If you're not paying attention, you could walk by some of the best tacos in New York City.Customer: I've had tacos all over the world, and this is probably one of the best I've ever ate. I have to stop here every day after work. [laughing]Lisa: Queens has some of the most diverse food in the continental US, and one of the buzziest new spots here is this unassuming taco truck. Now, I love very little in this life more than a good taco, and these tacos, these specific kinds of tacos have been taking over my Instagram feed, they've been taking over LA, they have finally hit New York, and I cannot wait to get my hands on them, so let's go check it out.Food truck Birria-Landia opened in the fall of 2019, and it didn't take long for New Yorkers to take note. It even received a two-star review from The New York Times, which rarely covers food trucks. Brothers José and Jesús Moreno run the whole operation, with José taking the day shift to prep and cook and Jesús staying until the early morning hours to serve hungry night owls.There are only four items on the menu, tacos, tostadas, mulitas, and consomé, and each is stuffed with this: a spicy beef stew called birria, which has its roots in Mexico but has, in recent years, dominated the Los Angeles food scene. José Moreno: I went to California, and these tacos of birria are so popular over there in LA. I get back to New York, I feel like I miss them. The only way, if I want to eat tacos of birria again, is if I make them. Nobody sell over here this way.Lisa: The birria begins here, in a shared kitchen space where various New York City food trucks prep for service. Three times a week, José fills these four massive pots with the ingredients needed to make enough fresh birria to feed an army.José: I'm using all my experience of 20 years to put in this taco birria. We make with love. Like, we take the time to pour the salt piece by piece. Then you let it rest, that meat can absorb the salt, and then it's much better. Lisa: In its birthplace of Jalisco, Mexico, traditional birria is made with lamb or goat. But because it's a bit more accessible, Birria-Landia's take starts with 100 pounds of beef, cut into large chunks and seasoned generously with salt and pepper. To each pot, José adds a blend of spices, all of which he measures not-so-precisely with a serving spoon. Paprika, bay leaves, oregano, cumin, cinnamon, cloves, salt, and pepper.He blends together chipotle peppers and fresh onions, boiled guajillo peppers, and garlic - like, a lot of garlic - to give this dish its signature depth and spice. The blender is tiny, so it takes a lot of batches to pump out enough puree to flavor all this birria. The birria is left to marinate for about four hours, then separated. The beef from the stew is chopped up and used in the tacos, mulitas, and tostadas, and the broth is saved to make a hearty cup of soup called consomé.Then it's all packed up and loaded onto the truck. Birria-Landia parks in the same spot starting at 5 p.m. every day, on Roosevelt Avenue in Jackson Heights, Queens, right under the elevated tracks of the 7 train. The perfect spot for hungry commuters and pedestrians.José: People from everywhere are eating my tacos, and that make me so happy. We are in the right moment. Right now, it's tacos fever, all New York.Lisa: Once parked, the real work begins. These tacos are all about flavor, so it's no wonder the tortillas are dipped in the residual fat from the consomé. Not only does this add flavor and the signature bright red color, but it also saves some money because there's no reason to buy frying oil. They're topped with the beef from the birria stew, of course, then onion and fresh cilantro.Customer: I usually don't like tacos in New York City because of the tortilla, because it's pretty bland, and these are very good.Lisa: Was it worth coming out here on this cold, cold day to eat a taco?Customer: We live right around here, so it's just a walk for us. Lisa: Oh, so you're cheating. [laughs] OK. And according to chef José, if you don't get a cup of consomé to dip your tacos in, you're doing it all wrong. José: We are right now the classic taco de birria. This is the classic. It's the meat, onion, cilantro, and sauce. This is the magic. This is the magic, it's true. You eat the taco and the consomé in one bite. So, I mean, this is genius.Lisa: On a day like today, when it is 25 degrees outside, this is the best thing I could have