Former Disney World employees share 8 of their favorite places to eat in the theme parks 

<ul class="summary-list"><li><keyword id="8248556" type="UNKNOWN" weightage="60" keywordseo="Ghost-Kitchens">Ghost kitchens</keyword> have sprung up everywhere during the pandemic.</li><li>They allow chains to build delivery capacity or explore a new area without opening a restaurant.</li><li>Execs from chains like <keyword id="296144" type="COMPANY" weightage="60" keywordseo="Wendys">Wendy's</keyword>, Noodles, and Dickey's told Insider why they set up ghost kitchens.</li></ul><p>Ghost kitchens are one of the biggest restaurant trends to emerge from the COVID-19 pandemic, due to surging demand for delivery.</p><p>They don't have dining rooms and cook <keyword id="6181" type="COMPANY" weightage="60" keywordseo="Food">food</keyword> for delivery, and sometimes collection. The concept has existed for years but only recently gained traction.</p><p><em><strong>Read more: </strong><a href="https://www.businessinsider.com/ghost-kitchens-cloudkitchens-kitchen-united-food-halls-2021-5">Ghost kitchens operators are expanding their business models beyond the rent-a-space model</a></em></p><p>Executives from chains including <keyword id="11008652" type="UNKNOWN" weightage="60" keywordseo="noodles-and-company">Noodles and Company</keyword>, <keyword id="3109035" type="PERSON" weightage="60" keywordseo="Marcos-Pizza">Marco's Pizza</keyword>, and Wendy's told Insider why they decided to set up ghost kitchens.</p><h2>1. You can boost your delivery capacity and reach new customers</h2><p>Five Guys said it opened its first ghost kitchen in London because it had a high-traffic location that was also one of its top delivery stores.</p><p>"The volume of delivery orders was affecting the large amount of dine-in and pick-up orders, so we diverted all delivery orders to a ghost kitchen," the company said.</p><p>Marco's Pizza and <a href="https://www.businessinsider.com/noodles-company-digital-sales-online-orders-revenues-delivery-app-2021-3">Noodles and Company</a> said they're opening them in some of their busiest markets to boost brand recognition. Offering delivery using third-party services means they can reach new customers.</p><h2>2. They're cheaper than full <keyword id="34615" type="ORGANIZATION" weightage="60" keywordseo="restaurants">restaurants</keyword></h2><p>Because they don't need space for dine-in, ghost kitchens are smaller than full-service restaurants, making them "effectively a highly-efficient real estate model," according to David Bloom, chief development and operating officer at Capriotti's and Wing Zone.</p><p>They have a lower capital investment and also enable restaurants to target areas that would be unviable for full-service restaurants, Vicki Hormann, Applebee's director of off-premise, said.</p><p>"You can go into a smaller space," James Walker, vice president of restaurants at Nathan's Famous, told Insider. "You want to go into these higher populated areas because that's where the density of people are and to be able to do so at a rent that is workable from a business model."</p><h2>3. They let you test new markets at a low cost</h2><p>Ghost kitchens in shared facilities typically have 12-month leases, and revenues can be generated "almost immediately," Laura Rea Dickey, CEO at Dickey's Barbecue Restaurants, told Insider. This makes them less of a risk, and allows franchise owners to test demand, she said.</p><p><a href="https://www.businessinsider.com/noodles-company-digital-sales-online-orders-revenues-delivery-app-2021-3">Noodles and Company</a>, for example, is opening a ghost kitchen in San Jose. Noodles said it can use ghost kitchens to understand new locations before it moves in with a freestanding restaurant.</p><h2>4. They're quick to set up</h2><p>Ghost kitchens also have a quicker time to market than full restaurants because you don't have to set up a dining room or hire servers, execs at Nathan's Famous, Wendy's, and Panera Bread said.</p><p>"As a tenant, you can just jump in with your food and staff and start selling," Dog Haus partner Hagop Giragossian told Insider.