However, the pandemic brought with it a rekindling of love for the same items most of us wanted to get away from. That said, the past year has also seen an evolution of sorts of the kind of cuisines home chefs have embraced and have to offer. No longer is it just the biriyani or butter chicken, the sheer variety available often puts the best restaurants to shame. From homemade shepherd's pie to pork belly with tingmo to creatively decorated blueberry-vanilla in American buttercream cake, the offerings are beautifully varied. The business models are diverse — from <keyword id="2067878" type="PERSON" weightage="20" keywordseo="Home-cooks">home cooks</keyword> sharing their daily menus on their residential colony WhatsApp groups to operating entirely out of social media channels like Facebook and Instagram. Then there are those who are happy to get rid of the added burden of marketing, delivery etc., all together and prefer to outsource it to companies like <keyword id="8248012" type="UNKNOWN" weightage="20" keywordseo="Homefoodi">Homefoodi</keyword> or <keyword id="10926000" type="UNKNOWN" weightage="20" keywordseo="Conosh">Conosh</keyword>. "For me, the moment you put numbers into something you love, it takes the fun out of it. I am lucky enough to be able to concentrate on the fun part of cooking while my husband helps to bring some method to this madness by taking care of everything else, for now. But given how painful the business and backend side of it can be, I would definitely be more than happy to outsource that part of the operations," says Tarannum Sehgal, whose full-time role is in a Michelin Kitchen in South of France, but she started her venture T-Pop! In Delhi to bide her time while she waits for her restaurant to open in April. Conosh, a company co-owned by three friends Anshumala, Neha and Vaibhav, is basically a conduit between home chefs and foodies. Before the pandemic hit, the primary way they would do so was by setting up pop-up kitchens in the homes of chefs, but since that was no longer possible in 2020, they tweaked their offerings to include marketing and delivery services to home chefs as well as offering workshops with master chefs like <keyword id="1426431" type="PERSON" weightage="20" keywordseo="Gary-Mehigan">Gary Mehigan</keyword>, Sashi Chelia, <keyword id="973254" type="PERSON" weightage="20" keywordseo="Ranveer-Brar">Ranveer Brar</keyword>, and <keyword id="4829" type="PERSON" weightage="20" keywordseo="Kunal-Kapur">Kunal Kapur</keyword> to home chefs who were keen on sharpening their skills. Conosh now has over 800 chefs and has delivered to over 15,000 customers in Delhi-NCR and Bengaluru. While the idea of starting a home kitchen sounds ideal, the journey is far from easy. And while there were a plethora of companies who started offering delivery services at competitive prices during the pandemic, finding a reliable vendor requires a lot of patience and multiple attempts before honing in on one. Nicole Juneja and her mum Kusuma Juneja started their venture, Mood, back in 2018. Initially, they operated purely on the takeaway model, but the pandemic forced them to change their stance and start delivering food. "While the lockdown helped us grow our business, in fact, it was our best year ever, a key challenge we faced was trying to figure out the logistics, which is primarily the deliveries. It's hard to find a reliable partner," says Juneja. <div type="image" title="Vanilla fairy cakes" msid="81494875" hostid="261" caption="&amp;lt;p&amp;gt;Vanilla fairy cakes&amp;lt;/p&amp;gt;"></div> Can't have your cake and eat it too Business Insider spoke to Anshumala, one of the co-founders of Conosh, who tells us that while the pandemic saw a surge in both home chefs and consumers, the one thing the consumers often gripe over is the price. "Diners particularly talk about the prices and they compare it to restaurant food. However, it cannot be directly compared to restaurant food for a variety of reasons. The first and the most obvious ones are obviously because these guys are working on