<ul class="summary-list"><li>Your likelihood of dying in certain ways can vary hugely depending on where you live, and how rich you are.</li><li>In the Americas, drug-abuse-related deaths nearly tripled in the last two decades.</li><li>Globally, the under-five mortality rate declined 59% between 1990 and 2020.</li></ul>Following is a transcript of the <keyword id="21654" type="COMPANY" weightage="60" keywordseo="video">video</keyword>.Narrator: These 49 <keyword id="26403" type="PERSON" weightage="60" keywordseo="charts">charts</keyword> can tell you a lot about how you're most likely going to die.It's worth mentioning that cause of <keyword id="6355784" type="UNKNOWN" weightage="60" keywordseo="death">death</keyword> data has only been thoroughly tracked with global consistency in a significant way for around 40 years, but we'll touch on that later.So what do we know for sure?For one thing, some of the things which preoccupy the public are less of a danger than other things which are at times overlooked.For example: more than twice as many people die from exposure to extreme temperatures than as a result of extremist terrorism.Consider also that more people died from gun-related suicides than gun related homicides in the US- and that only 3% of gun related deaths in the US are accidental in nature.In fact, globally suicide nearly doubled homicide as the underlying cause of death in 2017.Perhaps not surprising if you are a doctor, but probably to the rest of us, is that heart disease took more lives around the world than Natural disasters, terrorism, fire, drug abuse, drowning, Parkinsons, homicide, malaria, suicide, HIV/AIDS, traffic accidents, liver disease, diabetes, and cancer - combined.The World <keyword id="6354750" type="UNKNOWN" weightage="100" keywordseo="health">Health</keyword> Organization estimates that over 17.9 million people die every year from heart disease. And it has been the number one killer in the United States since 1921.Before then pneumonia and tuberculosis often grappled for the top spot.But as we developed better treatments for infectious diseases in the early 20th century, people began to live longer- even with the deadly 1918 H1N1 pandemic disrupting the trend the average <keyword id="14078" type="PERSON" weightage="60" keywordseo="life-expectancy">life expectancy</keyword> in the US rose from around 47 to 60 years of age by 1930.This phenomenon-along with many other factors including lifestyle, diet, and changing industries-lead to an increase in cardiovascular disease which has constituted the most significant epidemic of the 20th century.Although heart disease has been number one for 100 years now, entirely new causes - such as Covid-19 have arrived.Which brings us to another thing that we know for sure: The way we die is always changing. Over the last 20 years in particular some major shifts have taken place in the world of medicine. Since the year 2000, Alzheimer's and other forms of dementia climbed from the 20th leading cause up to 7th in 2019,while HIV/AIDS has fallen from eighth to nineteenth in the same time frame.And in just the last 24 months a radical shift occurred that no one could have missed. Covid-19 ended the year 2020 as the third leading cause of death in the United States.Provisional data shows Covid-19 is currently the #1 leading cause in 2021 - displacing heart disease at the top of the list for the first time in a century.Technology, industry, and lifestyle also play large roles in shaping our deaths.In the Americas, drug-abuse-related deaths nearly tripled in the last two decades.Globally, diabetes has overtaken traffic accidents during that time as well.And one other technology-related cause of death may surprise you; between 2011 and 2017, selfie-related accidents killed five times more people than shark attacks globally.One strikingly positive change has been in infant mortality - around 1 million fewer infants died in the first months of life in 2019 than in 2000.Globally, the under-five mortality rate declined 59% between 1990 and 2020. But lower-income countries still experience far more under-five deaths than wealthier countries.The risk of dying before the fifth birthday is about 70 times higher for a child born in the highest-mortality country vs the lowest-mortality country.And this is where we begin to uncover perhaps the thing we can be most certain of. Where you are born goes a long way in determining how you will die-and how long you will live-largely by virtue of your country's relative wealth.The World Bank categorizes countries into four tiers of income groups: Low, lower-middle, upper-middle, and high-income economies.low and lower-middle-income countries are still hit hard by diseases that wealthier countries have largely eliminated.For low income countries, diarrhoeal diseases, tuberculosis, and HIV/AIDS all among the leading causes of death, none of which appear in the top ten for countries in the high-income category.Upper-middle and high-income countries populations by contrast are more likely to die from non-communicable causes more commonly associated with longer life spans.And the difference in life spans between income groups could not be more clear: In 2019, the leading cause of death in low-income nations was neonatal conditions. That means complications at birth or in infancy that could not be overcome. For high-income countries, neonatal conditions once again placed outside of the top ten.But the wealth and health gap doesn't just exist between nations - it is also a clear divide within them.One study found that on average, the wealthiest American man lives 15 years longer than the poorest, while the wealthiest woman in the US lives 10 years longer.While in Ghana, a child born to one of the wealthiest families is three times more likely to live beyond five years of age than a child born to one of the poorest families.So while a quick glance at global <keyword id="66017" type="ORGANIZATION" weightage="60" keywordseo="Statistics">statistics</keyword> might make it seem as though it's where you are born that decides how long you will live, a deeper look suggests that your wealth has a big part to play.Which brings us to one final thing we know for sure about how we die, which is that we don't know everything. The first notable attempt to classify global causes of death was the International List of Causes of Death, introduced in 1893. In 1900 only 26 countries used this shared language. As of 1999, the tenth revision is distributed to 194 nations by The World Health Organization.This means global cause-of-death data dating before 1999 is largely incomplete - and even today's data has large gaps in availability.Of the 194 member states who receive the ICD-10 codes from the WHO, only 115 of them had any form of official vital statistics registry that recorded and reported those codes.The Institute for Health Metrics and Evaluation (IHME), estimates that less than half the world's population has their birth and death recorded in a vital registration system. The poorest, the homeless, and other marginalized groups around the world are often under reported-leaving the causes and numbers of their deaths unknown.

