The festival of colours is around the corner and like always, the country is ready to celebrate it in a grand way. It is the time of the year when the youngsters and old, family and friends come together to rub earthly colours on each other. But did you know? Gujarat 
Hundreds of young boys make a human pyramid and try to reach an earthen matki full of butter hung on a high rope while the girls throw water at them. This is the classic scene that you would encounter anywhere in Gujarat on the day of <keyword id="6355460" type="PERSON" weightage="100" keywordseo="Holi">Holi</keyword>. West Bengal 
Known as 'Dol Jatra' or 'Dol Purnima', the festival begins with men placing the idols of Lords Krishna and Radha in a decorated palanquin and then take it around the streets. Another beautiful ritual during Holi in West Bengal is that the head of the family keeps a fast praying for his family’s well being. After the processions and offering to the idols, the bhog or prashad is distributed amongst family and friends. 
 
Delhi 
Being the capital of India and the cultural hub, Holi is always a grand celebration for people of Delhi. Kids and youngsters form Tolis and move from one street to another, playing Holi with friends and strangers alike. Food and snacks are also a big part of the celebrations here. Goa 
The ultimate partying hub of India, Goa also has its own way of celebrating Holi, which is known as Shigmo in Goa. In the traditional Goan style, the people of Goa celebrate Shigmo with fanfare and parades, followed by applying Abeer and Neel on loved ones. Several temples in and around Panaji have special arrangements for the festival. 
 
Barsana 
It is a town in Mathura, where this festival is also known as the Lathmaar Holi and it marks the classic tug of war between men and women. Holi is a week-long celebration here and at first the men from Nandgaon, the village of Lord Krishna try to get atop the temple of Radhaji, which is in Barsana. The women of Barsana try to stop these men from entering and beat them with sticks. Don’t worry, the men are heavily padded and rarely get hurt. Next day, the men of Barsana go to Nandgaon to play Holi with the women there, who again use sticks to save themselves. This mock battle is surely a treat to watch and attracts many tourists, making it a double treat of celebration and worship. 
 The traditions might be different but the festive spirit remains the same, which is reverence to the gods and welcoming the new season. Steamed rice <keyword id="6481710" type="UNKNOWN" weightage="40" keywordseo="cake">cake</keyword> stuffed with coconut and dry fruits 
Ingredients Qty 
Rice 500 gm 
Grated coconut 80 gm 
Cashew nut 10 gm 
Pista 10 gm 
Jaggery 20 gm 
Milk 100 ml 
Sugar 100 gm 
Cardamom powder 05 gm 
 
Method 
1. In a pan melt jaggery add grated coconut, pista, cashewnut and mix till the jaggery is coated well. 
2. Soak rice for 1 hour and blend into fin paste. 
3. Boil the milk in a pan add sugar and rice paste stir until the rice starts coagulate. 
4. Remove the rice mixture from the heat ,and shape them into shallow roundel. 
5. Stuff mixture of jaggery, coconut and dry nut inside the rice cake. 
6. Steam the rice cake for 20 min. 
7. Serve hot. 
 
 
Lauki aur gulkand burfi 
Ingredients Qty 
Grated bottle gourd 250 gm 
Milk 700 ml 
Sugar 80 gm 
Khoya 80 gm 
Sunflower seeds 20 gm 
Melon seeds 10 gm 
Gulkand 30 gm 
Rose syrup 05 ml 
 
Method 
1. Boil grated bottle gourd with milk on a slow flame and cook until the milk is reduced. 
2. Add sugar, khoya, gulkand and stir the mixture on slow flame. 
3. Pour the mixture on a tray and flatten it with pallet knife. 
4. Garnish with sunflower seeds and melon seeds. 
5. Once the mixture cold and set cut into small piece and serve along with rose syrup.

