He likes to take classic dishes and put his spin on them — what he calls a "remix" — making sure the texture and mouth-feel stand out.He calls his cooking style and recipes "kind of fusiony." He likes to look at different recipes and ingredients to make a new creation.Some of his favorite recipes from 2021 were creamy tomato soup with grilled cheese croutons, pecan smoked chicken avocado toast with Alabama white barbecue sauce, and salted caramel green apple Dutch baby.Inspiration for Scott's new recipes come from everything — his mood, traveling, fresh ingredients at the farmer's market, spices, and even music. And they all lead to various dishes. He sees cooking as "very fluid" and wants to inspire people to not be so rigid when making new dishes."I tell my followers this is a blueprint of what you can do with [this recipe], then you can choose your own adventure of what you want to add or subtract or switch up."When Scott makes videos of cooking, he also offers something different than standard tutorials showing prescriptive steps, and instead makes it an experience."I think people deserve more than the standard one-cup, two-cup, it's done," he said. "I'm here to entertain you as well and encompass as much as I can in cooking videos and my recipes."<h2>Get creative with ingredients</h2><div type="image" title="Sweet potato waffle with fried chicken and maple borboun sauce Scotty Scott Angel's Envy" height="3434" width="4579" msid="90003062" hostid="261"></div>Scott likes to create different recipes out of the same ingredients or make various dishes out of leftovers."You take this one ingredient and you can make it into three totally different things that can be delicious in their own right," he said.For example, a bulk portion of rice and beans can then become a red bean burger or bean hummus. Smoked duck can turn into bao buns, tacos, or gumbo. A coffee rub for beef cheek chili pasta can also go on salmon the next day."I tell people leftovers don't have to be boring, you can take what you made and make it into something totally different," he said.For Scott, the finishing touch on any meal is the sauce because it adds flavor and presentation appeal. For example, his chicken and brown butter sweet potato waffle recipe is finished with maple bourbon sauce."That kind of ties it all together," he said. "It's a little bit of sweet with the chicken and it's got heat, and it pairs well with the sweet potato."For Angel's Envy bourbon, the finishing touch is aging up to six months in a secondary ruby port wine barrel after first aging four to six years in charred new white oak barrels. Scott recommends pairing bourbon with red meat like a good steak or his polenta short rib dish.<h2>People want good dining experiences and quality ingredients</h2>Scott said people appreciate the experience of eating out more now and enjoying the signature dish the way it's supposed to be eaten, especially after takeout was the only option for much of 2020. He said people appreciate going out as a break from the mundane, and places that create an experience will do well."When you leave there, yes hopefully you were fed and it was decent, but what was the mood like? What was the feeling like?" he said. "I think that's always going to play into drawing people into different restaurants. How do they feel when they're there?"Scott also noticed that people are learning toward better quality ingredients, like heirloom grains and greens."That's been one of the cool things for me, is people taking passion in heirloom grains … to make sure you're getting the highest quality ingredients in the recipes you're creating."Another trend is pop-up and ghost kitchens with rotating menus. He said he still dresses in a way that would fit in with his rural hometown but is also inspired by his lifestyle in LA. His wardrobe has also evolved because of his profession."I'm a CEO trying to become more refined, a little more clean, and deliberate in the choices I'm making," Wojtalewicz said.Neutral, earthen, casual, and comfortable are words Wojtalewicz uses to describe his look. While brand names aren't important to him, he said he supports companies that align with his values."I do promote and care about brands who are doing good work, in terms of making products of quality and making the effort to be transparent with their supply chain and production," he said.<h2>Sustainable clothing and skincare are the future</h2><div type="image" title="Casey Wojtalewicz pouring Canyon Coffee Angel's Envy" height="3006" width="4000" msid="90087069" hostid="261"></div>Even though sustainability has always been important to Wojtalewicz, he sees this as a trend that's gaining momentum. He thinks brands that are transparent and sustainable are the future. "It's a newer development that clothing companies are speaking and showing their process more and being better about their impact," he said.One apparel brand that inspires him is Christy Dawn — a dress company that has a "farm-to-closet" collection made from a regenerative cotton farm in India. Others are Jungmaven, a high-quality hemp clothing brand, for its integrity and commitment to sustainability, and Olderbrother for its toxin-free process that uses natural dyes like tannins and indigo in its clothing.Besides buying from sustainable brands, Wojtalewicz also recommends shopping vintage, recycled, upcycled, or secondhand clothes. He likes browsing the Rose Bowl in Los Angeles or sifting through the vintage sections of boutique stores.<h2>Find trends and brands that fit who you are now</h2>For Wojtalewicz, part of evolving in his style was checking in with himself to ensure the way he dressed still aligned with him. Some brands he used to wear in his teenage years and 20s no longer serve him."It's important at different stages of your life to reassess, am I just buying this because it's what I'm used to now? Is this still what I want to project?" he said.Now that he's in a relationship, he said his partner also influences what he buys. He wants to make sure she likes it, too. And sometimes, they share clothes. He recently found a women's jacket in the vintage section of a boutique in Venice that they both wear."That's actually one trend that I've seen that I am a big fan of — unisex clothing," he said. He encourages people to have fun exploring different clothing, styles, and trends. But, at the same time, he said to only follow a trend if it works for you.<h2>Add a finishing touch to your signature style</h2>Recently, Wojtalewicz and his team at Canyon Coffee had a hand in creating limited-run merchandise for the brand. Since they're a certified organic roaster, they made sure to work with local vendors and use organic materials. For the signature Canyon Coffee hand-sewn sweatshirts, the finishing touch was hand-dying them in their own coffee.The bourbon brand Angel's Envy also experiments with flavor profiles created by hand blending small batches.