Drug crime is entirely different from any other forms of criminality.Entirely different.If the police catch a drug dealer, crime goes up, because there is an unlimited number of people wanting to take that opportunity.What happens over time is, at every level, is where police catch street drug dealers, they help create monopolies.So if you catch a dealer who controls half a city, the dealer who's most able to take opportunity of that is the guy that controls the other half.In essence, it's an extremely hostile environment because only the most controlling and hostile gangs are the ones who are the most successful.Policing drugs has made the heroin and crack cocaine markets in the UK and around the world much more hostile, but also much more competitive.Because people get arrested, this creates opportunities.And if you consider that if the police catch a gang which controls a quarter of a city, then the gang that is most capable and able to take up that opportunity and take over control of that quarter of the city is a gang that already controls another quarter of the city.So it makes for a very combative and competitive marketplace.The target customers of those organized-crime groups is the most problematic consumers of those commodities.The most hardcore 10% of heroin consumers consume 50% of the market value of that heroin.So you can see just how much money there is in dominating or exploiting that hardcore 10%.You can make an extraordinary amount of money with dealing with relatively few people.I realized that I had to understand the people around me, which meant understanding a group of people that I'd previously had a huge amount of stigma for.And I had to readdress that quite quickly, because I had to know about -- I had to function like them. But I quickly realized that those people were in a pattern of behavior that was out of their control because of what had happened to them.And that was important to understand, because by understanding that, I could understand how organized crime was exploiting them and how I could appear to be exploited myself and therefore get the credibility to climb the ladder, buy increasingly large amounts of drugs, and network with the right people.The most significant dealer, or the most significant foot soldier, I suppose, and at the bottom rung of organized crime, is the most exploited person in the whole supply chain.And that is the user-dealer.It's somebody who is supplying drugs to fund their own habit.More often than not, they're doing that because they've been forced to do so by organized crime.But they're the most important person to get to know, because they are the person that organized crime relies on.Or, nowadays, it's quite often children who are the dealers to rely on for organized crime.A user-dealer, from wherever they're living, they would go where they're told in the early morning to where the next-rung-up dealer would be, and they would be given the package.And more often than not, that package would already be weighed into specific deals and sealed up, heat-sealed in plastic, and given to that dealer, and there would be an agreement that he could take a percentage of those as long as he sold the total number.Now, if you were to ask me how the day went for the person running a team of user-dealers, that gangster running a quarter of a city, say for example, most of those people I've met have been quite professional.They haven't used any drugs, they have been efficient, they have got up in the morning early, and they usually do it in shifts.They'll split a morning shift and a late shift, and they'll do it in rotation as a team.They will check which SIM card goes in their phone or which phone they're using for the day.They will have a separate SIM with a database of numbers which are of most use to them.They will check in with their companions, and they will meet up with the person that they're working with for that day.And what that would normally mean is that they will have a driver.They will sit in the back of a car quite often, and they will be driven around where they will be either doing deliveries to user-dealers, sometimes meeting in the back of that car, or sometimes meeting at remote locations, which will change on a rotational basis or on a whim.They will keep a careful eye on locations where there is a stash, where they are stashing their next resupply of drugs.They will also keep tabs on people who are doing the measuring-out and the heat-sealing to make sure that they're doing that correctly.They will constantly be in contact with whoever is tasked in the policing of those people to make sure everyone is staying honest and working according to the team ethos, shall I say, and that makes sure that no one's ripping them off.In essence, it's an extremely hostile environment, but I have to reiterate, it's the presence of people like me in that marketplace and it's general drugs policing and the use of police informants which creates that desperately violent marketplace.The gangs that are the most successful are the ones who are most able and willing to use immediate violence.And so that threat of violence and that intimidation becomes one of the most important tools of the trade.And so they have to put time into that, they have to put effort, they have to bring discipline into that control of people.So they need to give tighteners to people, they need to constantly build their reputation.So if there is a group of sex workers who are committed to buying the heroin or crack from that gang, then they will remind them of that, and they will use violence to do so.I had actually given up undercover work just before the Burger Bar Boys investigation.But I was manipulated, persuaded into doing it because two other undercover operatives had tried to get close to them, and they'd not got close, dangerously not got close.But it was an extraordinary amount of work, and it had really serious ups and downs.So, I went to Northampton and I picked on two vulnerable people to manipulate.And I decided these were the people who were going to eventually introduce me to the Burger Bar Boys.Because I knew they were connected to them.I knew that they'd been dealing for them at one point.And after lots of work, I eventually persuaded them to introduce me to the Burger Bar Boys.And that was a terrifying experience.And so I was directed to where they were holding court, their little headquarters at the snooker club.I was directed to the washrooms, the door burst open, and this hooded figure went into the toilet cubicle and stood on the toilet and looked over, and he said, "What's this?" And he kept asking other questions and then rephrasing the questions, trying to catch me out.I knew the guy looking down at me from the cubicle was implicated in seven different murders.In particular, I knew he was the person who'd sourced two submachine guns for a multiple murder of two women.Then four hooded figures came in, and as the door bashed open and they started walking around me, every so often one would headbutt me on the side of the head on the ear.And I was getting jostled around more and more.And then all of a sudden he said, "All right, then. What do you want?" As soon as he said the words, "All right, then. What do you want?"The four hooded figures had walked out.And I said, "I'll have one on one, please," which meant I'll have a 1.4 deal of heroin, 1.4 deal of crack.And I handed over my 40 pounds, and he gave it to me looking down on me.And then I got his phone number. He put Woody, he actually put my name in the phone, his phone.And I started to buy increasing amounts from them more often and gather evidence of conspiracy against the gang.I was in.The most important task that I had, to get that phone number, to get that beginnings of trust, I'd got it.That was it.It was just the most intense operation.There was always something, and there was always that threat of violence.It never went away.Never went away, not for one minute. And, anyway, seven months, it lasted.And I was pleased to think by the end of that seven months that I'd gathered evidence against 96 people, the six main gangsters plus 90 other people.And I knew there was no one else to meet.There were no new phone numbers, there was no names I hadn't heard of already.I'd caught everyone.There were police from five different counties, hundreds of people involved in the arrest phase.Loads of doors being smashed in.And a week or so after the event, I spoke to the intel officer, and he said to me, "Yep, we managed to interrupt the heroin and crack cocaine supply in Northampton for a full two hours."All of the belief I had that had been eroding away over those years, and it had been eroding away, I had to give in to the evidence before my eyes, really, and realize that this is futile.Now, what this does is it increases corruption.If you have allowed a dealer or a gang or a cartel to increase their share of the market, then they are richer, which means they have more money to invest in corruption.In Mexico, there used to be 20 cartels.Now there are three.Each one of those three are richer than those 20 used to be.Sweden has an extraordinary drug gang war going on, and they're not just using machine guns, they're using grenades.They're using IEDs.They're blowing each other up.There's literally hundreds of bombs going off in Sweden between drug gangs competing to control drug markets across northern Europe.This is something that we should pay attention to, especially as Sweden takes pride in having the toughest drug laws in Europe.Cause and effect, I would say.The most significant change in the drug markets has been the shift of online.The dark web, the dark markets.The lack of physical contact means there's less violence, so that's a good thing it's moved online.And also there is a way online, in some regard, of having self-regulation, because there's reviews left, so people can increase the likelihood of better-quality commodities.Claims by FBI agents or whoever it is that they can crack codes and use hackers to bring these markets down, it's not true.The dark markets will continue to become more efficient as a response to policing.Since I've left the police, I've written a memoir, and that's called "Good Cop, Bad War."My position is the position of my organization, which is the Law Enforcement Action Partnership.We advocate for the full regulation of all the drug markets to take control away from organized crime.And, increasingly, we're becoming the most important voices for reform.