Q) Tell us a bit about your recently launched campaign ‘Breakfast Se Badhkar’ and the thought behind it. As an organisation, we live by the purpose of ‘Nourishing India’s Potential’. We have demonstrated it in several ways. We recently announced our ongoing programme of offering a bowl of Kellogg’s cereal with milk to children from underprivileged sections of society as their daily breakfast. We are also on our mission to driving a behaviour change in many urban Indian consumers who skip or skimp breakfast due to lack of time. The new masterbrand campaign is our attempt to bring alive our purpose and drive this behavioural change. The film explains how breakfast is the morning hero to help children achieve their best that day and every day. It’s even truer with today's generation whose lives are only getting busier, they understand what’s good for them and are ready to look for it and consume it. These flavours have received tremendous response from the consumers and its success is not a surprise to us since our earlier range of Kellogg's Corn Flakes with Badam and Honey flavours have work equally well in the past. Q) India is a tough market for a category like cereals, owing to the presence of Indian ghar ka khaana. How are you helping bring about a behavioural change in consumers? In a country like India with such diverse food habits, any food player including a breakfast company like ours, there are people who have the time to prepare and eat home-cooked hot meals in the morning and then there is an audience which is nutrition-seeking but time-starved. Our mission is to understand that segment of audience and partner them in providing them with a convenient and nutritious solution. And breakfast is not just important for one set of people, it’s important for any one to start their day right and achieve what they set out for that day. Q) K was a great innovation. How has the uptake been over the years? Are you planning some innovations in the product? All innovations from the house of Kellogg's are meant to solve a unique problem for a consumer. We have had multiple launches of products in different format and price points in the past couple of years. The recent launch of Kellogg’s Chocos fills, a crunchy cereal snack made with a delicious chocolaty filling and with the goodness of three nourishing grains – rice, oats and wheat has received a very good response. In fact, Kellogg’s Chocos fills was recognised as one of the breakthrough innovations in the FMCG space in 2019 by Nielsen. The ‘Real Range’ of Kellogg's Corn Flakes with three traditional flavours - Thandai Badam, Kesar Pista Badam and Rose Badam is another example of how consumer insights were used by us to carry out innovation. We added granola with almonds and cranberries to our portfolio in 2018. Over the past one and a half years, people have become more and more conscious about where their products come from, the kind of ingredients that are being used, how closely brands are working with local communities and help benefit them and how serious they are about helping the environment. According to findings of Mintel’s recent ‘Attitudes towards Localism –Indian Consumer – 2021’ reports, consumers have been showing heightened interest in local products due to COVID-19. And no, it is not just Gen Z’s who are giving this trend a push. The pandemic led consumers across all age groups to lean towards traditions in foods, beauty regimes or health and wellness. The study, which took into account opinions of 3000 people across the country states that 39% of people aged 35-44+ expect brands to offer traditional ingredients in packaged formats. The pandemic has heightened concerns around product quality, and 48% of men aged 35+ look for products which offer transparency about use of local ingredients. The study also reveals that there is an increasing affinity for brands that give back to the society and are trying to support communities as 46% of 35-44 year old women are keen on products that support social causes. Moreover, around 45% of Indians switched to buying locally-grown produce since the pandemic, a trend highest among women aged 35-44 (58%). This same group of women also led the switch to buying more organic products. The report suggests that this is an opportunity for local brands to talk about their sustainability efforts by calling out how they source their products and how this impacts the environment. Speaking about some of the key factors that have led to people leaning towards localism, <keyword id="3056481" type="PERSON" weightage="20" keywordseo="Nidhi-Sinha">Nidhi Sinha</keyword>, Head of Content, Mintel Indian Consumer said, “The pandemic paved the way for local products to come to the fore. With challenges in the supply chain coupled with the need for familiarity, consumers increasingly took to local products. With the health halo at its pinnacle, people were inherently looking to increase their immunity, improve their health and also deal with mental health issues. The answer to these was in the usage of traditional, ayurvedic ingredients like giloy, ashwagandha and so on. “Another sentiment which led to consumers leaning to the localism pillar is the fact that these products help local communities. As people struggled to meet ends due to the imposed lockdown restrictions, consumption of local produce helped consumers to pass on benefits to local artisans, farmers and communities. 34% of consumers prefer products that support local communities. Technology enabled small time local setups to reach consumers. Usage of apps like WhatsApp, Instagram and Facebook helped connect consumers to producers thus making concepts like farm-to-fork easy to take to.” The need for comfort and familiarity has been one of the biggest factors in this trend. “With 37% of consumers looking for products that are aligned to local culture, consumers have been seeking familiarity and comfort especially in these tough times. The launch of products like thandai from paper boat and ubtan from Mama Earth are proof of how consumers look for familiarity in line with a global consumer trend of Culturally Connected,” shared Sinha. While Indians have been increasingly focusing on health for the past few years, the pandemic just gave this trend the right push. “Around 43% of consumers today expect products to have ingredients which provide added benefits. Also, the affinity towards online shopping as well as better last-mile-delivery means that traditional setups can reach consumers, thus, making local products easy to use,” added Sinha. <keyword id="9450009" type="PERSON" weightage="20" keywordseo="wow-skin-science">WOW Skin Science</keyword> is a brand that has witnessed good growth in the past few years. A lot of its growth has come on the back of its usage of natural ingredients in its products. It has also been actively working on making its products and packaging more eco-friendly. On whether its focus on local ingredients has helped it attract consumers, <keyword id="4759349" type="PERSON" weightage="20" keywordseo="manish-chowdhary">Manish Chowdhary</keyword>, Co founder, WOW Skin Science said, “There has been a greater preference for natural plant-based local products in recent times. Using high-quality local ingredients has been one of the factors responsible for our growth. Our product formulations are nature-inspired, science-backed and safety-tested, sourcing the best ingredients to create effective products that are also affordable. We’re completely transparent about the ingredients that go into our products and we stay true to our claim of being paraben, sulphate and silicone-free.” Just 7-years-old, this year, the brand aims to achieve revenues of around Rs 800 crore.
