We tried 2 easy pasta recipes from celebrity chefs, and they're both perfect for summer

Nosrat's <keyword id="52676" type="ORGANIZATION" weightage="60" keywordseo="recipe">recipe</keyword> was included in production notes shared with Insider by the "Waffles + Mochi" team.</p><h2>The recipe requires just a few simple ingredients and is very customizable</h2><p>I went into the store with a short list of only six ingredients. Nosrat's recipe calls for short pasta (any kind), fresh basil, cherry tomatoes, cheese for grating, and sugar. </p><p>Staring at the vast array of pasta varieties on the shelf, I went with farfalle - a personal favorite of mine that always brings me back to my childhood.</p><p>I also chose to stick with Nosrat's recommendation of Parmigiano Reggiano for the cheese, although her recipe gives <a href="https://www.insider.com/category/home-cooking">home cooks</a> the go-ahead to choose another like Asiago, Pecorino Romano, ricotta salata, feta, or ricotta. </p><div type="image" title="Waffles_and_Mochi_pasta 7" height="1875" width="2500" msid="81605907" hostid="261"></div><h2>Give yourself enough time to roast the tomatoes - it's worth it</h2><p>I made the mistake of reading the recipe as I cooked it instead of reading it through before starting. To my surprise, Nosrat's method requires <em>five hours</em> to turn the tomatoes into "candy." </p><p>Since I started cooking at 3 p.m., what I thought would be a late lunch turned into a very late dinner. But despite the long cooking time, the actual process is incredibly simple. After tossing the tomatoes in olive oil, salt, and sugar, I just popped them into the oven and said goodbye until 8 p.m.</p><p>When they were finally done, I was reminded that patience really does pay off. The tomatoes were somewhat bitter and acidic, and they made the glands in the back of my jaw tingle. They're sticky in some places and bursting with juice in others. </p><p>While I enjoyed them all, I think I should have pulled some out sooner than others - some shriveled to the point of drying out and lost their delightful zing.  The dry tomatoes were mostly bitter while the others had a sweetness that came through in the soft bits. </p><p>The perfectly candied cherries had the flavor of sun-dried tomatoes, but the texture of roasted ones. </p><div type="image" title="tomatoes" height="1500" width="2000" msid="81605909" hostid="261"></div><h2>Nosrat's quick pasta dish has perfectly balanced flavors</h2><p>Once the tomatoes are cooked, the rest of the preparation is seamless - and fast. </p><p>I cooked the pasta in extremely salty water (I put a little more than one tablespoon in my quart-sized pot) as per Nosrat's instructions, grated a <em>lot</em> of cheese, and tore up a bunch of fresh basil leaves. </p><p>Nosrat recommends mixing the cheese, tomatoes, and olive oil into the pasta before adding in the basil. I found that this helps keep the herb fresh rather than wilting under the heat of the just-cooked pasta. </p><p>I first added more cheese than I would have thought I needed (use your judgment, people!) and still I had to add more. I had only briefly drained my pasta so that there was still a tiny bit of the starchy cooking water left when I dumped it into a bowl. This helped the cheese adhere to all the nooks and crannies of each bow-tie noodle. It was beautiful.</p><p>I took my first bite immediately after folding in the torn basil leaves. It was fresh, bright, light, and perfectly salty. The <a href="https://www.insider.com/microplane-grater-cheap-must-have-kitchen-tool-amateur-home-cooks">feather-like shavings</a> of cheese didn't weigh this dish down the same way melted mozzarella does. Bursts of intense flavor from the tomatoes were balanced beautifully by the freshness and fragrance of the basil leaves.</p><div type="image" title="final pasta" height="1500" width="2000" msid="81605910" hostid="261"></div><h2>This dish is also great for meal-prepping - as is the tomato candy</h2><p>If you're going to batch-prepare this meal, I recommend leaving basil out until you're ready to serve each portion.</p><p>I'd also recommend making a large batch of tomato candy, regardless of how many pasta servings you're cooking up. </p><p>To preserve the tomato candy, Nosrat recommends putting them into a jar and covering with olive oil - that way, she says, they'll stay good in the refrigerator for up to six weeks. The freezer is also an option: Freeze the candy first in a single layer on a baking sheet, transfer to a freezer bag once frozen, and it'll keep for up to six months. </p><p>And the tomato candy is perfect for adding to more than just this one pasta dish. I'll definitely be adding these to salads, chicken dishes, and even hors d'oeuvre boards from now on.</p>