a much smaller scale, and they're making everything fresh so they don't have the economies of scale like restaurant kitchens. Also, as an example, we have a home chef called Sumitra who specialises in Andhra Brahmin food in Bangalore and she travels to Vishakhapatnam to get some of her ingredients in order to maintain the authenticity of the food she offers. So, of course, the cost of her offering will be higher than a restaurant's." Recipe for growth — limit your orders "While the lockdown definitely helped us expand our business, increasing our scale makes you realise the limitations of a home kitchen. And you do have to set an upper limit for orders and things like that, just because there's only that much space and equipment," Juneja tells us. Along with that, there was the issue of little or no additional help in terms of staff, especially during the lockdown that made operations so much harder for home chefs. <div type="image" title="Christmas rum fruit cake" msid="81494895" hostid="261" caption="&amp;lt;p&amp;gt;Christmas rum fruit cake&amp;lt;/p&amp;gt;"></div> The not-so-palatable cost? Touching upon the point raised by Anshumala, the mere fact that home chefs operate on a smaller scale, their cost of ingredients is also much higher. Plus, what sets them apart is the fact that they use the best and most authentic ingredients that don't come cheap. "While the cost to deliver items may have reduced a notch, the material and packaging costs have also shot up, which, in turn, has led me to charge more. Plus, earlier, I used to go to wholesale markets to get the raw materials that I can no longer do thanks to the pandemic, which has impacted my costs," says Shweta Andrews, founder of Bakes Ahoy, a business specialising in artisanal and premium baked goods. Fill out a few forms before you do the filling In November 2020, the government made it mandatory for all home chefs who have a turnover of ₹12 lakh and above to have a Food Safety and Standards Authority of India (<keyword id="154680" type="COMPANY" weightage="20" keywordseo="FSSAI">FSSAI</keyword>) registration number. Failure to do so could result in a fine of ₹5 lakhs or face jail time. But while most imagined this would be a huge pain, it really isn't. All you have to do is log into the website, submit a few documents, and pay a nominal sum and within 2-4 weeks, the job is done. However, in June 2020, FSSAI launched a new cloud-based food safety compliance online platform called <a target="_blank" href="https://foscos.fssai.gov.in/" class="editor-rtfLink">Food Safety Compliance System (FoSCoS)</a>, which will eventually replace the current Food Licensing and Registration System (FLRS). "FoSCoS is conceptualised to provide one point stop for all engagement of an FBO [Food Business Operators] with the department for any regulatory compliance transaction," according to the government <a target="_blank" href="https://fssai.gov.in/upload/press_release/2020/06/5ed4be98c59aaPress_Release_FoSCoS_01_06_2020.pdf" class="editor-rtfLink">press release</a>. This system will be launched in a phased manner, and Delhi, Tamil Nadu, Gujarat, Goa, Delhi, Odisha, Manipur, Chandigarh, Puducherry and Ladakh are a part of the first phase. If you live in these states, it will be prudent to register with FoSCoS at a nominal fee of ₹100 per year even if your turnover is not as much under the 'Petty Food Business Operators' section. Feeling the heat With thousands joining the army of home chefs, the competition has multiplied, leading to everyone trying out new methods to woo clients -- from sending personalised notes to offering special Onam Sadya meal boxes with all the fixins' including a banana leaf and directions on how to arrange the food items. "Because the competition is so stiff, I continuously have to come up with new ideas and designs for cakes, which is a good thing because I learn more and improve my skills," however, Andrews adds, "now that there are thousands of home bakers in the market, I now have to put in money on Instagram and Facebook to promote myself."