</p><h2><strong>5. You can offer a streamlined menu</strong></h2><p>Ghost kitchens can offer limited menus with more targeted offerings, Abigail Pringle, chief development officer at Wendy's, said. </p><p>"It's a smaller space, so we do need to think even more strategically about the menu," she said. "The benefit to us as an operator is that we can streamline operations, improve profit and loss, and give customer items they crave most from the brand."</p><h2>6. You can have multiple brands in the same kitchen</h2><p>Ghost kitchens also allow companies to operate <a href="https://www.businessinsider.com/virtual-brands-owned-by-chain-restaurants-pasquallys-just-wings-2020-8">virtual brands</a>: Restaurants that only exist on delivery platforms. These brands often look like local businesses but are operating out of the kitchens of big chain restaurants.</p><p>Virtual brands were created to "sweat assets better," said Brody Sweeney, CEO of Camile Thai, which is operating one called Shanghai Sally. Fazoli's, Applebee's, Dog Haus, and Dickey's said they're operating virtual brands, too.</p>

Stir Fry Chef is a Mongolian restaurant chain that also cooks up stir-fry, minus the customization.</p><p>To the customer, they're two completely different restaurant brands. Yet, the food comes from the same kitchens.</p><p>Genghis Grill and Stir Fry Chef are part of a growing breed of so-called "virtual" delivery-only restaurant brands that are run out of the same kitchens, by the same owners. Other examples include <a href="https://www.businessinsider.com/virtual-brands-owned-by-chain-restaurants-pasquallys-just-wings-2020-8?r=US&amp;IR=TIR=T">Pasqually's Pizza, owned by Chuck E. Cheese, and Neighborhood Wings, owned by Applebee's.</a></p><p>Genghis Grill launched its Stir Fry Chef brand in the summer. Doug Willmarth, Chief Brand Officer at Genghis Grill, told Insider that Stir Fry Chef was helping his franchisees to boost sales.</p><div type="image" title="Doug Willmarth, Genghis Grill" height="461" width="614" msid="86137268" hostid="261"></div><p>Although Genghis Grill has some set dishes on its menu, it makes most of its sales from custom dishes where diners can choose which base, toppings, spices, and sauces they want. To many customers, the brand is primarily a create-your-own chain, Willmarth said.</p><p>Stir Fry Chef's menu is, on the other hand, made up solely of pre-set dishes. This helps the business cater to a different group of customers, Willmarth said: customers see Stir Fry Chef as "a regular restaurant where I can just order off the menu."</p><p>Stir Fry Chef dishes are made in 40 of Genghis Grill's 51 kitchens across the US, using the same equipment and similar ingredients, but slightly different recipes, Willmarth said. It costs existing Genghis Grill <keyword id="11916214" type="UNKNOWN" weightage="60" keywordseo="restaurants" source="Orion">restaurants</keyword> less than $1,000 to kit out their kitchens so they can make Stir Fry Chef food, he said.</p><p>"Both our stores and our franchisees can leverage existing food they have in the restaurant, the labor and cooking skills that are in the restaurant, the equipment they have," Willmarth said.</p><div type="image" title="Genghis Grill Korean BBQ bowl" height="2984" width="3978" msid="86137269" hostid="261"></div><p><a href="https://www.businessinsider.com/virtual-brands-owned-by-chain-restaurants-pasquallys-just-wings-2020-8?r=US&amp;IR=TIR=T">More and more restaurant chains are creating virtual brands</a> amid high demand for food <keyword id="11922166" type="UNKNOWN" weightage="60" keywordseo="delivery" source="Orion">delivery</keyword>.</p><p>Brody Sweeney, CEO of Thai chain Camile Thai, told Insider that <keyword id="12077755" type="UNKNOWN" weightage="60" keywordseo="virtual-brands" source="Orion">virtual brands</keyword> were created to "sweat assets better."</p><p>He said that Camile Thai was operating a virtual brand called Shanghai Sally in London, and its dishes share the same core ingredients as Camile Thai. This makes it easier to operate both brands in one kitchen, Sweeney said.