But I did <strong>one cup of rice</strong> — and I used a sushi type rice or a short-grain type rice, you could also use jasmine rice — and <strong>eight cups of liquid</strong>. I used stock because I had it but you could also use water or a combination of water and stock. And I added <strong>a splash of fish sauce</strong>, maybe about <strong>two inches of peeled sliced ginger</strong>, and <strong>four garlic cloves that were peeled</strong>. And some <strong>salt</strong>. I simmered that for about three hours stirring it occasionally until it was like this incredibly velvety texture and the rice had totally fallen apart. And then I ate that with a variety of toppings over the next course of meals.&#xa0;</section></blockquote><p>"It's so comforting and filling and delicious," she said.</p><p>One of her favorite toppings for the congee is a condiment called chile crisp made with garlic, onions, chiles, and oil. Nosrat said she uses that as a topping almost every time she eats the porridge.</p><p>For a savory lunch or dinner, you can follow her lead and add toasted peanuts for a yummy crunch along with some chopped cilantro. For breakfast, she topped her bowl with a poached egg. </p><p>"I didn't have chicken, but if I had a little piece of chicken or a little piece of tofu I might put that on top," she added. Nosrat said that a great side dish option is a pile of boiled vegetables, like broccoli or asparagus. "But if I didn't have that I would ... even just reheat some frozen vegetables and put them on top," she laughed.</p><p>Nosrat told Insider that she has been driven to cook, but she hasn't really had much of an appetite while in quarantine.</p><p>"I haven't found myself to be very hungry to be totally honest, which is ... a departure from my normal self," she said. "So usually I'll just eat like two bowls of congee in a day and call it a day — and an apple or cucumber or something."</p><p><div type="image" title="hh and samin" height="1250" width="1667" msid="75184763" hostid="261"></div></p><p>Nosrat is now the host of a podcast called "Home Cooking" with her friend Hrishikesh Hirway. Costco's olive oil is celebrated by experts and Netflix-famous celebrity chef Samin Nosrat - and it is a fantastic deal

<ul class="summary-list"><li>There's a good chance you're not using <keyword id="6355506" type="UNKNOWN" weightage="60" keywordseo="salt" source="Orion">salt</keyword> properly when seasoning your <keyword id="11894142" type="UNKNOWN" weightage="100" keywordseo="food" source="Orion">food</keyword>.</li><li>Salt should be added throughout the <keyword id="11910989" type="UNKNOWN" weightage="60" keywordseo="cooking" source="Orion">cooking</keyword> process and there are different kinds of saltiness.</li></ul><p>Time for a bitter culinary truth: That single pinch of salt you add to your meals when they're nearly done cooking is <a href="https://www.insider.com/former-white-house-chef-andre-rush-cooking-hacks-mistakes-2021-8">doing nothing to upgrade the flavors of your dish</a>.</p><p>In fact, you might as well have waved those crystals over the top of the pan, using only the power of thought to season your food. </p><p>I learned this lesson while working as a galley assistant on a <a href="https://bessie-ellen.com/">charter boat</a> in my teens, during which the head cook would always sample what I'd cooked. The first time, she stood me aside, seized what seemed like an ocean's worth of salt, and threw it in the pot. I was shocked. But she never had to do it again because that fistful made every ingredient sing and dance across my brain like a pig in stilettos.</p><p>My initiation into Salt Club was complete and I've never under-seasoned a dish since. </p><p>This anecdote highlights the second rule of Salt Club: Use enough salt in the first place, which is probably more than you think.</p><p>But there are <a href="https://www.insider.com/biggest-mistakes-people-make-on-cooking-shows-according-to-judges">other mistakes to keep in mind when it comes to seasoning</a>, too. </p><h2>Adding salt is a process, not a final touch </h2><p>"You have to understand that salting isn't just about adding a pinch of Maldon here and there," said <keyword id="11898849" type="UNKNOWN" weightage="60" keywordseo="chef" source="Orion">chef</keyword> and restaurateur Simon Couth, whose career started in the 1980s at the <a href="https://en.wikipedia.org/wiki/Fairmont_Le_Montreux_Palace">Montreux Palace Hotel</a> on Lake Geneva, Switzerland. </p><p>"You have to think about salt and what it does to each part of the meal. It's about seasoning from the outset. When I was cooking classical French cuisine, my mentors would be angry if our <a href="https://www.insider.com/what-pasta-sauce-is-good-2018-2">sauces weren't seasoned from the start</a> — they could taste it immediately."