cream, sugar, and salt." height="3024" width="4032" msid="84808988" hostid="261"></div><p>I was nearly salivating when I saw that Goldman tops his <a href="https://www.foodnetwork.com/recipes/duff-goldman/chocolate-malted-shakes-with-crispy-chocolate-chip-cookies-5577600">malted shake</a> with homemade whipped cream and his famous chocolate-chip cookies, which <a href="https://www.insider.com/which-famous-chef-has-the-best-chocolate-chip-cookie-recipe">I make several times a year</a>.</p><p>I couldn't find instant malt powder at nearby grocery stores so I ordered a standard version of it online. </p><p>The other ingredients were simple. I needed chocolate ice cream and milk for the shake, the <a href="https://www.insider.com/trying-the-trick-to-make-chocolate-chip-cookies-better-from-hailey-bieber">cookie ingredients,</a> and heavy cream, sugar, and salt for the whipped cream. </p><h2><strong>I made the cookies, then got started on the milkshake while they cooled</strong></h2><div type="image" title="Whisked whipped cream." height="3024" width="4032" msid="84808992" hostid="261"></div><p>The cookie recipe is easy and takes just 20 minutes. Once the cookies finished baking, I cooled them on a wire rack.</p><p>Then I set out some chocolate ice cream to soften. I whisked the whipped-cream ingredients in my stand mixer on high until stiff peaks formed.</p><p>Since I didn't have instant powder, I had to dissolve my malt powder into hot water before blending it with the milk and ice cream.</p><p>I filled a glass with the shake, then topped it with a generous portion of whipped cream and half of a cookie.</p><h2><strong>This tastes like a classic milkshake</strong></h2><p><strong><div type="image" title="Duff Goldman's chocolate milkshake with cookies." height="2851" width="3801" msid="84808999" hostid="261"></div></strong></p><p>Although it's technically a malt, this tastes exactly like what I'd want from a milkshake. The cream is layered throughout the milkshake and used as a garnish.</p><h2><strong>This was one of the easiest recipes to make</strong></h2><p><strong><div type="image" title="Blended chocolate ice-cream." height="3024" width="4032" msid="84809012" hostid="261"></div></strong></p><p>I started by blending heavy cream, marshmallow fluff, and vanilla extract in a stand mixer until smooth. Then I topped it with marshmallow fluff and dark-chocolate shavings. </p><h2><strong>The milkshake is an ideal summer treat thanks to the layers of chocolate and marshmallows</strong></h2><p><strong><div type="image" title="Bobby Flay's layered milkshake." height="3024" width="4032" msid="84809016" hostid="261"></div></strong></p><p>This rich and decadent milkshake is the best for chocolate lovers.</p><p>The cream didn't turn out as thick as it probably should've been, so next time, I'd add more marshmallow fluff to thicken it.</p><p>I think crumbled graham crackers would be an amazing topping since this almost tastes like liquid s'mores. It was very indulgent, though, so I could only drink a little bit.</p><h2>Yearwood mixes things up with peppermint</h2><p><strong><div type="image" title="Flat lay of vanilla and chocolate ice cream, heavy cream, milk, and peppermint extract." height="3024" width="4032" msid="84809017" hostid="261"></div></strong></p><p><a href="https://www.foodnetwork.com/recipes/trisha-yearwood/chocolate-peppermint-milkshake-2574721">Yearwood's mint-chocolate shake recipe</a> includes both vanilla and chocolate ice cream, heavy cream, milk, and peppermint extract. Like Goldman, she also tops it off with cookies, which are also blended into the shake. </p><p>She recommends garnishing with Thin Mints or another mint-chocolate-flavored cookie. I used Oreo Thins with a mint-flavored filling. </p><h2><strong>This was another simple recipe with a lot of minty additions</strong></h2><div type="image" title="Cookies, ice-cream, heavy cream, and peppermint extract in a blender." height="3024" width="4032" msid="84809018" hostid="261"></div><p>All I needed to do was dump every ingredient into a blender, then top with cookies to garnish.</p><h2><strong>I would've preferred more chocolate flavor in this shake</strong></h2><div type="image" title="Trisha Yearwood's minty chocolate chip milkshake." height="2858" width="3811" msid="84809023" hostid="261"></div><p>I liked that this recipe was so easy to make, and how the cookies gave the shake a thicker texture. But the final flavor was overwhelmingly minty from the peppermint extract and cookies - so much so that I didn't get much chocolate flavor.</p><p>I'd consider making this again, but I'd probably skip the extract and just rely on the mintiness from the cookies. I'd also use slightly less vanilla ice cream and a little more chocolate.