I infiltrated the UK's most dangerous drug gangs - here's what I learned about drug crime

I'm super excited to share this with you. We just got it a few days ago. Seals are still on, and I'm excited to peel this here.This bingsu machine just like rice-cake machine. It's from Korea. And the best thing about here is that we don't have to use our frozen, like, a block of ice to shave it. I would love to show you. So, I'm just pouring water. And just gonna start it.Herrine Ro: Do you want to talk about the converter?Eunjo: Just because we have two machines from Korea that are not meant for here, we have to use this giant converter to use it every time for ice-shaving machine or rice-cake extruder.So, what it's doing is water is slowly dripping into a little panel, and this modem is rolling, touching the water, freezing, and then just shaving right in there. And you see how powdery that is, that it's so cold. It goes into negative 50, where it becomes still powdery. And it gives me a freedom to change the flavor of anything shaved underneath. Herrine: How did you find the machine?Eunjo: I Googled. [laughs] I Googled, and then we also visited different locations in Chinatown and found one location that was certified to ship this too. So we talked to them. They're Korean, so they were very excited to work with us too. So they came two days ago to install them. And for what it's worth, this was about $6,000.Herrine: OK. Wow, I didn't know that. OK, great. So, what's next?Eunjo: So, rice-cake machine was one of the hardest thing we could source it, just because it was directly from Korea and how big and heavy it was. From here, I will show you how to make the rice cakes. Go for it?Herrine: Uh-huh.Eunjo: OK.Herrine: What does the rice-cake extruder do?Eunjo: Basically it just binds it and then extrudes it. First one always a little rougher, just because it's the force that's coming in, and I will do this about two more times. [extruder squeaking] They make funny noises.Herrine: So, what kind of consistency are you looking for?Eunjo: For right now, just a smoother, bouncier texture. So, from next one, I'm going to start shaping them. These are the classic, the disk we like to do. The great thing about having your own rice-cake extruder is that you can do any different size or any different shape that you can do.Herrine: How is the taste different?Eunjo: Taste, flavor is same. It's because it's rice. The biggest difference is the texture and ability to do your own. Oh! Also the fresher rice cake is a lot more softer than the store-bought. So texture is soft, but chewy.Herrine: Great. Where are you taking us next?Eunjo: So, we are in front of our Ssäm Bar storage room where our kimchi fridge is located. All the Korean restaurant, it's the heart and the soul. [drumroll] And here's our baby.Herrine: So, how many different kinds of kimchi do you have here?Eunjo: Here we have the red kimchi that's been aging for about two years. It's going to be on the lowest temperature to go lowest fermentation. Very nicely crisp. We just made white kimchi. Vegetarian. I like to not age it too long because there's a lot of fresh fruit, Asian pear juice, there's a little apple in there as well. And use it as an appetizer or as a side.As you can see, they're into their own little cubicle. The reason for that is you can control the temperature. Regular refrigerator, you go in and out so much where the temperature drops and it fluctuates a lot, where kimchi fridge, there's three types: high, medium, and low. When it's low, it can get the low fermentation. So the temperature drops to about, like, negative 1 to 0 Celsius. When it's high, it goes up to about 1 to 2, where it ferments slower than a regular refrigerator.Herrine: Do you have one of these at home too?Eunjo: I wish. My mother has two, but I don't have anything. I live in a tiny, tiny apartment in New York City.All right. I go?Herrine: Yeah.Eunjo: All right. Feel a little weird 'cause Chef Daniel had all these fancy knives, and here I am showing you a knife from H Mart that I picked up for $15, but this has a built-in garlic smasher. I think it's very, very cool. They say for the garlic to really have their flavor, you have to pound it so the oil comes out. And that's the reason for the mortar and pestle. And that's the same reason, for small kitchen, if you don't have a mortar and pestle, [pounding knife] garlic, right into it.These are the two most-used knives that I use in the kitchen. This one is a Masamoto. They're sturdier, so I use it for chopping up hearty vegetables or even the proteins. And this one is a Misono chef's knife. I use it a lot for actually breaking down fish, just because how delicate and thin they are. But I use it so much it ate all the blade and now it's thinner.Herrine: Do you have a brand preference when it comes to knives, generally?Eunjo: I actually, many chefs have, like, this collection of fancy knives. I'm not big into, like, brand or, like, other type. For me, it's about accessibility.At Ssäm Bar we use a lot of garlic. I do like to get a whole garlic and peel it myself, because I do really believe that fresh-peeled garlic and regularly peeled garlic you purchase has that distinct flavor difference. Easiest way to peel garlic is not getting the freshest garlic. Garlics are harvested in between June to August. And if you eat them right away, they're very, very bitter and very spicy. So what I learned is that they actually let it dry. So the longer they are drier, you can actually see they're peeling super easy.There's two ways to do it. First way is using a bowl the traditional way. So I'm just going to cut the bottom of the garlic, and right into the bowl. OK. I'm gonna make a noise now. [clanging] You see? Half peeled. Other way, let's say the garlic is not as dry, that easily after you shake it they're not peeling, you can cut the bottoms off as normal and soak them in a little warm to lukewarm water for 15 minutes, and you should be able to peel off easily.Herrine: Generally how much garlic would you say you use at the restaurant?Eunjo: At least -- we will say the one container is about 3 pounds of peeled garlic. And we go through at least one a day, so 15 pounds at least a week, and it will be more if we're making kimchi or a chili oil that requires more.Herrine: Perfect. I think that is it for garlic. And is the next thing you're going to show us the scissors?Eunjo: Yes. I think one of the most underrated tool in the kitchen is scissor. Especially in Korean kitchen we use a lot of scissor, not