</p><div type="image" title="A bowl of spaghetti with a fork in it" height="780" width="1040" msid="89003452" hostid="261"></div><p>The next lesson, then, is about <a href="https://www.insider.com/famous-cooking-show-judges-share-their-best-cooking-advice">tasting and adjusting after the addition of each ingredient</a>, rather than following a recipe down to the last comma splice.</p><p>For example, if you're making anything that involves onions, leeks, or shallots, then you should sprinkle them with salt as they cook, which helps extract moisture faster and gives a more even browning. </p><p>Taste and adjust after adding wine or tomatoes and after arguing with your partner about whether toast or crumpets are the better vehicle for butter. Once everything is added, taste and season your dish periodically as its character changes over time.</p><div type="image" title="The author tasting food on a spoon" height="2597" width="3463" msid="89003454" hostid="261"></div><p>Of course, the amount of salt you'll want is down to personal preference — something Couth said he had to grapple with after leaving a professional kitchen where the salinity of each dish was predetermined by the palate of the head chef.</p><p>"Recipes which specify exact qualities of salt are about someone else's taste rather than your own," he said. "When you're cooking for yourself, getting the confidence up to know what you like is very important." </p><p>Part of building up that confidence forms the third lesson ...</p><h2>There are different kinds of saltiness you can work with</h2><p>Samin Nosrat's <a href="https://www.saltfatacidheat.com/">phenomenal book "Salt, Fat, Acid, Heat</a>" explores this idea in breathtaking detail. </p><p>In a nutshell, Nosrat emphasizes that it's worth thinking about what sort of saltiness you're after — <a href="https://www.insider.com/best-and-worst-meals-to-make-with-ground-beef-recipes">meaty</a>, smoky, light, vegetal —  and use saline ingredients such as soy sauce, hard cheeses, and cured meats to add nuance to a dish. </p><p>If you're nervous about this, I recommend you start by breaking up a few canned anchovies with your onions when making a ragu. You won't notice any explicit fishiness, just a background depth you won't get from salt alone. </p><div type="image" title="The author grating cheese" height="2604" width="3464" msid="89003456" hostid="261"></div><h2>Carbs should be salted way more than you think</h2><p>Rule four is all about those carbs. </p><p>You should use "cupfuls" of table salt <a href="https://www.insider.com/best-and-worst-foods-to-make-with-boxed-pasta">to season large quantities of pasta water</a>, said Couth. </p><p>Salting water for pasta, gnocchi, potatoes, and other grains enables the carbohydrate to be seasoned from the inside out as it absorbs the cooking water. Then, she rolls out the dough and tops it with cinnamon and brown sugar. </p><p>Lee told Insider in an email that she recommends home bakers "slather the dough completely in room-softened butter before putting on the cinnamon and brown sugar." </p><p>After cutting and arranging the rolls into pans, she tops each with a dollop of butter.</p><p>"It's a lot of butter," Lee says in the video. "But it's not like you're really counting calories with this recipe, are ya?" </p><p><div type="image" title="cinnabon icing zoe miller" height="1333" width="1777" msid="75457536" hostid="261"></div></p><p>There's more butter in the icing too. Lee said there are several different ways to make the Cinnabon-inspired icing, but that "every way starts off with butter." </p><p>For the version she made in the video, she combined butter with cream cheese, powdered sugar, vanilla extract, and heavy whipping cream. She also added more cinnamon, to boot. </p><p>Lee said the key to getting the icing melty — as it is at any Cinnabon stand — is topping the bun while it's still warm.</p><p>"Wow, these are good," Lee said in the video after biting into the finished product. Clearly, the budget retailer's public relations team deserves a raise.</p><p>However, Costco doesn't have a PR team at all. We've got to have that type of an attitude." </p><p>Amazon <a href="https://ir.aboutamazon.com/static-files/917130c5-e6bf-4790-a7bc-cc43ac7fb30a">spent</a> $6.3 billion in advertising and other promotions in 2017. Target <a href="https://corporate.target.com/annual-reports/pdf-viewer-2017?cover=30827&amp;parts=30829-30830">spent</a> $1.4 billion. Walmart <a href="https://stock.walmart.com/investors/financial-information/annual-reports-and-proxies/default.aspx">spent</a> $3.1 billion on advertising in 2018, up from $2.9 billion in 2017.