The best part is that you don't need to be a swimmer to try scuba diving. The crystal blue waters are so clear that you can always opt for snorkelling if you want to skip scuba diving. There is also an excellent night kayaking expedition that takes you through the mangroves. But we must warn you that while happily cruising on well-made tar roads you may land up literally nowhere. Radhanagar beach is flanked by the ocean on one side and lush rainforest on the other. This west-facing beach is ideal for catching the sunset. You can also walk down to Neil's Cove, a secluded spot perfect for sunbathing and a spot for swimming in shallow water. <div type="image" title="Sunset at Havelock" msid="81127095" hostid="261"></div> Elephant beach may not be easy to get to, but the beauty of the place more than makes up for the effort. The beach features some bleached driftwood and logs that provide an excellent backdrop for a photo-op. This is also an ideal place to go snorkelling. Vijaynagar beach is where the buzz is. This is where most of the restaurants, hotels and snorkelling centres are situated. The beach faces east and is, therefore, a great place to catch the sunrise. The restaurants here are a seafood lovers paradise, serving up a fantastic variety of fresh red snappers, calamari, prawns, and so much more. That being said, there are plenty of vegetarian options too. Accommodation There are plenty of hotels to choose from high-end Taj Hotels to more affordable options like Wild Orchid, SilverSand Beach Resort, Munjoh Ocean Resort and Symphony Palms Beach Resort. The hotels are clean, and most are environmentally conscious. Most hotels and restaurants on the Island provide only RO water and not plastic bottles, as is sadly the norm elsewhere. And if you choose to buy water, the local stores have nothing smaller than 2-litre bottles to reduce the amount of plastic used. <div type="image" title="Bambooka, the government ferry" msid="81127801" hostid="261"></div> How to get there From Port Blair, the best way to get to Havelock is by ferry. The government ferry from Port Blair to Havelock takes around 2.5 hours but please note that the outside deck area has no seating, so you will have to bring something to place on the floor to sit on. The booking process is slightly cumbersome, but you can get a travel agent to take care of everything, which will still be cheaper than private options. MV Makruzz and Coastal Cruise are the private companies that ferry people across to the Island. They take around 1.5 hours to get to Havelock. Connectivity If you are hankering for some serious digital detox there is no better place than Havelock. There is limited to no connectivity on the island. BSNL is the only cellular service that works but the network is patchy. Hotels usually provide wi-fi access, but most are limited to the lobby area. <div type="image" title="Port Blair" msid="81127917" hostid="261"></div> PORT BLAIR While Andaman and Nicobar Islands' capital may not seem all that appealing as a tourism destination, there are plenty of places you can visit while here. There is a high probability of you spending the night there since the ferries to the islands do not operate at night. So depending on your flight timing, chances are, one way or the other you will have to stay in Port Blair. If you opt to stay in Port Blair, <keyword id="10800405" type="UNKNOWN" weightage="20" keywordseo="Chidiya-Tapu">Chidiya Tapu</keyword> (Bird Island) is an excellent place to explore. The area offers some fabulous diving spots, including Mundapahad, ideal for beginners and the old shipwreck, a site for advanced divers and home to clownfish, schooling snapper, resting ray and lots of colourful corals. If you want to give the water a break, the place is an excellent spot for birdwatching. The mangroves and rainforests here play host to a bunch of migratory birds and flowers. You can also hike to Mundapahad lighthouse. ReefWatch Marine Conservation, in collaboration with Lacadives, offers an informative mangrove walk (when the tide is out) and informs you about the surrounding ecosystem. <div type="image" title="The view from Mt. Harriet" msid="81127981" hostid="261"></div> Dr. Vasireddy decided to stay at the relatively new Big Tree Resort featuring only eight cabins, an in-house restaurant and a supremely friendly dog called Momo. Momo insists all guests should play with him and will bring you a coconut husk that you need to pry out of his mouth and throw so that he can fetch it, thus providing an excellent way to drive away the blues. <div type="image" title="Cellular Jail" msid="81128022" hostid="261"></div> Another site that may be worth a visit, especially if you are a history buff, is the colonial prison called Cellular Jail (Kālā Pānī) that is where most freedom fighters, including Veer Savarkar, were shipped off to before independence. There is an informative light show in the evening and the tour of the jail itself is quite fascinating. <div type="image" title="Limestone Caves" msid="81128047" hostid="261"></div> BARATANG MANGROVE FOREST AND LIMESTONE CAVES To experience the fascinating limestone caves and mangrove forests in <keyword id="5041058" type="LOCATION" weightage="20" keywordseo="Baratang-Island">Baratang Island</keyword>, you will have to head to the Jirkatang check post (a little over an hour-long-drive from Port Plair), which marks the beginning of the area where the Jarawa tribes of Andaman Islands live. After the clearance is done, you can drive through Jarawa reserve forest, but note that taking photos is strictly not prohibited. Once you reach the other end, you have to take a ferry to cross the water and arrive at Baratang. Here you can take a permit and board a speedboat to ride through the mangroves and arrive at a trekking spot from where you have to walk for 1.2 km through villages to reach the spectacular limestone caves. The journey may sound daunting, but this is one of the unforgettable experiences you wouldn't want to miss.  In the age of <keyword id="6368690" type="COMPANY" weightage="20" keywordseo="Mango">Mango</keyword> Salsa and Tandoori cream brulee, authentic Indian cuisine is not easy to find. Chef <keyword id="6372038" type="PERSON" weightage="20" keywordseo="Rajesh">Rajesh</keyword> believes, it’s the sudden rise in fusion food culture among the chefs that is taking a toll on the Indian ‘authentic’ taste. He explains: “You see, European cuisine or for that matter Italian cuisine, be it 30 years ago or around the globe, it would taste the same. But this isn’t applicable to Indian food. A dal that your mother makes wouldn’t match your aunt’s. You see Sambar, the regular dal in the south of India is just so varied. You travel from one town of <keyword id="20154" type="ORGANIZATION" weightage="20" keywordseo="tamil-nadu">Tamil Nadu</keyword> to another, you would easily find that the seasoning is different, so is the softness of the lentils. This means that the dal has changed its basic nature even in households. So you cannot really rely on authenticity of Indian cuisines.” 
 
