<p>Marc and Greg Sherry are the brothers behind Old Homestead, one of NYC's most beloved steakhouses.</p>
<p>The restaurant is known for being one of the city's oldest, having started out as The Tidewater Trading Post in 1868. It's also known for having the most expensive cut of meat in town, a $350 piece of Wagyu beef from Kobe, Japan.</p>
<p>"We wanted to find a <keyword id="133282" type="UNKNOWN" weightage="60" keywordseo="Steak">steak</keyword> that took it to the next level," said Marc. "We flew to Japan, tasted it, and absolutely flipped."</p>
<p>That was 1991. To get that amazing steak to the States, Marc and Greg had to work with the Japanese and American governments to ensure that the meat was up to U.S. health code.</p>
<p>After that, the Wagyu sold itself.</p>

It just can't be.</p>

<p>Now here's what's wrong with it. (I'm going to try to have a rational debate about something as deeply sensory and emotional as steak, so stay with me here.)</p>
<p>First thing is first - BLT Steak is a great steakhouse. Chef Laurent Tourondel has done great things in this city we love. But that restaurant opened in 2004. If it were a human being it would not be able to drive, vote, or consume alcohol. It may not have even hit puberty.</p>
<p>It should not be on the same "old school" list as Keens Steakhouse, which has been around this town in one form or another since 1885 (1885!!!), or <a href="http://www.businessinsider.com/peter-luger-2012-3#">Peter Luger, </a>which has been in the same family since the 1950s.<a href="http://www.businessinsider.com/peter-luger-2012-3#"> </a></p>
<p>Jody Storch, the current owner/manager/Brooklyn Commissioner of Steak, got the restaurant from her father. He worked in the factory across the street, and when heard the restaurant was being sold by the previous owner, he bought it.</p>
<p>And speaking of family, there is a glaring omission on this list -<a href="http://www.businessinsider.com/old-homestead-steakhouse-2013-3"> Old Homestead Steakhouse. </a></p>
<p>I, personally, will stand for Old Homestead on a soap box until the cows come home (and we put them on a grill).</p>
<p>Not only was the restaurant around in the 1868 as the Tidewater Trading Post. It was called that because at that time, the Hudson river crawled right up to the restaurant. </p>
<p>Old Homestead as we know it now was bought by Harry Sherry in the 1940s, and his grandsons Greg and Marc, have built it into a great brand with locations in Atlantic City and Las Vegas as well as NYC.</p>
<p>And what's more - what's actually epic - is that Marc and Greg worked tirelessly with the Japanese government in the 1990s to bring Kobe beef to you and me, and all the other until-then-deprived Americans that need it. They worked with regulators to get Japanese farms up to American health code specifications.</p>
<p>This is diplomacy on at LEAST John Kerry's level. At least.</p>
<p>When you go to Old Homestead, you are Marc and Greg's guest. That much is obvious, and that is the heart and soul of a steakhouse.</p>
<p>That brings us to another glaring omission here. Gallagher's - a steakhouse that lets customers choose their own cuts.<a href="http://www.businessinsider.com/gallaghers-steakhouse-stays-open-2013-1"> It almost closed last year</a> and grown bankers actually wept in the streets of New York (not really, but we got a bunch of super sad mail about it).</p>
<p>Anyway, listen. Be careful with your steakhouse lists. People care about this stuff. You have to spend a lot of time eating a lot of steaks and drinking a lot of martinis to get this delicate stuff right.</p>
<p>It's work, people. Hard work.</p>

<p>Here's why: New York City has an amazing tradition of steak and chophouses - some steakhouses on this list, like Keen's, Delmonico's, and Old Homestead, date back to the 1800s.</p>
<p>Wall Street is even older than that, and with its client dinners and big money celebrations, is steeped in NYC steak culture. Bankers take lunch meetings at Bobby Van's, and Del Frisco's is basically a big banker hang out spot managed by former bond trader, Scott Gould.</p>
<p>That's why Business Insider polled its Wall Street readers to get their official take on the best steak in town and compiled the results in this handy list. Study it, you'll need it.</p>