just in the kitchen but also in the dining room as well. For this one, I picked up in H Mart, and I thought it was cool. It's actually a scissor for pork belly. As you can see, Koreans love pork belly, and they have their special scissor for it. You can see they're in a little -- how do you say? Like --Herrine: A curve?Eunjo: They're a little curved, so the idea is you can go into the soft pork belly and then cut right into it. Here, we use this beautiful one for service tableside cutting. And you can see, more sturdier, stronger one for cutting the bones or the backbone of a protein. And little cute ones, I use it for everything from cutting the green tape or cutting the little herbs of the plants. And I'll use this pork belly one for the uncooked rice cake to show you how to cut them using scissor.Herrine: What do you use the rice cakes for at the restaurant?Eunjo: For our rice-cake dish. We have, right now -- I can say?Ryan: Yeah.Eunjo: OK. [laughs] We'll be starting with our classic. So we have one that are classic to Ssäm Bar, and one that's classic to Kāwi.Herrine: Great. Love that.Eunjo: One of the most used but underrated thing, I will say, is a green scrubby in the kitchen. They're great for scrubbing dirty pots and, you know, whatever's sticking to the bottom. But other than scrubbing, doing dishes, they're great for many other things. Scrubbing the vegetables, usually root vegetable, or scrubbing the table to make sure they're nice and shiny.Herrine: Do you have, like, a brand preference? Is that a specific type you go for?Eunjo: Yes. I don't know what they're called.Herrine: Oh, it's fine. We can put that information in.Eunjo: So, we have this beautiful carrot that we picked up from the market. Easiest way using a green scrubby -- I usually like to cut them in half so we're not wasting so much of it. I always make sure you wash them. So, if you want to keep their natural shape but to clean them other than peeling, is lightly scrub them. Be gentle. You don't want to go too hard, or you're gonna bruise them. Open 24 hours, year round, this <keyword id="6181" type="COMPANY" weightage="100" keywordseo="Food">food</keyword> hall feeds 100,000 people for free each day. And on religious holidays that number can double.Just one of these huge bowls is enough to feed around 10,000 people.We visited Amritsar in <keyword id="3658" type="COUNTRY" weightage="60" keywordseo="India">India</keyword> to find out everything that goes into feeding such a large crowd, and to see just what it takes to make such Big Batches… This is Harmandir Sahib, often referred to as the Golden Temple, it's the largest Sikh shrine in the world. But despite being part of the holy site this kitchen doesn't discriminate, the food is completely free to anyone, regardless of religion, gender, or ethnicity. Community kitchens, or Langar, have been popular across South Asia since the birth of Sikhism. And the Langar at the Golden Temple has been serving meals since 1577.Each dish is cooked in giant metal vats. Over one hundred gas cylinders and huge piles of wood are burned through every day to keep things running 24/7. And there's only one short 30 minute break in the cooking from 4:30 to 5am. Thousands of vegetables have to be peeled and prepared by volunteers before they're taken to be cooked. And while the menu can vary, depending on availability or the donated vegetables that the kitchen may receive, it is always vegetarian. But keeping this many people fed takes a lot of ingredients. That's over 375kg of onions and 100kg of spices every 24 hours, just for the <keyword id="67410" type="COMPANY" weightage="60" keywordseo="Dal">dal</keyword>. To make it: chana dal, or split chickpeas, and urad dal, or black lentils, are mixed together and repeatedly washed. They're then moved into even larger vats and mixed with the onion, spices, salt, and ghee, a clarified butter, and cooked together. Kheer is a sweet pudding made of rice, milk, sugar and almonds boiled together.But one of the biggest demands on the kitchen is bread. Unlike the huge vats that can be made in bulk, each chapati needs to be rolled out separately before cooking. Once cooked each one is hand coated in ghee to add flavor and keep it from drying out. To keep up with demand the work is split between machines and people cooking by hand. Producing the bread alone takes 10 tonnes of flour a day.And to keep this operation running smoothly it takes a lot of volunteers.This 'selfless service' is an important part of Sikhism. Sewadars, or religious volunteers, are key to keeping this operation running daily. And this is everything that's in a Big Mac. Welcome to <keyword id="41941" type="ORGANIZATION" weightage="60" keywordseo="fast-food">Fast Food</keyword> Chemistry.Now, I've been desperate to try an authentic American Big Mac, but unfortunately there's no way I can get my hands on one in the UK. The simple solution was to get ahold of every ingredient which goes into one -- there are over 50 -- and then to build one myself.Joe: Whoa, whoa, whoa, whoa, whoa. You're not making a US Big Mac without me. I'm going to oversee this whole operation to see how close you actually get. What I love about this show is that it combines all the things I love about making <keyword id="6181" type="COMPANY" weightage="100" keywordseo="Food">Food</keyword> Wars, and also I do literally nothing. So I am a fan of this format.Harry: I've always wanted to say this, but please do not try this one at home.This one right here is alum. This is potassium aluminium sulfate, and it's primarily used in things like leather tanning and dyeing and in fireproofing textiles. It's pretty strong stuff. For example, if you boil some of this, it can actually dissolve steel in just a few hours.Joe: OK, we're one chemical in and already we're talking about dissolving steel, did he say? Um, no. Harry, please be careful. Put on some gloves for God's sakes.Harry: This one right here is soy lecithin. You've probably heard my Food Wars cohost, Joe, mispronounce this one a million times.Joe: Lechithin. Leckithin. Lecithin. Leckithin. Lechithin. Leechithin. Soy lecithin.Harry: It's a lubricant and an emulsifier. It's considered safe for consumption, but there have been some preliminary studies to suggest that overconsumption may promote depression, which is kind of the last thing I need. But what exactly do we mean by emulsifier?Well, as we all know, oil and water don't usually mix. An emulsifier is something which helps you get around that problem. In the Big Mac it's used in