</p><h2><strong>The chai milkshake was my favorite, but Goldman's malt is a close second</strong></h2><div type="image" title="Paige Bennett with chocolate milkshake" height="3024" width="4032" msid="84809032" hostid="261"></div><p>It was hard for me to put down the chai milkshake. Anderson's recipe takes extra work, but it pays off. The spices complement the chocolate so well and it didn't need any special toppings.</p><p>Goldman's was a close second for me. Frankly, it's also just cathartic to clean and organize things. </p><p>We spoke with Luis Ahuet, who's served on the lines at top New York City restaurants such as Eleven Madison Park, Aquavit, and, most recently, as chef de cuisine at Michelin Star restaurant Meadowsweet, and Jamie Horde, founder of NYC-based professional organizing firm <a href="https://horderly.com/" target="_blank" rel="noopener">Horderly</a>, for practical tips on organizing a pantry that anyone can use at home. </p><h2><strong>Enlist the "prime real estate" rule</strong></h2><p><div type="image" title="Pantry organized" height="2150" width="2866" msid="75482391" hostid="261"></div></p><p>First and foremost, to make life easier for yourself and the rest of your household, incorporate what Horde calls the "prime real estate" rule.</p><p>"This is the simplest trick you can use to help keep your pantry from going awry," says Horde. "Try to keep items you use the most often at an easy-to-grab location that's not too high or too low. Also, group some of your favorite and most-used items in this area too, so you're not hunting around the entire pantry for a spice here or a spice there."</p><p>This rule also works great for kids too. "When you transfer anything into a different container, make sure you add an easy-to-see label on the bottle or bin," says Ahuet. "Adding a date helps you keep track of what's been in there the longest and what should be used first. Also, be sure to put your newer products <em>behind</em> your older ones, so you minimize the risk of products expiring."</p><h2><strong>Maintain your hard work regularly</strong></h2><p>The worst thing you can do after spending time and money organizing your kitchen pantry is to let it fall apart again. "The best way to make sure this doesn't happen is to clean your pantry at least once a month," advises Ahuet. "Take inventory of everything you have, move things that are close to expiring to the front, and relabel any items that need updates."</p>

Letting go of unused or old containers, bins, baskets, and other storage materials can also be difficult to do. "Let go of what's expired and what doesn't bring you joy before you head off to the store," says Thompson.</p><p>Once you've accomplished this task, take time to wipe down the shelves and cabinet doors, which accumulate dust and - depending on their location - stains as well.</p><h2><strong>Decant your products</strong></h2><p>Decanting means emptying the contents of a store-bought container into glass jars or other reusable vessels. Transferring works best for dry goods such as cereal, oats, rice, flour, and sugar. A decanted pantry is not only visually pleasing, but allows you to fully see the contents of your pantry as well as the quantities. Just be sure to choose jars that hold the same volume as the product you're buying. </p><p>Thompson's top tip for maintaining a tidy decanted pantry is labeling. You can get creative with some chalkboard tape and chalk or a simple printed sticker label. "Write your expiration date on the back or bottom of the container and this way you can keep track and update it as you refill."</p><h2><strong>Keep frequently-used items at eye level</strong></h2><p>As you sketch out your pantry organization plans, consider a set up that works for everyone in your household, liking keeping all spices or all post-exercise snacks together. Thompson, for example, stores snacks for kids on lower easy-to-reach shelves.</p><p>"Designating a labeled bin or basket filled with parent-approved snacks for kids not only teaches children how to care for themselves, but also gives you a break. It's a win-win!" she says.</p><h2><strong style="color: #000000;">Organize your canned goods</strong></h2><p>Canned <keyword id="6181" type="COMPANY" weightage="60" keywordseo="Food">food</keyword> is a pantry staple for families, but can take up lots of pantry real estate - not to mention all the unnecessary rummaging around that happens when it comes time to find a can of beans. They are also very helpful in the corners of cabinets where items get pushed to the back and out of sight, making sure you use them up before they expire."