“Earlier, there used to be ustaads, who would cook biriyani and other Mughlai dishes. One thing that was common amongst them was to hide their recipes. And this breed of cooks has done enough damage to the authenticity. Indian cuisine has always been a tradition that went down from generation to generation through oral communication. Now hiding the recipe could have made them famous, but took a toll on the authenticity. In that way, many dishes got lost in the past.” 
 
One way to keep Indian cuisine alive, Chef Rajesh says, is to make sure the chefs who specialize in this cuisine focus on the original ingredients. Moreover the people who eat this food need to appreciate the originality of the dishes. 
 Made in India, the Indian cuisine restaurant at Radisson Blu MBD in Noida has a selective menu. <img class="gwt-Image" src="/photo/35503389.cms" />NEW DELHI: The government is still awaiting confirmation from Pakistan on whether or not Prime Minister <keyword id="6576" type="PERSON" weightage="40" keywordseo="Nawaz-Sharif">Nawaz Sharif</keyword> is going to attend PM-designate Narendra Modi's swearing-in on Monday. Pakistan did hail Modi's initiative as a bold move. 
 Leaders of all other Saarc countries, and also Mauritius PM Navinchandra Ramgoolam, have confirmed their participation apart from Bangladesh PM Sheikh Hasina who will be in Japan on Monday. Bangladesh will be represented by its <keyword id="202736" type="POSITION" weightage="40" keywordseo="Parliament-speaker">Parliament Speaker</keyword>. The Mauritius PM was invited after a telephonic conversation with Modi.

 "The invitation is a bold and unexpected move. Mr Sharif does not share the anxiety that is felt by some quarters here in Pakistan because he has got some very fond memories of the previous BJP prime minister Atal Bihari Vajpayee coming to <keyword id="6580" type="COMPANY" weightage="40" keywordseo="Lahore">Lahore</keyword> and he hopes that this anxiety about Modi and his past will fade away," Tariq Azim, media advisor to Sharif's party PML (N), told a news channel. 
 
Pakistan's foreign ministry on Thursday said there was also the option of someone else being sent to represent Sharif, leading to speculation that Sharif's party was divided on the issue. Sources here said Sharif may also be influenced by whatever feedback he gets from Pakistan's military establishment. 
 
Sources here said Modi and Sharif, if he does come, will have their first bilateral meeting on May 27. Modi is scheduled to have bilateral meetings with all other visiting leaders the same day. 
 
The Pakistan foreign office spokesperson suggested that Islamabad may consider sending a representative for Sharif. "It is normal practice that if the head of state has a preoccupation then he can nominate someone else. There is no violation of protocol,'' she said.

 The UPA-2 government has been upset with Islamabad in the recent past for not granting non-discriminatory market access to India for furthering trade ties. Indian officials believe that the two countries could start afresh if Sharif indeed attends Modi's oath-taking ceremony.

By inviting Sharif, Modi has also put the onus on the Pakistani PM to kick off the stalled dialogue process. This is especially true in the light of assertions by Pakistani authorities that Islamabad was willing to have a meaningful, result-oriented dialogue with India under Modi but that the initiative to break the logjam had to come from Modi himself.