A Wall Street Guide To NYC Steakhouses

<p><div class="KonaFilter image-container display-table"><div><div class="image"></div><p></p></div></div>On Monday night about two dozen journalists, steak-enthusiasts and all-around hungry people gathered in a private room at Old Homestead Steakhouse in Manhattan's Meatpacking District to enjoy an experience months in the making.</p>
<p>For the first time ever, Americans were about to dine on the highest quality Japanese Wagyu steak purchased at one of the country's exclusive beef auctions. Greg Sherry, a co-owner of Old Homestead along with his brother Marc, traveled to Japan's Gunma prefecture to bid on some beef and bring it back home.</p>
<p><div class="KonaFilter image-container display-table float_right"><div><div class="image"></div><p></p></div></div></p>
<p>"Marc and I always try to be the first in everything we do," Sherry told Business Insider. "Wagyu is something Marc and I brought to this country 18 years ago and we've just kept searching for the best of the best of the best."</p>
<p>Indeed, in some meat-circles the Sherry brothers are known as '<a href="http://www.businessinsider.com/how-nyc-got-its-most-expensive-steak-2013-5">The Ambassadors of Steak'</a> for lobbying Japanese and American food regulators to get Wagyu to America in the first place. Eating the extra fatty steak has been a culinary experience for steak lovers across the country ever since.</p>
<p>Wagyu is distinct because of the way the cattle is raise - and that is, slowly. Unlike your average 1,600 lbs American cattle, Wagyu cattle are not force fed or allowed to graze (all that running around builds too much muscle). They're also only brought up to about 1,300 lbs.</p>
<p>The result is an incredibly fatty, tender meat that melts in your mouth like butter. </p>
<p>Steak butter.</p>

<p>Greg Sherry started the process of getting into the auction about 4 months ago. Once he was approved, he jetted over to Japan. It took about 45 days for the meat to get through customs after purchase.</p>
<p>Once it got to the U.S., Marc Sherry went to work creating a tasting menu for the launch (yes, a meat launch).</p>
<p>On Monday night guests dined on five courses including Wagyu tenderloin bites, a Wagyu chuck mini burger with quail egg and truffles (a BQT), Wagyu sirloin Carpaccio, a Wagyu rib steak, and homemade vanilla bean Wagyu ice cream.</p>
<p>It was incredibly rich and incredibly incredible.</p>
<p><span>It's also, of course, incredibly expensive. A 12 oz cut of Japanese steak will run you about $350 at Old Homestead.</span></p>

An American Steakhouse Bid In A Private Japanese Wagyu Beef Auction Fort The First Time - And Then Served It

<p class="p1"><div class="KonaFilter image-container display-table float_right"><div><div class="image on-image"></div><p></p></div></div>Even though it's one of the most classic cuts, most of us know next to nothing about standing rib roast AKA prime rib.</p>
<p class="p1"><a href="http://www.nytimes.com/2015/01/14/dining/prime-rib-regains-its-place-as-a-restaurant-centerpiece.html?_r=0">The New York Times recently wrote </a>about a resurgence in the cut and how more and more restaurants are putting it back on menus. Perhaps it was time to learn a thing or two.</p>
<p class="p1">So we spoke with experts in the industry from both <a href="http://www.theoldhomesteadsteakhouse.com/">Old Homestead Steakhouse</a> and <a href="http://www.e2hospitality.com/blt-steak/"><span class="s1" style="line-height: 1.5em;">BLT Steak</span></a><span style="line-height: 1.5em;">. These are the 10 things you need to know about prime rib.</span></p>
<p class="p1"><strong>Prime rib is technically a roast, not a steak</strong>. That is, unless you slice the ribs into steaks <em>before</em> cooking, in which case it becomes a rib eye steak.</p>
<p class="p4"><span class="s1"><strong>To buy prime rib from the butcher</strong>, ask for the dry-aged prime rib and specify that you want the meat to be "prime" (not "choice") and have a lot of marbling. The more marbling, the more flavorful it will be.</span><span> </span></p>
<p class="p1"><strong>A full prime rib is cut from the 6th through 12th ribs of the cow</strong>, so seven ribs in total. </p>
<p class="p2"><span>In addition to full prime rib, you can get a </span><strong>loin-end rib roast</strong>, which is also known as "first cut." It's a smaller cut with less fat and is a leaner, more expensive purchase. There's also the<strong> chuck-end rib roast</strong> or "second cut" which is cheaper, bigger, and has more layers of fat.</p>
<p class="p4"><span class="s3"><div class="KonaFilter image-container display-table float_left"><div><div class="image on-image"></div><p></p></div></div>Also, <strong>a</strong></span><span class="s1"><strong>sk the butcher to leave the fat cap on the prime rib</strong>. It's a layer of fat on top of the meat that protects it while cooking and adds tremendous flavor.</span></p>
<p class="p4"><span class="s1"><strong>Cook your prime rib on the bones without the meat touching the pan</strong>. BLT Steak's <span>Corporate Executive Chef </span><span>Cliff Crooks</span> says to keep the preparation simple with salt and pepper on the outside and roast it slow and evenly at 325 degrees for 30 minutes. <span>Let it sit for 20 minutes to retain its juices.</span></span></p>
<p class="p4"><span class="s1"><strong>To see if your prime rib is done, test with a meat thermometer</strong>. Rare will be 115 degrees, medium-rare is 120 degrees, and medium is 130 degrees.</span></p>
<p class="p4"><span class="s1"><strong>Prime rib is called a "standing" roast</strong> because of the way you cook it. </span></p>
<p class="p4"><span class="s2">Both the teams at Old Homestead Steakhouse and BLT Steak say to <strong>order your prime rib medium-rare</strong>. </span><span class="s1">"It retains all of the juices, making it more rich and flavorful," <span>Old Homestead Steakhouse co-owner Greg Sherry</span> explained. Get it with a glass of Cabernet Sauvignon and never, ever order it well-done.</span></p>
<p class="p5"><strong style="line-height: 1.5em;"><div class="KonaFilter image-container display-table float_right"><div><div class="image on-image"></div><p></p></div></div>Prime rib isn't at most steakhouses because it's too expensive.</strong><span style="line-height: 1.5em;"> Restaurants around the country have quietly eliminated prime rib from their menus because of rising wholesale beef prices. Because restaurants prepare the entire seven-rib roast, anything not served is lost revenue. </span></p>
<p class="p5"><span style="line-height: 1.5em;">However, many classic steakhouses like Old Homestead Steakhouse still serve prime rib.</span></p>