thought to have eaten. You can tell with the meat that you really took the time to season it. And it's spicy, but it's not overwhelmingly spicy. José: Yeah, it's.... Lisa: It's built for all different kinds of palates. And the tortilla. It's, like, crispy, but it's soft. José: Exactly. You have both texture when you eat it.Lisa: Yeah. I could eat 12 of these. [laughing]José: A lot of people, they just dip the taco, eat, then finish, and they left the consomé.Lisa: That's a crime. The consomé is the best part. The meat is so, so juicy and tender. I don't know, you just have to try it for yourself.Teddy Vasquez: Hi guys, my name is Teddy Vazquez and I'm the owner of Teddy's Red Tacos. This meat is all beef, shoulder cut from the beef part. Everything is cooked in a pot, it boils for several hours. We put tomatoes, spices and this is how it comes out after a couple hours of getting, getting cooked overnight. This is all shredded beef. So we just chop it up and then we like to throw in some of the juice. This is what Teddy's Red Tacos is all about. We just get a tortilla, a plate, throw a handful of meat with onions, some cilantro, some hot sauce, and some juice. Boom. And there you go. Teddy's Red Tacos.Producer: Double dipping.Teddy Vasquez: We got Mario on the grill. Mario, one of the best ones. We have Delfino here.Delfino: Hola.Teddy Vasquez: A great superstar here as well. This is our famous deluxe plate. It consists of four items. This is a taco, tostada, this round one, we call it a molita because it has meat and cheese inside, onions, cilantro. And my favorite one is the quesadilla. Put some hot sauce, squeeze a little bit of lime, put in some broth. This is the juice of the meat. Like it like this, I like to do this. You close it up and you enjoy. Mmm. I don't know how to explain it, the flavor you get. It's, the tortilla's crunchy, the meat is so, so juicy and tender. You know, the broth makes it extra juicy and tender. I don't know, you just have to try it for yourself. When we cook the meat, it releases its fat and we wet the tortillas in the pot and we throw it on the grill. The tortillas are wet red. That's why our tortillas come out extra crispy and all that.I've seen it on TV and my boyfriend's cousin actually lives close by so we just wanted to stop by. But we've seen it through TV, Instagram. It's soft, it's very moist. It kinda just sinks in. It's good. It's good.The tortilla's red and it's just like, crispy, you know, definitely different.It's just unbelievably amazing because with this simple concept, just four items on a plate, one meat, simple, people making lines. People are excited to come check it out. I'm just beyond blessed, beyond grateful. Back in October 2016, I started selling my tacos on the weekends in a little, old warehouse. At first, in the beginning, people didn't know me and I didn't know, I didn't have any customers whatsoever. But, when I was done cooking, I put everything in the trunk of my car and during the week I was driving for Uber and for Lyft and I would get a ride and people would be like, "Hey, what's that smell? Why does it smell like <keyword id="6181" type="COMPANY" weightage="100" keywordseo="Food">food</keyword>?" And I'm like, "Hey, I'm glad you asked "because actually I sell tacos." And like, "What do you mean? Like tacos?" Yeah. And within nine months, I was able to get my first truck. I had the vision to park somewhere where, I wanted to put tents and tables. So I saw this spot here on Slauson, the railroads, and I said to myself, "Wow, this is a pretty cool spot." And I just had the vision. What if you're able to park here, put tents and tables, put some music in the background, you're having some tacos. That'd be pretty cool. For me, opening the restaurant was more simple because I have a partner over there. I don't have to worry as much as over there. I was kinda hesitant. I'm like, "What if people doesn't respond to our food, "to our concept?" But then the same thing kicked in. Yes, it's possible. Yes, yes, yes, yes.[Man] I sampled everything and everything was really delicious.[Woman] And how does it compare to other tacos that you have had in other restaurants? Delicious.The best thing that I love about my job is the people's reaction. And to people react to me excited and they're willing to wait in line for 30, 40, one hour, two hours. They're changing fashion, celebrity culture, and the world of work. Here's how they're changing restaurant menus across the US.