the cheese and the sauce, just to kind of help everything stay together. And finally we have polysorbate 80, otherwise known as polyoxyethylene sorbitan monooleate, or the more catchy "tween."Now this might come in a handy applesauce-style pouch, but it's probably our most controversial chemical here. Studies have shown that it can lead to an increase in colon cancer and infertility in mice. It's not a guarantee to say that it will do the same to humans, but it's probably not the best sign.Joe: OK, oh Jesus. Slice, ugh. Pasteurized American cheese. Ingredients are milk, cream, water, sodium citrate, salt, cheese cultures, citric acid, enzymes, soy lecithin, and colors added. Get a load of this guy right here.Harry: This one's a little tricky. We don't have an exact recipe for the pasteurized processed American cheese which McDonald's uses in the States. What we did find are the FDA requirements for processed cheese. Now to meet the legal definition of American cheese, it must be made of cheddar, colby, granular, or washed curd cheese. We're choosing to go with a mild cheddar because it already kind of tastes similar to the Big Mac cheeses that I've had in the past.From the ingredients list, we can see the ones that belong to the cheese and the ones which are added at a later stage. The cheese itself is basically just made of milk, salt, cultures, and enzymes. Whereas later on, you will add the sodium citrate as an emulsifying agent, the citric acid as an acidifying agent, and the soy lecithin as an anti-sticking agent.The FDA requirements also specify how much of each of these you're allowed to have in the finished cheese. For example, we know that the soy lecithin can only be 0.03% of the finished weight. I think it's chemical time. The chemicals have changed the consistency of the cheese almost immediately. It's gone from what was a very liquidy melted cheddar with some cream in it to like, a very shiny-looking, almost like a squeezy cheese. And last but not least, the color. That's good. So in a relatively short space of time we've turned this cheddar, which is quite a firm, inflexible, very pale cheese, into this classic American cheese.It's amazing how little sodium citrate it took and how quickly the change took effect. Honestly, it was a tiny amount, and as soon as it was sprinkled in, made a whole world of difference.Joe: Obviously it looks like American cheese, but this is how we test if this is real, authentic American cheese. Ready? Let's check it out. Damn it, I was hoping it would stick.The pickle slices at an American McDonald's contain cucumbers, water, distilled vinegar, salt, calcium chloride, alum, potassium sorbate as a preservative, natural flavors, polysorbate 80, extractives of turmeric for color. Ugh.Harry: Now some of these chemicals can actually be quite dangerous. Calcium chloride can lead to burns in the mouth and throat, excess thirst, vomiting, stomach pain, and low blood pressure. So I'm going to put some gloves on. Now, despite its potential dangers, calcium chloride is actually a great way to improve the saltiness in food without increasing the sodium content.Alum is one that we've mentioned before. And apparently this improves the crunchiness of pickles. Potassium sorbate, as it says on the label, is a mold inhibitor, which will get the pickles a longer shelf life. And finally, we have polysorbate 80. Now this is an emulsifier which will thicken liquids. However, it is also the one that gives mice cancer.It's forming like, can you see this? It's forming crystals, like stalactites.Joe: Oh, it's like, solidifying or something right now. What is happening? Get away from it. I feel like I'm watching someone making an explosive. I just, the way he's shaking it, it's like, gah, it's going to explode. Looks like this is the first time Harry's ever cut a cucumber.The Big Mac bun in the US contains the following ingredients: enriched flour, which is ... and diglycerides, enzymes, and vinegar.Harry: We'll start with the flour. This is British white bread flour, which contains wheat flour, calcium carbonate, iron, niacin, and thiamin. So we're missing the malted barley flour, the riboflavin, and the folic acid. None of these are too suspect. Malted barley flour contains enzymes that break down starch to sugar, and riboflavin and folic acid are actually just vitamins B2 and B9. So let's fortify our flour.The only way to actually get the extra ingredients that we needed was in vitamin form. So we've got some folic acid and some riboflavin tablets here. It's like a pregnancy supplement. You're supposed to take them when you're trying to get pregnant. Now that we have our fortified flour, the next few ingredients are fairly simple: water, sugar, yeast, and soybean oil.Now these might seem fairly normal, but we actually had some difficulty finding soybean oil here in the UK. In the US, apparently it's one of the most common cooking oils. But in the UK, it's used for two things, massage oil and as a horse supplement.Joe: So I'm going to need clarity on this. When you say a horse supplement, you're giving it as a supplement to a horse? Or you take it as a supplement instead of eating horse? Which is it? Both are really weird.Harry: Nailed it. We looked up soybean oil in the USA, and it was a much lighter color than this. So this might not be as refined as the soybean oil that you get in the US, but fingers crossed, it should still be edible. And finally, the extra ingredients. Now the ingredients list has these as less than 2%, so we have some idea of how much of each of these we should be adding.Joe: Oh, is that how chemistry works? Just eyeballing it? What are you doing? We have just a little bit of this, a little bit of that. Again, there's nothing too surprising until we get to this one, which is DATEM. Now, DATEM is diacetyl tartaric acid ester of mono- and diglycerides.Harry: Now, if you ever wondered how McDonald's gets their buns so kind of soft, but also quite springy, this might be the difference maker. It improves the strength of the gluten network.Joe: It's like, really soft, right? I know it's not supposed to be that way, but it's kind of like, it's got a bounce to it, right?Harry: So our buns have risen. We're going to put them into some ring molds, top them with sesame seeds, and then bake.Joe: It appears that Harry has raided someone's dorm room and stolen their microwave-hot plate combo. I don't know how this is going to turn out.Harry: OK, here we go. So here is the bun we made today, and here is a bun we made earlier. Now the