</p><p>Costco saves <a href="https://www.nytimes.com/2005/07/17/business/yourmoney/how-costco-became-the-antiwalmart.html">an estimated 2%</a> a year in costs by not advertising, allowing the company to reinvest that money in slashing prices. This strategy has allowed Costco to keep prices extremely low, often undercutting the competition.</p><p>"We recognize and appreciate that members of the media are interested in Costco, its products and its merchandising philosophy," Costco said in a statement to Business Insider. "However, the company's successful business model is based on maintaining a lean operation. As a result, departments such as Public Relations and Advertising do not exist at Costco." </p><p>This "lean" operation is obvious to any reporter trying to get in touch with Costco.</p><p>Costco has reporters fill out a Google Doc, warning them that they likely will not receive a response for up to 48 hours. Supermarkets mark up prices by 30% on average, and Home Depot and Lowe's boost prices by an average of 35%.</span></p><p>Despite refusing to pay for advertising, Costco isn't stingy in other areas. The company is known for paying workers more than rival retailers, recently <a href="https://www.businessinsider.com/costco-raises-minimum-wage-war-for-talent-2019-3">raising its minimum wages</a> from $14 and $14.50 up to $15 and $15.50. Last night, she posted a step-by-step tutorial of how to make pasta with spicy vodka sauce <a href="https://www.instagram.com/gigihadid/?hl=en">to her Instagram story</a>. </p><p>While her mother <a href="https://www.insider.com/category/yolanda-hadid">Yolanda Hadid</a> has been <a href="https://www.insider.com/hadid-family-net-worth-life-fame-modeling-2019-5">known for her cooking and valuing time at the family dinner table</a> since her days on "Real Housewives of Beverly Hills," it seems her daughter has taken on the same love for being in the kitchen. </p><p><div type="image" title="gigi screen shots vodka sauce" height="1500" width="1700" msid="75477910" hostid="261"></div></p><p>Gigi's recipe calls for garlic, a shallot, tomato paste, heavy cream, red pepper flakes, butter, vodka, Parmesan cheese, and basil for garnish. </p><p>Her story takes followers through each step, showing them when to add the vodka and the butter to the pan and how much starchy water they should save for combining the cooked pasta with the sauce.</p><p>The sauce starts with caramelizing one clove of garlic, 1/4 of a shallot, and a 1/4 cup of tomato paste. Gigi says to add 1 tablespoon of vodka — cooking it until it's nearly evaporated — just after the caramelizing and just before adding the 1/2 cup of heavy cream and red pepper flakes. Later on, for the cooked pasta, she says to stir it into the sauce along with 1/4 cup of pasta water and 1 tablespoon of butter. Last but not least, combine 1/4 cup of Parmesan cheese into the saucy pasta.</p><p><div type="image" title="gigi screen shots vodka pasta" height="1500" width="1700" msid="75477913" hostid="261"></div></p><p>Although it might be tough to get your hands on everything you see on a list of ingredients, especially if you're limiting visits to the grocery store, the supermodel shared some <a href="https://www.insider.com/baker-approved-swaps-for-buttermilk-vegetable-oil-eggs-flour-sugar-2020-4">substitutions</a> that she made for this dinner.</p><p>She wrote that she didn't have vodka, so she simply left it out. Instead of a shallot, she used a smaller amount of red onion. But you won't need all that to make a similar cake at home.</p><p><a href="https://www.instagram.com/violetcakeslondon/">Violet owner Claire Ptak</a> told Insider she plans to share a recipe for an at-home version of the cake in an upcoming cookbook.</p><p>Until then, however, she has shared her lemon drizzle loaf recipe from her 2015 book <a href="https://www.amazon.com/Violet-Bakery-Cookbook-Claire-Ptak/dp/1607746719">The Violet Bakery Cookbook</a> with Insider — along with an easy hack to make it taste more like Markle and Harry's cake.</p><p>Ptak told Insider that home bakers can get the flavors of the royal wedding cake from the lemony loaf cake simply by swapping out half the lemon juice in the icing and drizzle for elderflower syrup. She even started selling it that way at Violet.