<h2 id="baf6a2eb-70db-4ecb-bf8b-d4e4d208d591">They're adventurous eaters</h2>Gen Zers generally crave big and bold flavors, executives told Business Insider.They're accustomed to ingredients and flavor profiles "that generations in the past did not grow up with," Joe Labombardo, vice president of culinary at Chartwells Higher Education, which provides food services at around 320 colleges and universities, told Business Insider. "Profiles, ingredients, and recipes from all over the world are now part of their diets.""They definitely have a bold palette," he said. "It's definitely not the blander palettes of yesteryear."<div type="image" title="A group of young diners sit at a table full of food and drinks, taking photos of their meals on their phones" height="2840" width="4260" msid="110995043" hostid="261" sizebytes="1267164"></div>Younger diners want to try new things and are more likely to be attracted to limited-time offers at restaurants, Lizzy Freier, director of menu research and insights at restaurant analytics company Technomic, said during a panel at the National Restaurant Show in May.<h2 id="5627323b-9f37-4431-9def-6e4bace5d379">Menu hacks fly on social media</h2>Gen Zers are more inclined to try out menu hacks, creating new dishes using items already available on the menu. These can sometimes go viral on <a target="_blank" href="https://www.businessinsider.com/chipotle-tiktok-food-hack-new-fajita-quesadilla-menu-2023-2">social media</a>, where people share new combinations they've discovered.Some chains are using these menu hacks to their advantage. Tom Boland, CMO of Bojangles, said during a panel at the National Restaurant Show that he'd noticed a spike in people ordering iced blueberry biscuits with a side of sausage on the weekends, particularly in areas with a high student population. It turned out that college kids were visiting after nights out and putting the sausage inside the biscuit for a sweet-savory snack.Bojangles has now added the hack to its menu, served with the icing on top of the sausage rather than the biscuit to make it easier to eat. "This thing is flying off the shelves," Boland said.<h2 id="664d8ebd-4104-40c9-9f74-a4e5ec36198d">They love to customize</h2>Gen Zers want to feel like they're getting something exclusive. This includes ordering customized dishes. "That is here to stay and Gen Z and the generation after that both grew up with it."At Caribou Coffee, younger customers — Gen Alpha, Gen Zers, and younger millennials — are most likely to modify their drinks, CMO Erin Newkirk told BI. "It's like what makes you famous on TikTok, if you can unlock the TikTok customization."<h2 id="0d2d8a9a-30d3-471d-a0b1-c2f1d86a98b0">Snacks don't have to be unhealthy</h2>Gen Zers are less likely to stick to the typical breakfast-lunch-dinner meal pattern."Gen Z is more apt to have more, smaller meals throughout the day versus the standard three square meals," Labombardo said."With Gen Z we don't really see a pattern per se" in dining times, El Pollo Loco CMO Andy Rebhun <a target="_blank" href="https://www.businessinsider.com/gen-z-fast-food-restaurant-dining-habits-generations-money-spicy-2023-4#they-love-to-snack-4">previously told BI</a>. "It's usually: 'When it's most convenient for me.' They will eat whenever they can fit it into their schedule."But when they do choose to snack, it's not necessarily on unhealthy food.<div type="image" title="A person dips a piece of pita into a bowl of hummus" height="1414" width="2121" msid="110995046" hostid="261" sizebytes="169290"></div>While they may opt for cronuts or boba, Gen Zs also graze on a lot of cottage cheese, hummus, or vegetables with spicy ranch, Labombardo said.<h2 id="4a74a08b-b522-4adf-bd4f-4fe69b1a790c">They crave spicy food</h2><a target="_blank" href="https://www.businessinsider.com/gen-z-fast-food-restaurants-spicy-change-menu-2023-5">Gen Zers are big fans of spicy food</a>, executives previously told BI.Labombardo said that dishes with the North African paste harissa and the Thai jam nam prik pao were becoming increasingly popular."There's a lot more excitement around spicy flavors, but it's not just spice and pure heat," Labombardo said. "It's also recipes that compliment the heat." He said that they were also looking for ways to add a "spicy twist" to classic recipes, like spicy ranch, which he said is "extremely popular."