differences between these two are that this one has all the chemicals McDonald's uses, whereas this one is literally just water, flour, and yeast.Visually, the one we've made today looks like a much better color. It's a nice, even golden brown all around. As you see with the one on the left, without the chemicals, it's actually got this big tear around the side as well. Now it's unclear exactly why this happened, but it could be because this one has some chemicals which help the gluten stay strong and withstand the expansion in the oven.Joe: But that looks, actually looks pretty good. I'm very surprised by that.The Big Mac big sauce is made -- Our American Big Mac sauce contains soybean oil, from before, remember that? Sweet relish, which is diced pickles, sugar, high-fructose corn syrup, distilled vinegar, spices, onion powder, salt, extractives of paprika, and soy lecithin.Harry: Now, kind of like the soybean oil, we had some real difficulties getting hold of high-fructose corn syrup in the UK. It's just really not used at all. We were able to track down some regular corn syrup, but only as a kind of specialty imported product. But the only difference is that high-fructose corn syrup goes through a process which converts some of its glucose into fructose, which makes it even sweeter.Joe: Yup, corn syrup is very common in the United States. You can get it in the baking aisle. I've gotten it before. It's good for when you're making barbecue sauces, like pulled pork. I could not get high-fructose corn syrup. I looked it up, and sure enough, you can only get it at industrial-level, five-gallon drums. It's pretty cheap.Harry: Now we've already talked about what some of these chemicals do, but we haven't talked about xanthan gum yet. Xanthan gum is a thickener. And I can understand why you might want to put it into a sauce to thicken it up. But just before we do that, we're going to test it out on some water to see how effective it is.Joe: Harry, my friend, you just invented thick water, which we've got here in the States. So this is for people with swallowing issues. It actually makes it easier. I mean, is it really like -- It doesn't -- Hmm. Ooh, that's weird. It's like a gel. Where have you been all my life, thick water? Silky, smooth. Props to the people over at Thick-It. They're not a sponsor. You make a hell of a thick water.Harry: Just about a half a teaspoon of it turned about 100 milliliters of water into this. So now we've made our sweet relish, but that's just one of the ingredients in the Big Mac sauce. Now we have to make the rest. Now it's worth pointing out, a couple of the chemicals in there are noting what they do. So we'll start with the propylene glycol alginate. Now this is usually used in the beer-making process, and it will also give our sauce a nice glossy finish. As for the hydrolyzed vegetable protein, we have this small bottle of it here.Now what this is is primarily a flavor enhancer. But it's also a not-too-distant cousin of MSG. The main component of this is glutamate, which is the same as the G in MSG. And last but not least, we have this, which is caramel color. Now caramel color is worth pointing out because one of the by-products it can contain is on the state of California's list of chemicals known to cause cancer. What we don't know is if McDonald's uses the specific type of caramel color that contains that by-product.Joe: That chemical that is on California's list of cancer-causing chemicals, just pick a different color. I don't, I mean -- I know you eat with your eyes, but it's OK if the color is a little different.Harry: Aren't you supposed to like stream in the oil very gently? Oh, God. More than that? Loads more, just like, oh, gosh, that's a bit aggressive. Oh, God. Feel free to get involved. I'm hearing lots of criticism from you guys. Not many solutions.Joe: It's like when you first started living on your own, and you had a roommate. And you like, tried cooking something, and you're both like, I don't, you hold it, I'll mix it, having no idea, having no skill on how to do this. Just watching you guys do this is just like, oh, my God.Harry: Wow. Look at that. Nailed it, guys. And with that, we have our Big Mac sauce. The color looks pretty good. The consistency is pretty good. It was very hard work trying to emulsify that by hand, but honestly, not too disappointed with the result.Joe: Wow. That looks like Big Mac sauce, I have to say. I'm very surprised by that. That actually looks just like the sauce. In the US, our Big Mac beef patty is made up of 100% beef patty. It is prepared with grill seasoning, which is salt and black pepper.Harry, get a spatula, man. You knew you were going to do this. Why are you using a spoon? I've got to say, this is a very sad sight to watch you try and make this burger, on this hot plate, with a spoon, in an office.Harry: So after all that, we've made all of the components of a Big Mac. The only things we've added are some freshly diced onion and some shredded lettuce. These, thankfully, are just made of onion and lettuce. There's no additional chemicals.Joe: OK, he hasn't even put it together yet, and I, honestly, am pleasantly surprised. At this point before assembly, my hat's off to you, Harry. That actually looks pretty good.Harry: So there you have it. Can you tell which one is ours?Joe: Visually, Harry, I'll give you a 6. If I got a Big Mac at McDonald's and that's what was in the box, I'd be like, what the hell's going on back there? But it looks a lot closer than I thought it was going to be. The fact that that bread, and that sauce, and that cheese looks the way it did is very impressive.Harry: The last thing to do is taste our burger to see how it stacks up against an actual Big Mac. I think the bun is good. It's a great homemade bread. I just don't think I've ever made bread this good at home without those chemicals. However, it doesn't quite have that real soft pillowiness that the McDonald's one does.There's not a huge amount to say about the beef. The lettuce and the pickles are also pretty good, honestly. No real difference noted. And I think I actually almost prefer the cheese that we've made. I don't know if that's because we used better cheddar, but I actually like our cheese.We've got a nice thick slice, kind of holds up. It also has a good flavor. I think the sauce on ours is not quite as good as the original Big Mac sauce. While we followed the ingredients list as exactly as we could, there are still some herbs and spices which they keep as a closely guarded secret.