</p><p>Some virtual brands are ran out of <a href="https://www.businessinsider.com/five-restaurant-chains-ghost-kitchens-fast-food-pandemic-collection-delivery-2021-6?r=US&amp;IR=TIR=T">ghost kitchens</a>, which don't have dining rooms and cook food solely for delivery. Hot-dog chain Dog Haus has, for example, launched <a href="https://www.theabsolutebrands.com/">a slew of virtual brands</a> including Plant B and Mutha Clucka, which are run out of both brick-and-mortar restaurants and <keyword id="12030736" type="UNKNOWN" weightage="60" keywordseo="ghost-kitchens" source="Orion">ghost kitchens</keyword>.</p><p>Dickey's Barbecue Pit told Insider it's even opening a brick-and-mortar restaurant for <a href="https://www.wingboss.com/company/our-story">Wing Boss</a>, which it first launched as a virtual brand.</p><p>Genghis Grill's Willmarth said that physical restaurants were "certainly is a consideration" for Stir Fry Chef, but not for a while.</p><p>Rather than launch virtual brands themselves, some restaurants have instead hosted them for other companies. Franklin Junction, for example, matches restaurants with spare kitchen capacity to brands looking for space to prepare delivery-only food.</p><p>"Restaurant kitchens are very multi-purpose vehicles," CEO Rishi Nigam told Insider. "They've artificially been limited by putting a $5,000 sign out front that says: 'We only make this kind of food.'"</p>

State Fair of Texas, Dallas </strong></p><p>The State Fair of Texas is home to the original corn dog, the beloved meat on a stick that Americans can't get enough of. Fletcher's Corny Dogs debuted the very first corn dog in 1938. Back then, they were giving away their corny dogs for free, just to get people to try the unheard of food. In recent years they've featured 500 food vendors during a single fair. They've got classics like giant turkey legs, rainbow popcorn, and fried oreos, but also some things you'd have a hard time finding anywhere else.</p><p>Fans of the fair love to post about these giant cones of extra long curly fries from Biggy's. They start by spiralizing <em>a lot</em> of potatoes, then deep fry them so they're golden and crunchy. It's not unusual to see fairgoers walking around with buckets piled high with gooey chocolate chip cookies. Sweet Martha's sells <em>one million cookies </em>per day, on average. </p><p>You might also catch a glimpse of equally massive buckets of french fries. Fresh French Fries goes through roughly 30,000 pounds of fries per day, and they claim to be the freshest ever because they make them to order . </p><p>And if you see buckets of pickles, it's not what you might think. These pickles have become what's known at the Minnesota State Fair as Pickle Dogs. That's a pickle, schmeared with cream cheese and wrapped in pastrami. Cheese.</p><p>Kendallneff posted the <a href="https://www.reddit.com/r/philadelphia/comments/g3xkfl/tried_to_support_local_business_via_grubhub/">exchange</a> with her Grubhub driver in the r/Philadelphia subreddit.</p><p>"Also, just curious... Was this food from Chuck E. Cheese?" she texted her driver after her food was delivered.</p><p>"There was the Chuck E Cheese store but the windows had the wing restaurant on them??? I was curious too!" the driver replied.</p><p>As it turns out, Pasqually is the name of the chef in the <a href="https://www.chuckecheese.com/family-fun/story">Chuck E. Cheese universe</a>. And there are countless Pasqually's Pizza and Wings listings on delivery websites across the country.</p><p>A Chuck E. Third-party platforms typically allow restaurants to choose a limited number of categories, e.g.: pizza, comfort food, wings. Launching a secondary, delivery-only brand enables restaurants to expand what search categories they're able to reach, and hence a wider audience. </p><p>Just Salad CEO Nick Kenner told Business Insider that Health Tribes' sales have more than doubled since the pandemic began. "I think virtual brands are a great thing for restaurants to be exploring right now," Kenner said.</p><p>Pasqually's Pizza definitely isn't the first, and it won't be the last delivery-only brand launched by a major restaurant chain.