<h2 id="22a4dbf6-28b7-4ae9-a5b5-aeea1d0e4f1b">What they're ordering now: Chicken, mashups, and pickled food</h2>Popular dishes among college students at the moment include Hawaiian musubi, a sushi-like dish made with spam and rice; shawarma; pickled foods; desserts with sweetened condensed milk, including in boba; and mochi doughnuts, Labombardo said. Flavors like za'atar and yuzu are also trending, he said.Meanwhile, bacon pancakes, pickles wrapped in crispy fried cheese, Korean dishes including hot dogs, fried chicken, and chewy rice cakes with spicy sauce, known as tteokbokki, and Chinese tanghulu, a crunchy candied fruit, are flooding people's social-media feeds, Labombardo said.<div type="image" title="Tanghulu skewers lined up" height="1414" width="2121" msid="110995248" hostid="261" sizebytes="160002"></div><a target="_blank" href="https://www.businessinsider.com/gen-z-fast-food-restaurants-spicy-change-menu-2023-5">Chicken</a> also appears to be Gen Z's protein of choice. Chicken-sandwich brand Chick-fil-A keeps topping <a target="_blank" href="https://www.pipersandler.com/sites/default/files/document/TSWT_Spring24_Infographic.pdf">Piper Sandler's survey</a> of teens' restaurants, while chicken-finger chain Raising Cane's has shot to number four in the ranking.<a target="_blank" href="https://www.businessinsider.com/top-food-trends-mashups-birria-ramen-spice-swicy-functional-comfort-2024-6#soaring-spice-levels-2">Mashups</a> like Nashville hot chicken bao buns and birria ramen are also popular and can perform well on social media, Labombardo said.<h2 id="d914b3de-bfc0-49ae-917f-e0459ec27922">They have high expectations</h2><div type="image" title="Teenagers with food and a video camera at a cafe" height="1414" width="2120" msid="110995247" hostid="261" sizebytes="171312"></div>"This generation knows more about food than any generation in the past because of how they grew up," which includes shopping at Whole Foods and Trader Joe's and seeing food content on social media, Labombardo told BI."Gen Z is demanding and they're not going to compromise their values for taste or for convenience or anything else," Caribou's Newkirk said.

How Gen Zers dine out: From spicy food to menu hacks

"If it's an avocado toast, if it's an avocado tostada, a cheese omelet, even a poundcake with ice cream. Salsa macha can go savory, [or it] can go sweet."<h2>Guacamole is a staple on any Mexican dinner table</h2><div type="image" title="Guacamole." height="2007" width="2677" msid="104427724" hostid="261" sizebytes="172674"></div><a href="https://www.insider.com/how-to-make-guacamole-according-to-chefs-2019-3">Guacamole</a>, which needs only a few key ingredients, is a dip made with mashed avocados, and in Mexico, it accompanies everything from tacos and salsa to huevos rancheros and carne asada.Jinich always recommends guacamole as people delve into Mexican cuisine, and she points out that they can have fun with it."Guacamole is something that people can make so easily and there's so many ways to go with it, from a traditional guacamole to different kinds of guacamole with different chiles and citrus and herbs," she said.<a href="https://patijinich.com/ginger-and-pistachio-guacamole/" target="_blank" rel="noopener">One of her unique takes</a> includes ginger and pistachio. It involves mixing ginger with honey, lime juice, dried piquín, and salt before adding the mix to mashed avocado. "They can go from super easy to more complicated, like <a href="https://www.insider.com/trader-joes-birria-quick-easy-mexican-dinner-2023-9">birria</a>, where you have to make the birria ahead of time, or like this tequila-seared steak, which you make in five minutes."Her <a href="https://patijinich.com/tequila-and-lime-skirt-steak-tips/" target="_blank" rel="noopener">tequila-seared steak</a> is meant to "tuck into a taco" once it's made, before it's garnished with avocado slices or guacamole. My husband moved to Oklahoma to work in construction, and I stayed at our home in Honolulu, Hawaii, because I was pregnant at the time. My nephews and nieces are huge fans of MrBeast, whose real name is Jimmy Donaldson, and when Keith reached out to us to announce that we were the store he selected, the whole family was just amazed because we never assumed or thought that we might win the opportunity. Jimmy's team flew me, my husband, and our business manager, Andrea, out to North Carolina, where he lives, so we could film with him and Keith.