A multi-volume report of the nearly 800 monuments that have been documented will be released next year, he added. Amiya Bhusan Tripathy, the state convener of INTACH, said this will be the first of its type study on any river in India and is the pilot project of the trust. A comprehensive survey of the heritage, on either bank, has been undertaken in the nine districts through which the Mahanadi flows, he said. The death toll also rose to 28. On Sunday, the number of COVID-19 cases stood at 1154.More cases of medical and para-medical personnel being tested novel coronavirus positive were reported. A doctor, a nurse and a non-medical staff at Max Hospital in south Delhi's Saket have tested positive for the virus. In Sir Ganga Ram Hospital in central Delhi, COVID-19 tests were conducted on all 115 healthcare workers who were quarantined two weeks ago and only three of them have tested positive.The three who tested positive for the pathogen are an endoscopy technician and two nurses, hospital authorities said.Amid the rising number of cases, a 'Corona Foot Warriors Containment and Surveillance Force' has been constituted at every booth level by Chief Secretary Vijay Dev, a Delhi government official told .Each team of the force will have five members including a booth-level officer, civil defence volunteer, police constable, sanitation and anganwadi worker, the official said.According to him, 13,750 such teams will also advise people to maintain social distancing and wear masks when going outdoors. The teams will recommend suspected cases for testing to the district health authorities, the official said, adding anganwadi workers will be trained by the health department. The government launched a massive sanitisation drive in those areas declared as red zones, and high-risk zones identified by the colour orange to prevent the spread of the disease. Sixty machines, including 10 hi-tech Japanese machines, have been deployed," Chief Minister Arvind Kejriwal tweeted.The administration ran a pilot disinfection drive using the hi-tech Japanese spray machines at Rajinder Nagar Assembly constituency."The key target of the Delhi government is to focus on containment zones. Therefore, the disinfection drive will start with the red zones. In Rajinder Nagar Vidhan Sabha, we have started a pilot project with three such machines in presence of experts to analyse the performance and results thereof," local MLA Raghav Chadha said."We sanitised the whole area and studied all the necessary parameters. After a careful consultation with the experts, it has been decided that this is a fully equipped technology, and the disinfection drive should immediately start at the containment zones," he said.This is the first time in India that such advanced Japanese technology is being used to tackle the COVID-19 pandemic, he claimed, adding the length of the machine is adjustable and as such it can enter narrow lanes.The chemical composition used for the disinfection drive adheres to WHO guidelines. These machines spray disinfectants in a way that can kill germs and virus on any solid surface, according to a statement.Meanwhile, in order to ensure strict compliance of social distancing norms, the Delhi government will implement odd-even rules in all wholesale markets of the city. <ul><li><keyword id="9139921" type="UNKNOWN" weightage="20" keywordseo="Shemaroo-TV">Shemaroo TV</keyword>, the flagship Hindi GEC from the house of <keyword id="203890" type="COMPANY" weightage="20" keywordseo="Shemaroo-Entertainment">Shemaroo Entertainment</keyword>, is launching an original TV show titled ‘<keyword id="10809040" type="UNKNOWN" weightage="20" keywordseo="jurm-aur-jazbaat">Jurm aur Jazbaat</keyword>.’ </li><li>We caught up with <keyword id="207966" type="PERSON" weightage="20" keywordseo="Hiren-Gada">Hiren Gada</keyword>, CEO, Shemaroo Entertainment to understand how it was all put together, walked us through the channel's journey so far and future of FTA channels in India. </li></ul>Shemaroo Entertainment launched a Free-to-Air (FTA) channel last year in the midst of the lockdown, when businesses were coming to a standstill. A company that has effectively adopted to technological changes and macro economic disruptions since the early 1970s, Shemaroo has been smoothly sailing through all waves of changes. As the lockdown eased and the country slowly started limping towards normalcy, Shemaroo TV was burning the midnight oil to put together an original series for its audience. Now, it is all set to foray into original TV series with a crime show titled ‘Jurm aur Jazbaat.’ The general entertainment content on Hindi TV channels largely revolves around domestic issues, mythology, historical personalities or desi love stories. OTT audiences, on the other hand, are a fan of thriller films, sci-fi or crime shows. However, Shemaroo has taken the OTT route for its TV channel with the launch of its first crime-based TV show. In the recent past, even courtroom sagas have become a huge hit on OTT platforms: Criminal Justice: Behind Closed Doors, Nail Polish, Illegal season 1, Your Honour and The Verdict – State vs Nanavati (2019) are proof. On why the TV channel chose crime as its debut genre, Hiren Gada, CEO, Shemaroo Entertainment, said, “We did a market research to identify what is trending, what are the consumers watching, what they aren't, etc. So we finalised various categories to work with. After deep-diving into the market research we conducted, we realised that the crime genre has a very good connect with the Free-To-Air audiences. What also strongly came out was the fact that there is emotion behind every crime. So, to simplify the name, we called it Jurm aur Jazbaat. Once we decided the route we wanted to take, we worked with a couple of production houses in terms of creating pilots, ramping up and then going into the production part. Parallely, because this was our first fresh and original programming, we wanted to have a very strong mentor, who can connect with the audience, create a great viewing experience for them and that's how we zeroed in on <keyword id="6360486" type="PERSON" weightage="20" keywordseo="Ronit-Roy">Ronit Roy</keyword>.” Journey so far Since the inception of Shemaroo TV last year, the channel wanted to offer a mix of original content, licensed content and existing content. However, due to the nation-wide lockdown, the channel had to put a pause on its production like everyone else. It did not stop the entertainment house from launching a new channel. It wanted to lay a strong foundation before launching its original content. “We had to revamp our whole process for two reasons. One was logistically, we were not in a position to shoot at that time. And secondly, advertisers' spends had also reduced. So, we decided at that time to focus on our existing library as well as fresh creations and acquired shows from Star like Devon ke Dev Mahadev, Jeet hui parai, Shor from Sahara, and we had our own movies and shows. The focus at that time was to establish the channel in terms of viewership, distribution, primarily marketing, viewership, programming, consumer connect. Many other things and milestones which we wanted to achieve before we launch an original,” shared Gada. Present and future of FTA channels in India Currently, as per Gada, not more than two FTA channels are creating original content and Jurm aur Jazbaat will help the channel carve a niche for itself. While Shemaroo had also launched its Marathi channel, MarathiBana and a lot of learnings from that experience went into the launch of Shemaroo TV, the latter was rolled out while working from home. It launched unique initiatives to pull in more viewers. Overwhelmed with the response the channel has seen so far, Gada said, “Given the fact that we are a GEC less than nine months old, we have seen very good response and viewer traction. In fact, we've done many contests where we could gauge consumer participation. We received a lot of very good messages from our audiences and they showered us with love. That has helped build the overall viewership. And obviously, the team's hard work has paid off too.” It has also seen a good response from the top FTA advertisers. “I'm sure that a very strong connect with the core Shemaroo brand and being part of this ecosystem for decades, has played its strong part as a strong beautiful partner, given the challenge that overall advertiser revenue and spends have gone through, in the last year. We are part of that same trend but the fact that we have seen very good acceptance borne out by the fact that all the top spenders on the FTA space, most of them are already present on both our channels. We keep adding more brands and new categories as we move forward,” added Gada. This year, with the economy coming back on track, Shemaroo is expecting to see more advertisers on-board who cater to rural and Tier II and III audiences. Gada said, “With the economy back on track, and companies launching more and more products, good agriculture output with a good monsoon, the rural economy has done exceedingly well. With this, a lot more categories are now willing to participate on the FTA platform, because they are all seeing more consumption coming from these pockets. Over the next few years, as per capita income of the country grows, more and more categories of consumption will open up for these audiences. That will bring in many more categories into the FTA space. And I think that’s really the exciting part in the next three to five years. This is a segment which has been underserved as far as television is concerned and as far as products are concerned. In the next three to five years, this situation is bound to get corrected.” After measuring the response of its fresh content, Shemaroo is planning to launch more original content and simultaneously, keep acquiring popular series and films to be able to cater to a large audience. Sharing his plan for this year, Gada said, “We are going to take it one step at a time. We definitely have more originals lined up. The fact is that there's just two channels, which are offering fresh programming or original content. We are upping the game for ourselves at a certain level and that's going to be a continuous process for us, because that's how we plan to keep up our audiences loyal to us and keep coming back to us as we keep launching new offers for our viewers.”