</p><h2><strong style="color: #000000;">Harness the power of under-shelf baskets</strong></h2><p>As the name suggests, these containers essentially clip onto the bottom of a shelf, creating extra storage in an area that would otherwise be empty. "These are really great for taking advantage of that vertical space that can't be reached with stackable containers. <ul class="summary-list"><li>A former "<keyword id="6374580" type="UNKNOWN" weightage="60" keywordseo="MASTERCHEF">MasterChef</keyword>" finalist has been making dinner and dessert for his elderly next-door neighbor Peter ever since the UK went into lockdown. </li><li>Anthony O'Shaughnessy first began bringing Peter meals after his neighbor revealed that he was struggling to get groceries delivered. </li><li>Peter had taken care of O'Shaughnessy's late grandmother — who used to live next next door — when she was diagnosed with Alzheimer's. </li><li>Now, Peter looks forward to his and O'Shaughnessy's daily phone calls and chats, and the neighbors have bonded over their love of international cuisines. </li><li><a href="https://www.insider.com/?hprecirc-bullet">Visit Insider's homepage for more stories</a>.</li></ul><p>A former "MasterChef" finalist is using his skills in the kitchen to bring a smile to his elderly next-door neighbor's face while England remains on lockdown. </p><p><a href="https://www.anthonyshock.com/">Anthony O'Shaughnessy</a>, 28, has been whipping up delicious meals every day while he quarantines with his family in Newcastle at the house that once belonged to his late grandmother.</p><p>O'Shaughnessy told Insider that he had been visiting his family for the weekend from Leeds, where he works as a cookery demonstrator at the Leeds Cookery School, when British Prime Minister Boris Johnson announced the lockdown on March 23. </p><p>"I was pretty much stuck here," O'Shaughnessy said. </p><h2>When the <keyword id="58679" type="COMPANY" weightage="60" keywordseo="Quarantine">quarantine</keyword> was announced, O'Shaughnessy and his mother immediately thought of Peter, the nice man <a href="https://www.insider.com/two-neighbors-share-wine-from-different-floors-2020-4">who lives next door</a></h2><p><div type="image" title="masterchef neighbor" height="1114" width="950" msid="75330590" hostid="261"></div></p><p>Peter, who is in his 70s, had been there for O'Shaughnessy's grandma in the last years of her life after she was diagnosed with Alzheimer's. </p><p>"My grandma became quite poorly at the end of her life," O'Shaughnessy said. "Peter used to do her groceries for her, mow the lawn, trim the hedges." </p><h2>O'Shaughnessy's mother called Peter after the lockdown was announced, and discovered he was already having trouble getting his groceries delivered</h2><p>"He had ordered groceries online and the delivery was canceled twice," O'Shaughnessy said. "When he finally received them, he only got half his order." </p><p>But O'Shaughnessy had an idea. </p><p>The former "MasterChef UK" contestant, who made it to the show's semifinals in 2018, had been working from home and was often in the kitchen, testing out recipes and whipping up new dishes.</p><p>"I told Peter that there's plenty to spare, I can just put some on a plate and put it on your doorstep and ring the doorbell," O'Shaughnessy said. </p><p><div type="image" title="masterchef neighbor" height="1498" width="1998" msid="75330596" hostid="261"></div></p><h2>O'Shaughnessy has <a href="https://www.insider.com/restaurant-closed-due-to-coronavirus-donates-thousands-of-chicken-nuggets-2020-3">been dropping off food</a> at Peter's door every day for the last month, always bringing over a tray with something new for dinner and dessert</h2><p>He's cooked up everything from quiche and apple crisp to broccoli <a href="https://www.insider.com/celebrity-chefs-leftover-pasta-easy-dishes-to-make">Parmesan farfalle pasta</a> and meatball tagine. </p><p>O'Shaughnessy said he calls up Peter around noon every day to ask if he's OK with the night's menu. </p><p>"I'll say, 'Do you like the sound of this? If not, I can do something else,' but he always likes the first option," O'Shaughnessy added. </p><p><div type="image" title="masterchef neighbor" height="1890" width="1512" msid="75330600" hostid="261"></div></p><h2>The <keyword id="3699" type="POSITION" weightage="60" keywordseo="Chef">chef</keyword> said he's been pleasantly surprised by Peter's love for bold flavors</h2><p>"I wasn't sure if he would like hot <keyword id="6181" type="COMPANY" weightage="100" keywordseo="Food">food</keyword> with different spices, but he's very open-minded," O'Shaughnessy said. "He used to serve in the Navy and travel around the world and try all these different foods." </p><p>O'Shaughnessy has cherished being able to share his passion for international cuisines with Peter. </p><p>"My family doesn't like spices, so it's nice because I can share my interest in food with Peter and we have that in common," O'Shaughnessy said. "The only thing he doesn't like are mussels and some shellfish, but everything else he's like 'Yeah, I'll try it!"'