New Delhi, One of India's most creative chefs who put nawabi <keyword id="19945772" type="General" weightage="20" keywordseo="lucknow" source="keywords">Lucknow</keyword>'s <keyword id="20612438" type="General" weightage="20" keywordseo="dum-pukht" source="keywords">Dum Pukht</keyword> cuisine on the world map, and also became the first practising member of his fraternity to ever get a Padma Shri in 2016, Imtiaz <keyword id="19974186" type="General" weightage="20" keywordseo="qureshi" source="keywords">Qureshi</keyword>, passed away on Friday at the age of 93. An unlettered cook who started working from the age of nine, Qureshi, who was known for his trademark handlebar moustache, Santa Claus-like personality and the chaste Urdu in which he would narrate his stories from the kitchen, was famous for inventing dishes whose ideas he would pick up from conversations with his patrons and fellow professionals. His influences and inspirations extended from the empress of ghazals, Begum Akhtar, for whom he invented a dessert named Lab-e-Mahshoukh, or pista kulfi drizzled with a sour cherry sauce, to <keyword id="20612440" type="General" weightage="20" keywordseo="roger-moncourt" source="keywords">Roger Moncourt</keyword>, the French chef who ruled the Continental kitchens of Delhi, from whom he picked up the secrets of the sauces that give French cuisine its distinctive personality. Qureshi started out training to be a pehelwan but ended up as an apprentice to his ustads, Haji Ishtiyaq and Ghulam Rasool, and started working with a Lucknow-based catering company that was serving the Indian Army during the Chinese War in 1962. It was then that Qureshi got to serve Pandit Jawaharlal Nehru, who was being hosted by the Uttar Pradesh chief minister, C.B. Gupta. To make the occasion special, and out of respect for Gupta's vegetarian sensibilities, Qureshi, who's best known for mutton and fish dishes, invented the Turush-e-Paneer, escalopes of cottage cheese stuffed with dried plum and oranges, quilted in a tomato plum sauce. As the fame of his culinary prowess spread, he moved up the professional totem pole, being hired by Lucknow's then go-to hotel, Clarks Avadh, and then being head-hunted by Ajit Haksar, the founder of ITC Hotels, for the group's new address in New Delhi -- Maurya Sheraton. And from there, he travelled the world, winning accolades wherever he went. At the Maurya, Qureshi became instantly famous. Diwan Gautam Anand, who was banquet manager when the chef was in his element, remembers how the nation's high and mighty would shower gifts on Qureshi in recognition of his food, which was then a novelty in the Butter Chicken-soaked national capital. According to Anand, Qureshi was indeed a self-taught powerhouse of culinary talent, but what made him stand apart was his 'milansar' personality, which enabled him to soak in whatever knowledge anyone had to offer. Anand remembers how Qureshi once came back excited from a dinner he had curated for the Afghan ambassador because he had discovered the brinjal dish known as 'badin jaan'. Overnight, he recreated it for Dum Pukht, the restaurant at the Maurya Sheraton, that became synonymous with the master chef and a standard-bearer for Indian fine dining. Dum Pukht's Badin Jaan consists of wheels of smoked brinjal with a spiced tomato topping and a smooth, creamy spiced yoghurt sauce. It was at Dum Pukht that the jugalbandi of the doyen of food writers, the late Jiggs Kalra, and Qureshi created sensations such as the Kakori Kabab (the melt-in-the-mouth version of the chunky mutton seekh kabab), with Kalra inventing the story of the toothless nawab in its honour, the signature Dum Biryani, and umami-packed gravy dishes such as the Koh-i-Awadh, the 'paya' reinvented with lamb shanks, and Mahi Dum Pukht, red snapper fillet cooked in an almond and brown onion sauce. He had created this dish first for the wedding of a Mumbai socialite's daughter in 1972 and he gave it a Bengali twist a couple of decades later with his Mahi Qaliya, where rohu fish cooked in mustard oil is the base ingredient, for a Kolkata-based news baron. With the passing of Imtiaz Qureshi, India has lost a chef who not only gave Indian fine dining a new lease of life and a personality of its own, but also, despite being unlettered, became its finest and most colourful spokespersons around the world.