The smart era that we live in and the vision of a <a href="http://www.businessinsider.in/searchresult.cms?query=DIGITAL+INDIA">digital India</a> that each one of the 1.2 billion people share in India, calls for use of multiple technologies. While many are already being used, we just need to expand their use rather than 
reinventing the wheel. One such area with very significant impact on businesses, consumers and our lives as a whole is <a href="http://www.businessinsider.in/searchresult.cms?query=MACHINE+TO+MACHINE">Machine-to-Machine</a> (<keyword id="6404332" type="COMPANY" weightage="20" keywordseo="M2M">M2M</keyword>) communications. 
 
M2M communication is a vital key to creating a digital infrastructure in any country and enable digital delivery of services, while bringing in significant efficiencies in our daily lives. 
 
The benefits of M2M have been few as the deployment has either been limited to pilots or a few pockets. And for this, we need to expand and scale the use of M2M. 
 
In simple terms M2M is much like people-to-people conversations and use of data services via mobile devices that we take for granted today. Now, the same telecom networks are being used to help machines talk to each other. 
 
So the <a href="http://www.businessinsider.in/searchresult.cms?query=ELECTRICITY">electricity </a>meter at your home automatically sends power consumed data to the utility office to generate a bill. Or chips embedded in thousands of mobile towers across the country relay information to telco offices about diesel consumption (that run the towers), any leakages or faults with the tower so relevant teams are alerted for actions to be taken — fix a leak or replenish diesel. Or in yet another scenario, a bus sends information on empty seats to a ticker at the bus stop on how many seats are empty, helping commuters at the bus stop to decide whether to board the bus or not! 
 
All the above mentioned things take place without any manual intervention—and via machines talking to each other. The machines — be it electric meters, mobile towers or seats in a bus — are embedded with Subscriber Identity Module (SIM; in case of <a href="http://www.businessinsider.in/searchresult.cms?query=gsm">GSM </a>networks) cards. The machines use mobile towers to exchange data at pre-set time — it could be once a month for applications like billing, or real time for applications like seats in a bus. Several M2M technologies also use short range networks like WiFi. 
 
There are many distinct areas where machines have used using M2M to emerge as subscribers to telecom networks. One is power, where SIM-based meter readers will send alerts to suppliers on power thefts and to subscribers on their consumption as well as when bills are due for payment. The second is transport and telematics, where M2M devices will be used for tracking vehicles, checking fuel consumption, routes taken by driver and to diagnose engine as well. 
 
The third segment is handheld point of sales systems, which can be used for remote banking. Such systems are already in use and this will only expand as it helps in bringing banks closer to the unbanked population. 
 
Another area is telemetry, which includes everything else you may want to monitor remotely. For example, a blood pressure (BP) monitor can be embedded with a SIM card to relay information about health of chronic BP patients to doctors over telecom networks. Basically, M2M will improve efficiencies in the system and it will be live, 24X7. For telcos, this could be a new revenue stream which will emerge as a significant business in future. 
 
The applications of M2M are really vast and often it’s limited by imagination. Come to think of it, M2M can be vital for smart cars and smart cities. For instance, there is lot of buzz around concepts like the connected car. In such a scenario, Internet-enabled cars communication is the key. In case of emergencies like accidents, machines can bring assistance to the passengers even if they are unable to communicate their situation. For instance: The car may then send a signal to the nearest hospital and police station so that the passengers may get some help in the time of emergency. Also, under the car’s hood, the connected parts relay information about faults to the dashboard. And this makes the driver informed about the car performance all the time. All this is a combination of M2M using short range and long range wireless technologies. 
 
M2M will not only make devices smarter, but the data, which is continuously gathered, will be vital to develop and improve future products as well. This is the right time to build and scale M2M applications as <a href="http://www.businessinsider.in/searchresult.cms?query=4G">4G </a>networks that are currently being deployed, offer high speeds, security and ideally suited for data exchanges.