Everything You Need To Know About Prime Rib, America's New Favorite Cut Of Beef

<p><div class="KonaFilter image-container display-table float_right"><div><div class="image on-image"></div><p></p></div></div>Sure, you love steak and know all the best steakhouses, but are you a true connoisseur?</p>
<p>We spoke with New York City's <a href="http://www.theoldhomesteadsteakhouse.com/">Old Homestead Steakhouse</a> team (including owners Greg and Marc Sherry, and Executive Chef Oscar Martinez and his culinary team), as well as Executive Chef David Nichols at the <a href="http://gerberbars.com/">Gerber Group</a> and Executive Chef Paul Neidermann at <a href="http://www.e2hospitality.com/blt-prime-miami">BLT Prime Doral</a> in Miami on the steak knowledge that separates the men from the boys.</p>
<p>Keep reading to see their answers.</p>
<p><strong>A Porterhouse steak and a T-bone steak are not the same.</strong> Though they look almost identical, are both part sirloin and filet mignon, and are both double-cut, you get more bone and less meat with a T-bone. </p>
<p><strong>Filet mignon doesn't have to be aged. </strong>Because it's so lean, there's no fat to break down, making the process unnecessary.</p>
<p><strong>The rump is underrated and supremely flavorful.</strong> Just because the rump is a tougher kind of meat doesn't mean you shouldn't order it. It's more flavorful than filet mignon and one-third the price.</p>
<p><strong>Don't be afraid of over-seasoning, especially if you're grilling.</strong> Paul Neidermann, the executive chef of BLT Prime Doral in Miami, says most of the heavy seasoning will fall off onto the fire anyways. Better to have more flavor than less flavor.</p>
<p><strong><div class="KonaFilter image-container display-table float_left"><div><div class="image on-image"></div><p></p></div></div>Salt steaks 45 minutes before you sear them.</strong> Most people know that steakhouses slather their steak in salt to get that charred, crusty exterior that seals in all the juices and flavor, but give yourself enough time for it to properly set. "Besides the salt adding flavor, it draws moisture, which causes the salt to dissolve," Old Homestead Steakhouse Executive Chef Oscar Martinez explained to Business Insider. "Letting the salted steaks sit for at least 45 minutes allows the moisture to return into the meat. The salt makes a sumptuous crust on the exterior when it hits the grill." </p>
<p><strong>Make sure your heat source is hot enough.</strong> Give your grill or pan plenty of time to preheat and test the heat before putting your meat on. If it's hot enough, you shouldn't be able to hold your hand over the grates for more than 2 seconds.</p>
<p><strong>On the subject of heat, thicker steaks require lower heat than thinner steaks.</strong> This one makes sense when you think about it: Cooking a thicker steak on high heat will cause the exterior to burn before the inside has cooked enough. </p>
<p><strong>Grilling your steak will give you the best results.</strong> According to Executive Chef David Nichols at the hospitality and nightlife company Gerber Group, grilling retains the best flavors in the meat since it's a slower process and the coals allow the meat to heat evenly. </p>