</p><p>"It's super popular," she told Insider of the lemon loaf. "It has a lot of the same components as the [royal wedding] cake. I mean, it's definitely different, but it's this really lemony cake and what we do at the shop now is instead of making the icing with lemon juice we make it with elderflower syrup. Just to give people on a regular day a hint of that flavor that we made for Meghan and Harry."</p><p><div type="image" title="Lemon Drizzle Cake Claire Ptak" height="1334" width="1778" msid="75336698" hostid="261"></div></p><p>Ptak said she's been making this cake — sans elderflower — with her daughter Frances while in quarantine.</p><p>"With kids, it's like the fastest thing possible," she said, adding that she prefers to bake quick desserts while in quarantine rather than ones with longer lead times like two-day doughnuts. </p><p>While her bakery is closed, Ptak has been sharing some of her recipes, including <a href="https://www.insider.com/meghan-markle-prince-harry-wedding-baker-chocolate-chip-cookies-recipe-2020-4">her chocolate chip cookie recipe</a>, on social media, and said she loves to see people sharing their versions of her treats in their own kitchens.</p><p>Here's her recipe:</p><h2>Lemon Drizzle Loaf from <a href="https://www.amazon.com/Violet-Bakery-Cookbook-Claire-Ptak/dp/1607746719">The Violet Bakery Cookbook</a></h2><p><em>This recipe, which comes directly from Ptak and her team, makes one 10-inch-by-4-inch loaf cake, which cuts into eight slices. Ptak's suggestion is to replace half the lemon juice in the drizzle and icing with elderflower syrup for that royal touch.</em></p><blockquote class="blockquote"><section class="blockquote-wrapper"><h2>Ingredients</h2><p><strong>For the sponge:</strong><br />1 ⅛ cups (265 grams) unsalted butter, very soft<br />1 ⅓ cups (265 grams) granulated sugar<br />Zest of 3 to 4 lemons (save for the juice)<br />3 eggs<br />2 ⅛ cups (265 grams) plain flour<br />1 ½ tsp baking powder<br />¼ tsp salt<br />⅜ cup (100 grams) milk</p><p><strong>For the drizzle:</strong><br />1 tbsp sugar<br />1 tbsp water<br />2 tbsp fresh lemon juice&#xa0;</p><p><strong>For the icing:</strong><br />1 cup (250 grams) icing sugar<br />2 tbsp lemon juice&#xa0;</p><h2>Method</h2><p>Heat your oven to 350 F (or 325 F with the fan oven). Butter a 10-inch-by-4-inch loaf tin and line the base and sides with parchment paper, extending the paper about 2 inches above the top of the tin.</p><p>First, make the sponge. In the bowl of an electric mixer cream the butter and sugar well but not as fluffy as you would for a layer cake. Zest the lemons into the butter mixture and mix thoroughly.</p><p>Beat in the eggs one at a time, making sure each one is thoroughly mixed in before adding the next.</p><p>In a large bowl, whisk together the flour, baking powder, and salt.</p><p>Mix half of this into the creamed butter mixture, scraping down the sides, until barely combined.</p><p>While the mixer is still going, beat in all the milk. Then add the remaining flour and mix until just combined. Scrape the bowl and give it one last mix.</p><p>Scoop the mixture into the prepared tin and smooth the top with a palette knife or spatula.</p><p>Bake for 50 to 60 minutes, until the top of the cake is springy and a skewer inserted comes out clean.</p><p>To make the lemon drizzle, combine the sugar, water, and lemon juice in a small pan and heat just until the sugar is melted. Do not let this boil or the fresh flavor is lost.</p><p>Use a skewer to poke holes evenly throughout the baked loaf. Pour over the lemon syrup and let it soak in whilst you make the icing.</p><p>In a small bowl, whisk together the icing sugar and the lemon juice until smooth.</p><p>To remove the loaf cake from the tin, run a small paring knife along the sides of the tin and then tilt the tin on its side and coax the loaf out, using the baking paper as a handle. Remove the paper and turn the loaf upright on your cooling rack or worktop. Drizzle over the icing and let it drip down the sides. Use a spatula or cake or tart tin base to lift the loaf onto a serving dish. Meghan Markle and Prince Harry's wedding baker has an easy hack for her lemon loaf recipe to make it taste like the royal cake

