 But, this one <keyword id="6358070" type="COMPANY" weightage="100" keywordseo="Mumbai">Mumbai</keyword> restaurant took it to another level altogether with its <keyword id="3348880" type="UNKNOWN" weightage="100" keywordseo="Charcoal-pav-bhaji">charcoal pav-bhaji</keyword>. 
 
<a href="https://www.zomato.com/mumbai/masalabar-carter-road-bandra-west">Masala Bar</a>, a recent addition to Carter Road’s ever growing list of restaurants has introduced a Carbon Pav-bhaji in its menu, which basically includes tossing all the ingredients together with carbon. Yes, even the bread. 
 
 
 
According to the person who runs the Instagram account @foodhangovermumbai, this pitch-black version of Pav-bhaji tastes exactly the same as the Pav-bhaji you get on the streets, except with less butter, while another brave soul says, “It has a distinct taste and is a must try” while reviewing the restaurant on Zomato. 
 
Nope, still not convinced! 
 
 
 
But, incase you want to try it, you know where to head to. As for us, we’ll stick to our plates of extra buttered, unnaturally orange pav-bhaji, thank you.

This Mumbai restaurant serves a pitch-black version of pav-bhaji

The centre’s scheme to make people pay taxes for their income under the <a href="http://www.businessinsider.in/searchresult.cms?query=street+food&amp;sortorder=effectivedate">Income Declaration Scheme</a> (IDS) is coming up with great results. 
The roadside <a href="http://www.businessinsider.in/searchresult.cms?query=street+food&amp;sortorder=effectivedate">street vendors </a>in Mumbai selling<a href="http://www.businessinsider.in/searchresult.cms?query=street+food&amp;sortorder=effectivedate"> vada pav</a> and <a href="http://www.businessinsider.in/searchresult.cms?query=street+food&amp;sortorder=effectivedate">chhole batore</a> have declared Rs 50 crores property and cash. 
 The eatery owners will have to pay tax of Rs 22.5 crore on this previously unaccounted income, people aware of the matter told the <keyword id="6474066" type="COMPANY" weightage="20" keywordseo="economic-times">Economic Times</keyword>. 
 The IT department on tip offs have conducted raids on 200 eateries including a well-known vada pav centre in Thane, a dosa centre in <keyword id="6354719" type="COMPANY" weightage="20" keywordseo="Ghatkopar">Ghatkopar</keyword>, a sandwich centre in Andheri and a jalebiwallah in south Mumbai. 
 
"The owner of a juice centre in Ghatkopar has declared about Rs 5 crore in cash and property under the IDS. Some other roadside eatery owners too declared Rs 25 lakh-Rs 2 crore, one of the persons, who did not wish to be identified told the ET. 
 About Rs 40,000 crore had been declared under the black money scheme by Thursday evening, the person said. Of this, about Rs 5,000 crore was declared in Mumbai, Thane and <keyword id="219220" type="CITY" weightage="20" keywordseo="New-Mumbai">New Mumbai</keyword>. 
 
"The income tax officials told us that we must declare our assets under IDS or they would come again and raid our shop. We had asked our tax advisor to help us with the problem, one of the the people who declared wealth under IDS told the ET. 
 
A lawyer said declaration of income under the scheme could lead to harassment, the government's assurances to the contrary notwithstanding. 
 "One of my clients wanted to declare about Rs 3.5 crore but I strongly advised against it, as it could lead to harassment in future. His son is about to get married, so I advised the client to hold a grand marriage in <keyword id="6372909" type="COUNTRY" weightage="20" keywordseo="Turkey">Turkey</keyword> or somewhere and blow away all the money instead, the lawyer, who did not wish to be named, told the financial daily.