<p><strong>And if you are grilling your steak, don't touch it if it's sticking to the grill - that means it's not ready to be turned yet.</strong> Be patient and touch your steak as little as possible to keep all the juices inside. </p>
<p><strong>Use tongs to handle steak. </strong>Never use a fork, which pierces the steak and causes the meat to lose juice and flavor. The less you touch and poke the steak, the better it will be.</p>
<p><strong>Sear both sides of steak on high heat first before cooking.</strong> Place your steak directly over a flame for two minutes on each side, and then cook the steak off the flame until it's done. This will seal in the moisture and make steaks extra juicy.</p>
<p><strong>See if a steak is done with the finger test.</strong> This is an easy test cooks use to see if the steak is done without a meat thermometer. Old Homestead Steakhouse co-owner Greg Sherry outlined for us how to do it:</p>
<p>"Without using force, bring together the tips of your index finger and thumb, and then feel the fleshy area below the thumb (that's what rare feels like)," he said. "Press together the tips of your ring finger and thumb, and then feel the flesh below the thumb (medium feels like this). To see what well-done feels like, gently press together the tips of your pinky finger and thumb, then feel the fleshy area beneath the thumb. Then enjoy your steak cooked to perfection."</p>
<p><strong>Let your steak rest for half the amount of time you cooked it.</strong> This will let the juices retract and stay inside the meat, not on the plate.</p>

<p><strong>Only a few New York steakhouses still have prime rib on the menu. </strong>Most have removed the menu item because it's too expensive to feature and what isn't sold at the end of the night has to be tossed.</p>
<p><strong>Dry-aged steaks are more expensive because of mold and moisture loss. </strong>When meat is dry-aged, it's stored in temperature- and humidity-controlled refrigeration from three to six weeks as the moisture evaporates and the fibrous connective tissue that holds the cow's muscle together breaks down, giving it a softer texture. A thin layer of mold often develops as well, and that is trimmed before cooking. Couple that with the moisture loss (about 20%), and the beef will weigh less than when it was first bought. </p>
<p>Restaurants pay for the beef pre-weight loss though, which means as a customer you're also going to pay more for your dry-aged steak.</p>
<p><strong>The cost of beef rises when there's a drought.</strong> No water means less grass growing, which forces farmers to purchase more expensive grain-based feed, like hay or corn. </p>
<p><strong>Memorial Day - not the 4th of July or Labor Day - is the biggest day for beef.</strong> The other two holidays tied for second, according to Old Homestead Steakhouse.</p>

<p><strong>28% of people who order a steak get a baked potato.</strong> But really you should try a more classic side, such as creamed spinach or a hashed brown potato cake.</p>
<p><strong>Love steak, but not sure what to order? Follow this guide from Old Homestead Steakhouse: </strong>If you want melt-in-your-mouth tender, order filet mignon; tender but slightly chewy, order a sirloin; extremely juicy and flavorful, order a rib eye; can't make up your mind, order the porterhouse (which is part sirloin, part filet mignon).</p>

<p>Here in New York City, however, unless you're hiding inside your apartment, you may want to put on a little something that - while loose fitting - won't embarrass you in front of others after the game.</p>
<p>In New York City, once the Super Bowl is over, it's time to go out and truly party. </p>
<p>There are tons of options for how you can get your football on at home or outside, so Business Insider decided to e-mail around to some NYC spots we figured would be blowing the Bowl out. </p>

<p>Two big NYC steakhouses will help you throw your own Super Bowl party in grand fashion.</p>
<p><a href="http://www.e2hospitality.com/blt-steak/">BLT Steak</a> is doing a $350 'Luxe Tailgate to Go' package for 4-6 people that includes Ribeye Cheesesteaks, Black Truffle Twice-Baked Potatoes, Short Rib Chili and more. Chef Luke Venner also will send you a recipe for a cocktail pairing. </p>
<p>There's another menu for those who only wish to spend a punny $65 a person (for at least 4 people). Whichever menu you choose, place your order by January 28th.</p>
<p>If all of that seems too mild for you, one of the oldest steakhouses in Manhattan, <a href="http://www.theoldhomesteadsteakhouse.com/">Old Homestead</a>, may have you covered. The restaurant is offering a $4,900 wing spread with chicken wing smothered in rich $65 per pound Foie Gras, <span>chicken wing covered in $</span><span class="il">1</span><span>,600 per ounce Royal Ossetra Caviar, and last but hardly least, a mammoth mouthwatering $400 per pound imported Japanese Kobe filet mignon "wing" on the bone, marinated in $1,100-a-bottle imported Japanese Tokubetsu Daiginjyou Kamutachi sake.</span></p>
<p><span>"It's all about the wings on Super Bowl Sunday, so we're taking a Super Bowl staple to the next level," said co-owner Greg Sherry. "The ultimate wings for the ultimate game, and with advertisers paying $8 million for a 60-second commercial (last year's rate), our $4,900 wings are a bargain - and a first-time culinary wing experience."</span></p>
<p>Also $490 of every package sold is going to Seattle Seahawks Quarterback Russell Wilson's <a href="http://whynotyoufoundation.com/">"Why Not You" Foundation</a> which raises awareness and helps victims of domestic violence.</p>