<ul class="summary-list"><li>With <keyword id="21474" type="COUNTRY" weightage="60" keywordseo="Italy">Italy</keyword> loosening its lockdown restrictions, and <keyword id="34615" type="ORGANIZATION" weightage="60" keywordseo="restaurants">restaurants</keyword> potentially opening by June 1, a few eateries are experimenting with plexiglass barriers to help people keep apart.</li><li>Some restaurants in <keyword id="6384167" type="LOCATION" weightage="60" keywordseo="taipei">Taipei</keyword> and <keyword id="24349" type="COMPANY" weightage="60" keywordseo="Hong-Kong">Hong Kong</keyword> appear to already be using barriers like these.</li><li>However, some restaurateurs think plexiglass panels would ruin the ambiance and keep people out of their dining rooms.</li><li>As restaurants in parts of the US start to reopen, they're also trying to figure out the best safety measures to take.</li><li>One <keyword id="15710" type="ENTERTAINMENT" weightage="60" keywordseo="texas">Texas</keyword> restaurant is using plexiglass barriers, while other parts of the country are thinking about how to maximize outdoor space to create distance between diners.</li><li><a href="https://www.insider.com/?hprecirc-bullet">Visit Insider's homepage for more stories</a>.</li></ul><p>With the rules of Italy's nationwide lockdown <a href="https://www.businessinsider.com/italy-ends-coronavirus-lockdown-with-temperature-screening-robots-2020-5">beginning to relax</a>, restaurants across the country are gearing up for the possible reopening of their dining rooms on June 1, and trying to figure out how they'll keep their customers and employees safe.</p><p>Some restaurants are testing plexiglass barriers on and around tables designed to help patrons keep their distance from others.</p><p><div type="image" title="italy restaurant plexiglass" height="1334" width="1778" msid="75768527" hostid="261"></div></p><h2>Italy's restaurant owners have been demonstrating how they see translucent barriers working in their dining rooms</h2><p>Dario and Neri Goga, owners of Goga Café pictured above, hosted a demonstration for media on how they plan to construct barriers in their Milan restaurant.</p><p>Visible from the photo, plexiglass runs along and extends past the edges of the long side of each table. Some tables also appear to have sheets of the glass cutting between the two diners sharing the table.  </p><p>Brothers Andrea and Valerio Calderoni, owners of Ristorante Il Ciak in Rome, showed their take on the safety measures by installing one sheet of plexiglass between two diners and another in the aisle. Restaurant designer <a href="https://seandix.com/">Sean Dix</a> shared photos of the panels in Yardbird's dining room, now open for business, on Twitter.</p><blockquote class="twitter-tweet blockquote" data-lang="en" data-cards="" data-conversation="">—sean dix  (@seandixdesign) <a href="https://twitter.com/mims/statuses/1251091410805092352?ref_src=twsrc%5Etfw">April 17, 2020</a></blockquote><p>Another Twitter user shared photos of a Starbucks coffee shop in Taipei that had barriers set up on a long, communal table. </p><blockquote class="twitter-tweet blockquote" data-lang="en" data-cards="" data-conversation="">—Nicolas  (@nicolexandre) <a href="https://twitter.com/mims/statuses/1252215358385242112?ref_src=twsrc%5Etfw">April 20, 2020</a></blockquote><h2>In the US, one Texas restaurant owner says plexiglass barriers have gone over well with customers so far</h2><p>As of May 1, restaurants in Texas are <a href="https://www.businessinsider.com/texas-is-reopening-stores-and-restaurants-as-coronavirus-death-rises-2020-4">allowed to reopen at 25% capacity</a> with tables set six feet apart from one another. </p><p>Arnaldo Richards, executive chef and owner of Arnaldo Richards' Picos Restaurant in Houston, installed plexiglass barriers along the bar inside his Mexican restaurant. </p><p>"Our customers feel comfortable being in this, basically what I would call a plexiglass cubicle," Richards told Insider.</p><p><div type="image" title="Arnaldo Richards'" height="750" width="1000" msid="75768530" hostid="261"></div></p><p>The plexiglass between customers and bartenders is permanent, while the pieces between customers can be removed in the case of a couple or friends coming to dine together.</p><p>Richards said his main motive for installing the barriers was to protect his "employees first and then, of course, the customers."</p><p>"They love it," Richards said of his customers' opinions on the barriers. "When they come in and they see the bar they go, 'Wow!'"</p><p>On Mother's Day, the restaurant hosted its regular holiday brunch buffet. But this time, instead of self-service, customers waited on one side of a plexiglass barrier while employees stood on the other, loading plates with whatever customers wanted. </p><p>Richards told Insider that he has a prototype of a foldable screen that he hopes to be able to use when his restaurant is allowed to open up at 50% capacity; that way, Richards said, customers would be able to request that a screen be placed between their table and the tables around them if they want. </p><p><div type="image" title="sbs arnaldo richards" height="1500" width="2000" msid="75768532" hostid="261"></div></p><h2>But some restaurateurs don't like the idea of separating diners with barriers, and think keeping tables further apart is a better alternative</h2><p>David D'Antonio, executive chef at <a href="http://www.ristoranteangelina.com/en/">Angelina a Testaccio Restaurant</a> in Rome, told Insider via email that he hopes these barriers don't become a requirement for restaurants in Italy.