Their father, who remained in Pakistan with his other children, feared for the safety of his Muslim sons in the United States, but they found community, and the younger Hussain immediately found success — first at college, and then at work — his older brother, Muhammad Imtiaz Hussain, told Insider.That all changed on August 1, when 27-year-old Muhammad Afzaal Hussain stepped outside of their apartment and was fatally shot. He is among a string of four Muslim men law enforcement say were recently "ambushed" and killed in Albuquerque. Afzaal Hussain was killed in the same three-week span as Aftab Hussein, 41, and Naeem Hussain, 25. Law enforcement officials are investigating the killings and the unsolved murder of Mohammad Ahmadi, 62, in November. "I can keep sheep and goats and I can have chickens all around. I can have bonfires with my friends.'"Imtiaz Hussain said his brother was staying with him through the summer so he could spend time with his niece and nephews while they were out of school and that he was killed as he was in the process of moving his belongings to his new home.Imtiaz Hussain didn't tell his children about the killing right away, and for the first few days he had them stay with friends and family because he feared for their safety and didn't want them to see him grieve. Eventually, he had to answer their questions. "Now they know and they were crying, 'who will take us camping? Who will go with us fishing? We don't have our uncle,'" Imtiaz Hussain said. He also couldn't bare to tell their father, who he said has heart failure and is weak."A few days passed, then a cousin told him something happened. How could we hide it?" he said. "He collapsed and he's very angry."Imtiaz Hussain said he didn't send his brother's body back to Pakistan because it was so destroyed in the shooting. He worked in a different city and didn't know the other victims, according to Imtiaz Hussain."He was ambushed. The way he was killed was so brutal," he said. "We couldn't put his head together." Imtiaz Hussain said the Muslim community in Albuquerque is now living in fear and some people aren't leaving their homes or going to work because they fear they will be murdered.His father is adamant that he and his family move back to Pakistan. "He says, "Look with the American dream, you're losing life,'" he said.Imtiaz Hussain, though, said he's never before been afraid in Albuquerque or experienced any hate from the community. FBI crime stats indicate that there was one crime motivated by anti-Islam hate in 2020, which is the most recent publically available data. Between the years of 2010 and 2020, there were 16 anti-Islam hate incidents there, according to the data, which is self-reported by local agencies and can be incomplete.Abad, the general secretary of the Albuquerque Islamic center, said that the community hasn't had many problems with hate crimes. Other than the recent string of killings, she said the only thing of note was a "crazy, psycho woman" who tried to set the Islamic center on fire last year. On Tuesday, when police arrested a Afghani immigrant for two of the killings, the public quickly pivoted to a narrative in which the murders were acts of Sunni on Shia violence. But Muhammad Imtiaz Hussain, brother of one of the victims, rejects that the killings had anything to do with religion and wants the speculation to stop."Although we were raised as Sunni, and we pray in Sunni, we didn't carry any identity as Sunni or Shia," Imtiaz Hussain told Insider. "It was an individual act. The person who killed had some extreme animosity against my brother." Naeem Hussain, 25, Afzaal Hussain, 27, and Aftab Hussain, 41 — all from Pakistan — were killed in ambush shootings in the last two weeks. Police believe that a fourth killing — of Afghanistan-born Mohammad Ahmadi, 62, back in November — is also connected.APD Chief Harold Medina said at a press conference Tuesday that Muhammad Syed had been charged with killing.Detectives were about to conduct a search warrant at Syed's home when they saw him driving off in a Volkswagen Jetta. He said the narrative that his brother was killed over religion just doesn't make sense. Afzaal Hussain was Muslim, but not very religious, his brother said, adding he only visited the Islamic Center of New Mexico every few months for special events.Working as a city planner in Espanola, about an hour an a half north of Albuquerque, Afzaal was more dedicated to a future in politics than his practice of Islam, his brother said. "It's false. I absolutely reject it," he said, of allegations of sectarian violence. "We have nothing to do with Shia practices. We never participated in Shia orientation." Aneela Abad, general secretary of the Islamic Center of New Mexico, told Insider she understands the effort to uncover a motive but that assumptions aren't helping the Muslim community in Albuquerque."The community is definitely shocked that he is one of the attendees of the Islamic Center," she said, adding that members of the center's mosque are scared that the accused was sitting among them.The Islamic Center is a "melting pot" with over 30 different ethnicities, and Abad is worried that these assumptions could cause "internal chaos" between the Shiite and Sunni communities. "This was just a person who had his own personal crazy reason and crazy agenda and did this terrible crime," she said.Imtiaz Hussain agreed, noting the close-range "brutal" way that his brother was killed."At least we are now relaxed and my kids can go outside and feel safe," he said told Insider.Before the arrest, Imtiaz Hussain was moving his children between the homes of friends and acquaintances to keep them safe. <ul class="summary-list"><li>A suspect has been charged with killing two Muslim men in Albuquerque.</li><li>Police say a tip from the community led them to the 51-year-old.</li></ul>Albuquerque police have charged a 51-year old man in connection with two of the four murders of Muslim men in the city.At a press conference on Tuesday, APD Chief Harold Medina said Muhammad Syed had been charged with killing Muhammad Afzaal Hussain and Aftab Hussain, after a tip came in from the community about the suspect's vehicle. Medina said detectives were about to conduct a search warrant at Syed's home, when they saw him driving off in a Volkswagon Jetta. From there, he said, detectives were able to locate the firearms used in the killings; one in Syed's vehicle and one in his home. The motives for the killings are still being investigated. Medina said Syed had prior misdemeanors including a domestic violence charge.Deputy Commander Kyle Hartsock said law enforcement are still working on gathering evidence on whether Syed may have been involved with the two other murders.Naeem Hussain, Muhammad Afzaal Hussain, and Aftab Hussain were killed in ambush shootings in the last two weeks. They were all from Pakistan. Police believe that a fourth killing — of Afghanistan-born Mohammad Ahmadi back in November — was also connected.Chief Medina <a href="https://twitter.com/ABQPoliceChief/status/1557074793337200640">tweeted</a> just before 1 p.m. Tuesday that his officers tracked down a vehicle they believed to be connected to the killings, and the driver of the vehicle was detained. Muhammad Imtiaz Hussain, whose 27-year-old brother Afzaal Hussain was killed on August 1, told Insider that the family had come to America from Pakistan looking for better futures and loved the community they found in Albuquerque. They felt safe walking alone at night or early in the morning, and had never been victims of violence before. In the wake of Afzaal Hussain's killing, though, his brother said he feels unsafe and has been moving his children between friends' homes trying to protect them, he told Insider.The 27-year-old, who worked as a city planner for a city an hour north, walked out of his apartment and was shot in the head, his brother said. "The way he was killed was so brutal," he said. "We couldn't put his head together." Now Imtiaz Hussain is in the process of trying to relocate. "I'm afraid for my safety and for my kids. My dad is very worried and calling us to 'please come back,'" he said Monday. Aneela Abad, general secretary of the Islamic Center of New Mexico, told Insider that it's especially unsettling how the three recent killings are being connected to Ahmadi's shooting nearly a year ago. "We're shocked that somebody who lives here locally, they can lie low and just reappear all of a sudden and there's three shootings in a row," Abad said.