<p><span>While much of the Strategic team will be recovering from Maxim's Saturday night party at Marquee in Arizona, or setting off the weekend-long pop-up party at Cake nightclub and Tao also in Arizona, some will remain in New York City to hold down the fort.</span></p>

A Few Totally Over The Top NYC Super Bowl Parties We've Stumbled On

<p>There's choosing cuts of meat, and then there's innovating meat with new cuts no one has ever had before.</p>
<p>New York's <a href="http://www.theoldhomesteadsteakhouse.com/?q=node">Old Homestead Steakhouse</a> specializes in perfection and innovation.</p>
<p>Owners Greg and Marc Sherry have gone farther than just keeping a classic steakhouse feel in their restaurant, they're basically American steak ambassadors. Thanks to their efforts, Wagyu (more commonly known as Kobe beef) was brought to America from Japan in the early 1990s.</p>
<p>Now the restaurant serves the most expensive cut of steak in the city. A $350 piece of Wagyu beef carefully sliced and imported from Kobe.</p>
<p>"It's become a cult [thing] to come here and get a steak for $350 and a great bottle of wine," Greg Sherry told Business Insider.</p>
<p>Just ask the guy who once had two cuts prepared and taken to his private plane. Or any of the parade of celebrities who have come in to the restaurant to try the cut of meat that Sherry describes as "the 4th of July in your mouth."</p>
<p>The brothers found Wagyu when they went to Japan in the 1990s, tried the meat and immediately fell in love. Wagyu beef is fed on barley and bathed with beer. The cows are not allowed to graze so they don't develop muscles. Instead, their meat is full of fat (as you can see from all the white marbling on the left).</p>
<p><div class="image-container float_left" style="width:400px"><div class="image"></div><p class="source">Old Homestead</p></div>Sherry told Business Insider that to get American food regulators to allow Wagyu into the country, he and his brother had to work with Japanese farmers to bring their facilities up to American health code.</p>
<p>And so Old Homestead was first to bring the beef to America.</p>
<p>But back to the place. Old Homestead has been around since 1868, when it was called the Tidewater Trading Post because the Hudson River crept right along the restaurant's West 14th and 9th Avenue location.</p>
<p>The river has since receded, and what was once a neighborhood of meat purveyors and dock workers is now home to some of the most glamorous hotels and nightclubs in the world. Google's New York office is right around the corner.</p>
<p>The Sherry family has owned the restaurant since the 1940s, when Harry Sherry, who started out there as a dishwasher, bought it from its former owner.</p>
<p>"This was my favorite," Greg, Harry's grandson, told Business Insider. "I was groomed here, I was weened here."</p>
<p>The relationships Harry established, and that his grandsons maintained, secured that Old Homestead gets the best, freshest cuts regardless of what's going on in the meat market. The restaurant has expanded too, with locations at Caesars in Las Vegas and The Borgata in Atlantic City.</p>
<p>"I've been doing this for 40 years, you can't fake me out... I'm obsessed with quality control," Greg Sherry said, adding "We specialize in the four food groups, beef, beef, beef, and beef."</p>

Step Inside The Place Where The Most Expensive Meat In NYC Is Served

<p>And so in that spirit, we feel compelled to highlight BLT Prime's special -  a $320, 72-ounce Sher Farms Wagyu Tomahawk Chop.</p>
<p>Two things about this every banker/<keyword id="133282" type="UNKNOWN" weightage="60" keywordseo="Steak">steak</keyword> lover will understand from jump. Wagyu is the must expensive, decadent steak you can buy. And the Tomahawk Chop - it's basically the granddaddy of steak cuts. It's for sharing, for eating and then for taking one home.</p>
<p>The only steakhouse that has something comparable to this all year around is the venerable institution Old Homestead, which will happily serve you a $350 12 oz. Wagyu cut on your private plane, if you so desire. </p>
<p>Now - an important note to the steak purists: This 'Australian' Wagyu is cross-bread with Holstein steers (51% Wagyu, 49% Holstein to be exact). Argue about the merits of that in comments, send me angry e-mails if you want to, either way it means you get a massive cut.</p>
<p>It should also be noted that BLT Prime's head chef will happily carve your initials into your steak's bone with a Dremel.</p>