</p><p><div type="image" title="masterchef neighbor" height="1890" width="1512" msid="75330606" hostid="261"></div></p><h2>O'Shaughnessy said he has since gotten to know so much more about his neighbor, including Peter's own in-depth knowledge of food</h2><p>While Peter isn't a huge fan of being in the kitchen, he has plenty of experience with great cuisine. </p><p>"He'll say things like, 'Oh, I like how you put a thin sauce on the pasta, like how the Italians do it,' or, 'The beans are a little crispy on the inside, you must have blanched them really well,'" O'Shaughnessy recalled. "I'm like wow, this guy must know what he's talking about, he must have eaten some really nice food. He's a little fountain of knowledge." </p><p>And Peter has learned more about O'Shaughnessy as well. It was only last week he found out that his new next-door neighbor had competed on "MasterChef."</p><p><div type="image" title="masterchef neighbor" height="2667" width="2000" msid="75330607" hostid="261"></div></p><p>"He doesn't watch much TV," O'Shaughnessy said with a laugh. "My mom had rung him on the phone and said, 'Oh, we're making this tonight' and she must have mentioned it, and he said, 'Oh my god, I didn't realize this was the person next door making the meals all this time!'" </p><p>Before the lockdown went into place, O'Shaughnessy said that Peter was very active and out playing golf with his friends every day. But he doesn't have any family, and has lived on his own since his wife died from cancer when he was in his 40s. </p><p>"He seems like a very happy person, very content," O'Shaughnessy said. "But at a time like this, it gets to anybody. You want to have some contact with people." </p><p><div type="image" title="masterchef neighbor" height="2500" width="2000" msid="75330614" hostid="261"></div></p><h2>Peter has since told O'Shaughnessy just how much their daily phone calls mean to him </h2><p>"He said, 'You know what, I really look forward to these calls every day, they make my day and cheer me up,'" O'Shaughnessy recalled.  </p><p>O'Shaughnessy was so touched by Peter's words that he decided to post about their nightly ritual on Twitter, thinking just his friends would take notice. </p><h2>O'Shaughnessy's tweets about <keyword id="27178" type="ORGANIZATION" weightage="60" keywordseo="cooking">cooking</keyword> for Peter quickly started trending</h2><p>When O'Shaughnessy woke up the next day, he was shocked to find that his tweets had racked up hundreds of thousands of likes.</p><p>"I didn't think anything of it when I posted it, and then I went to bed," he said. "In the morning, I couldn't believe everyone was talking about it. People have been saying lovely things, and have been encouraged to cook for their neighbors as well." </p><p>With so many people doing <a href="https://www.insider.com/woman-flying-to-see-dying-mom-was-only-plane-passenger-2020-4">amazing things around the world to help during the pandemic</a>, O'Shaughnessy was surprised that his and Peter's story caught so much attention. </p><p>But the chef believes his posts may have resonated, in part, because cooking a simple meal for your neighbor is something that anyone can do. </p><p>"The food I put in that post isn't particularly difficult to make," he said. "A lot of people might have made a carrot cake before, and that broccoli dish as well, it looks easy and it's just broccoli, pasta, and cheese. <a href="https://www.insider.com/how-padma-lakshmi-is-stocking-up-during-the-coronavirus-outbreak-2020-3">A lot of people have that in their house</a> and could make that right now if they wanted to." </p><p>"If I had made a croquembouche people would be like, 'Nah, I'm not going to do that today.' But I think because it was a small gesture of kindness, everyone is capable of that. And I think that's why people felt quite empowered by it." </p><h2>O'Shaughnessy has since told Peter about their newfound internet fame</h2><p>"He was really touched by it," O'Shaughnessy said. "His generation is quite proud and doesn't want to be seen as taking help off of people, people his age don't want to bother people. But it's so important to him, and that's why I want to make the meals extra special. He tells me, 'Wow, it's like eating at a restaurant every night."' </p><p><div type="image" title="masterchef neighbor" height="1000" width="750" msid="75330616" hostid="261"></div></p><p>"It's nice to give that experience to somebody. It's my gift that I can give to people, and it's a nice thing to share. I just like seeing people happy and having something delicious." </p><p>O'Shaughnessy said he has been touched to see how he's inspired others to cook for their neighbors, and hopes that his and Peter's newfound friendship will remind people of the importance of their community. </p><p>"I think community is the best thing to look after people," he said. "I hope people learn from the lockdown situation that neighbors really do care.