From gold-flaked chocolates to swanky SUVs that look like they’re wheeled straight out of a Bollywood blockbuster, Indian companies are rapidly jazzing up their product lines, even faster than you can say the word "premiumization." But what does this mean for Indian companies and consumers? What is this jazz about premiumization all about? Is it just urban India that’s riding this wave, or has rural India also joined the bandwagon? We decode for you. <h2>What's premium, really?</h2>Imagine you’re eating Pav Bhaji at a roadside thela. Later during the day, you decide to dine out at a fancy, upmarket cafe, only to find Pav Bhaji Fondue on the menu. Same same, but much more expensive—often 5 to 10 times higher—for a little more hygiene and some better ambience! Think of <keyword id="378381" type="General" weightage="100" keywordseo="premium-products" source="Orion">premium products</keyword> as this fondue. They are a notch up your regular, daily-use products soaps or shampoos, and even cars, all packaged luxuriously, offering just about the right touch of quality. The main differentiator, though, would be the price range. <h2>Driving home premium wellness</h2>A recent report by Nielsen suggests that over 70% of urban Indians are okay with paying a premium for their products. And companies are cashing in on this sentiment like never before. This explains why 58% of new products launched so far this year have been in the premium+ segment, as opposed to just 38% of new launches in regular, traditional trade. Take cars, for instance. In October 2024, India’s largest car manufacturer, <keyword id="19909974" type="General" weightage="20" keywordseo="maruti-suzuki" source="keywords">Maruti Suzuki</keyword>, sold 65,948 units of its compact cars like Swift, WagonR, <keyword id="20033138" type="General" weightage="20" keywordseo="dzire" source="keywords">Dzire</keyword>, and more. Compared to the year-ago period, which saw sales of 80,662 units, this was an 18% dip. But take a look at their SUV (sport utility vehicle) sales for the same period. Cars like Brezza, Ertiga, and Grand Vitara sold about 70,644 units, a 19% uptick from the sales made in October 2023, i.e., 59,147 units. Simply put, when it comes to cars, Indians are saying the bigger, the better! The same is true for India's second biggest automobile manufacturer, Hyundai. Its SUV lineup made up a staggering 68.2% of the firm's total sales made for October 2024. What's more, SUV demand remained largely consistent across urban and rural markets. <h2>Consumers are inching up</h2>FMCG (fast-moving consumer goods) are also riding the premiumization wave, with Indians prioritizing their health and wellness and not bothered about dishing out a few extra bucks for the same! You’ll find no dearth of words like organic, vegan, gluten-free, and sugar-free, peppered generously over every product you’ll see today, be it soaps, juices, or more. No wonder then, sales from premium segments in 2024 make up around 27% of all FMCG sales and even contribute a massive 42% to the sector’s value growth in India. The Nielsen report further adds that luxury brands that position themselves at twice the price of their category’s average are even witnessing stellar growth. In fact, for most FMCG brands like <keyword id="19992198" type="General" weightage="20" keywordseo="tata-consumer-products" source="keywords">Tata Consumer Products</keyword>, <keyword id="20002610" type="General" weightage="20" keywordseo="hindustan-unilever" source="keywords">Hindustan Unilever</keyword> (HUL), Dabur, and Nestle, it is this premium segment that is growing much faster than their regular ones. And it's not just about daily-use products; Indians are also taking their celebrations a step over. Spirits manufacturer Radico Khaitan highlighted that for the first half of 2024, their prestige &amp; above segment made for 88.4% of its net sales value. In the same period, the regular popular segment accounted for just 9.1% of their net sales. From Hindustan Unilever, which saw its premium products grow 30% over the last quarter, to <keyword id="20521971" type="General" weightage="20" keywordseo="kingfisher" source="keywords">Kingfisher</keyword> beer's parent company, United Breweries, whose premium product sales volume jumped by 27% during the quarter as opposed to just a 5% rise in overall volumes, everyone is seemingly taking their lifestyle a notch above. Per the Nielsen report, in 2024, a typical global consumer spends about $13.7k per year. This is set to grow by around 2.4% to $14k as early as next year. Even a report by Goldman Sachs also highlighted a similar trend, noting that India’s affluent class, or those earning over $10,000 (Rs 8,42,694.97), is set to reach 100 million in the next 3 years. And where will this consumer spend? On premium products! <h2>Online shopping shifts from mass to class</h2>Amazon’s Great Indian Shopping Festival, which was live between September 27 and October 29 this year, saw 140 crore customers, more than 85% of whom came from non-metro Indian cities. On the site, there was a 400% spike in sales in premium sales across categories like watches, fragrances, handbags, jewelry, and more. Rival Flipkart noted a similar trend, recording 1.8x growth in premium beauty and personal care products during the first half of this year. <h2>Dialing in premiumness</h2>The Indian smartphone ecosystem has always been dominated by basic phones, or those entry- and mid-range phones that are priced between Rs 10,000 and Rs 6,000. But that has changed in recent times, with premium smartphones (i.e., those priced over Rs 60,000) registering 20%+ growth in 2024. During the first quarter of this year, sales of mass phones (priced between Rs 10,000 and 20,000) reached 44%, compared to 51% in the year-ago period. But it's all sunny and shiny in the mid-premium (priced between Rs 40,000 and Rs 60,000) and super-premium segments (priced above Rs 60,000). Sales growth has burgeoned by as much as 27% and 86% in these categories, respectively. As India continues its march toward becoming the world's third-largest economy by 2027, the premium party is just getting started. Eating street foods in India has earned the country multiple laurels in the global front in terms of quick bites. While samosa and pakora can be considered a staple diet during evening in many Indian households, you have often felt pity on the man who sells it. Most of the time we tend to believe that samosa sellers in India are poor. Chitchatting for sometime, the person inquired about his income, if he is happy with the job. The samosa wala, who sells samosa in the office colonies of <keyword id="3713107" type="UNKNOWN" weightage="20" keywordseo="west-mumbai">West Mumbai</keyword> sells 4000 samosa a day. Each samosa earns him a profit of Re 1. Apart from that he sells vada pav, noodles pakora and some other fast food. Let me mind you, before the government’s scheme of wealth declaration, most of them wouldn’t have paid tax. Imagine this man was making Rs 80000- 1 lakh a month. 
 While this may sound like an isolated story, other Quora users have found that most reputed kebab sellers of <keyword id="6359570" type="COMPANY" weightage="20" keywordseo="Chandni-chowk">Chandni Chowk</keyword> in Delhi earn not less than Rs 10000 profit each day. Even forget about Chandni Chowk where most people love to dine, you must have come across the shikanji (lime water) sellers below the metro stations in Delhi and <keyword id="53426" type="CITY" weightage="20" keywordseo="NCR">NCR</keyword>. During peak summer, most of them earn Rs 1500- Rs2000 a day. 
The most reputed breakfast in Delhi and UP, chhole batore would make you feel hungry at anytime of the day. If a Quora report is to be believed, many of them sell some 500 plates of chhole batore all through the day. They earn no less than Rs 1.5 lakh a month. 
 One such snacks seller in the <keyword id="403902" type="UNKNOWN" weightage="20" keywordseo="College-Street">College Street</keyword> area of <keyword id="6354925" type="COMPANY" weightage="20" keywordseo="Kolkata">Kolkata</keyword> earns Rs 1 lakh to Rs 1.2 lakh a month just by selling chicken pakora, fish finger and cutlets. Talking to one of the pakora sellers, we found that earning profit in non veg items are easier than veg. That’s because most non vegetarian items expensive and there is no hard a fast rule about how much quantities of ingredients you need to add. 
 
However, just because a half of the fast food vendors, do keep in mind that not all samosawala earn the same and they shouldn’t be ignored. Have a samosa every week, pay on time and let the economy flow.