</p><p>"I think they can leave more space between tables and that is it," he said, adding that he doesn't find it necessary to "put any kind of barrier between people who choose to spend time together."</p><p>D'Antonio continued: "Can you imagine that in a restaurant?" He said that he doesn't see any reason why people would pay to sit in a restaurant if there is a barrier between them and the person they're dining with. </p><p><div type="image" title="italy restaurant plexiglass" height="1334" width="1779" msid="75768534" hostid="261"></div></p><p>Gian Luca Giovanetti, executive chef and owner of Gnocco in Manhattan's East Village, agrees with D'Antonio. </p><p>"I don't see that as a remedy," he told Insider. </p><p>Giovanetti explained that having plexiglass on a table during lunchtime when people may be having informal business meetings may become acceptable. But, he said, having barriers up during evening service while people are trying to share an intimate meal would be a huge problem. He told Insider that he thinks it would actually discourage people from dining out.</p><p>The East Village restaurateur said that he's been thinking about possible solutions since the day he had to close his restaurants down.</p><p>"Of course, I think about that every day," Giovanetti said. "Now we are totally closed. I have a pretty large restaurant and I see all these empty seats." (<a href="http://www.gnocco.com/delivery">Gnocco is open for delivery</a> via its own, in-house delivery service.) </p><p>Giovanetti thought back to March when restaurants in New York City were told to operate at 50% capacity. </p><p>"Fifty percent capacity doesn't say anything," he said. "That's the most stupid thing that someone can say. It doesn't make any sense!"</p><p>The Gnocco owner went on to explain how being given a precise measurement between chairs or tables would be more effective than a capacity percentage: "I have three rooms [at Gnocco] for example, so should I close one room and stuff all the tables and chairs in the other room? [That guideline] leaves [room] for some crazy scenarios. I have a nice garden and I want to keep [all customers] there; shall I put everybody in the garden?"</p><p><div type="image" title="NYT Food Festival" height="1333" width="1777" msid="75768537" hostid="261"></div></p><h2>Restaurants in other parts of the US are thinking about alternative solutions, including shutting down streets to make room for outdoor dining</h2><p><a href="https://www.nytimes.com/2020/04/26/dining/restaurants-open-coronavirus.html">The New York Times reported</a> that there is a laundry list of protocols being brainstormed, guidebooks being written, and safety measures being strategized throughout the US as restaurants begin to open in states including Georgia and Alaska.</p><p>The Food and Society Program at the Aspen Institute is working with the James Beard Foundation to come up with an effective set of guidelines for restaurants.</p><p>Ryan Pernice, a Georgia restaurateur, told The Times that he's considering serving customers on his restaurant's patio "picnic-style." </p><p>"There just isn't a map for this," Pernice said. "You have to make the best decisions with the terrain that's in front of you." </p><p>Restaurants and local officials in Berkeley, California, are working together to come up with a different solution.</p><p><a href="https://sf.eater.com/2020/5/14/21258980/berkeley-coronavirus-covid-19-jesse-arreguin-street-closures">Eater San Francisco reported</a> that Berkeley is planning to completely shut down streets so that restaurants can move their dining rooms outside to have more space for social distancing.</p><p>While it's hard to know exactly how dining out will change, restaurants all over the world are trying to find their footing.</p><p>Some in Amsterdam have <a href="https://www.insider.com/amsterdam-restaurant-mini-greenhouses-cubicles-social-distance-2020-5">created outdoor seating houses</a> for small parties, while <a href="https://www.insider.com/restaurants-opening-hong-kong-china-taiwan-south-korea-photos-2020-4">restaurants in China and Taiwan</a> — in addition to making use of barriers — are employing temperature checks, sanitization measures, and blocking off tables.
