The most interesting change was to convert its rice bowl offering into a Biryani bucket, as the former product never took off. This is the most favourite product in the south, and has also become a hit in the north and the west. While KFC runs on buckets and zingers, which make up half of its business, biryani and rice bowls make up 7-8% of the business. A similar but a deeper strategy was undertaken by Pizza Hut whose products and prices were much higher than peers, especially <keyword id="158137" type="General" weightage="80" keywordseo="domino" source="Orion">Domino</keyword>’s. In the last 2-3 years, they continuously added combos and meals to make the brand more affordable and attractive. Now, meal combos make up for around 47% of their sales. Its average per customer (APC) has also come down to ₹500 from the ₹750-800 it was, three years back. It’s also adapting to Indian tastes – and launched Momo Mia Pizza and San Francisco Style. The former is already successful and is delivering high single digit contributions to sales, the report said. This variety is also allowing it to keep its premium status while playing the price cards. Their entry level pizza and sides are expensive also because the variety is low. “On the other hand, in the premium category, the combo is priced at 37-40% cheaper than Domino’s in the regular size pizza and 31% cheaper than Domino’s in the non-veg medium size pizza,” the report said indicating that they are pricing it at a different vantage point. It looks like, when it comes to food, most young Indians prefer it quick, fast, tasty and affordable – which is why they’re flocking to QSRs – a sweet spot that these American brands have managed to hit.

The report mentioned that over 4.25 lakh new users made their Swiggy debut by ordering a chicken biryani, while the most binged snack of the year was <keyword id="83759" type="General" weightage="20" keywordseo="samosa" source="Orion">samosa</keyword> with about 5 million orders on Swiggy, equal to the population of New Zealand. "Swiggy's sixth annual StatEATstics report reveals how Indians ordered 115 plates of biryani per minute, samosas equal to the population of New Zealand, and enough tomatoes to play the Spanish Tomatina festival for eleven years," the company said in a statement. "In 2020, 90 biryanis were ordered per minute, which has gone up to 115 in 2021, which comes to 1.91 per second," the statement said. While samosa was ordered six times more than <keyword id="713747" type="General" weightage="20" keywordseo="chicken-wings" source="Orion">Chicken Wings</keyword>, pav bhaji was India's second favourite snack with 2.1 million orders. With a total of 2.1 million orders, gulab jamun was the most ordered dessert on Swiggy followed by rasmalai with 1.27 million orders. The search for healthy food on Swiggy doubled in 2021, and health-focused restaurants on Swiggy HealthHub witnessed a 200 per cent increase in orders. Bengaluru emerged as the most health-conscious city, followed by Hyderabad and Mumbai. Instamart delivered over 28 million packs of fruits and vegetables alone in 2021. Tomatoes, bananas, onions, potatoes, and green chilies were the top five fruits and veggies delivered in under 30 minutes. The total bananas ordered on Instamart outweighed the Statue of Liberty by 2.6 times. With a whopping 44,30,008 orders on Zomato and 5.5 lakh on Swiggy, it has enjoyed popularity across all states, leaving behind pizza, pasta and french fries. As per Swiggy’s StatEATstics report, Veg, Chicken, Mutton or Aloo, collectively some form of Biryani was ordered more than once every second in 2020! For every Veg Biryani, there were six Chicken Biryani orders. Chicken Biryani was the number one sold dish, Mutton Biryani snagged the 5th spot. Swiggy also added 3 lakh new customers because of Biryani as they made their debut on the app by ordering the dish. Zomato, on the other hand, delivered 22 biryani every minute in 2020! Jubilant Foodworks announced a new brand called Ekdum! with a variety of biryanis from across India. And the love for biryani was evident in the stock market as Jubilant’s share prices jumped by over 6% on Thursday (November 17) morning. Jubilant is also keeping its offering in the affordable range with a starting price of ₹99. We see strong potential in this segment and are confident that Ekdum!, with its sharp and differentiated proposition will create a strong position for itself in the market,” said Shyam S Bhartia, Chairman and Hari S. Bhartia Co-Chairman, Jubilant FoodWorks Limited in a joint statement. The foray into the Biryani segment has also been appreciated by market analysts as the food item is one of the most popularly ordered dishes across e-commerce as well as sit-in restaurants. “Biryani is one of the most popular dishes and a large category in India— it lends well to delivery, sells well across lunch/dinner, appeals across demographics and offers scale and robust profitability/return metrics,” said a report by Kotak Securities. The report further said that there are three factors to keep in mind for Jubilant’s new offering – the pricing is attractive, the economics that can be achieved with Biryani is comparable to that of Domino’s, however, while Domino’s has a consistent taste offering through its pizza, managing the same with biryani could be a difficult task as it will also depend on the chefs hired. And, the company will also face competition from established brands like Biryani By Kilo, Behrouz Biryani, Biryani Bluez as well as traditional biryani outlets across different cities which have a brand legacy working for them like Hyderabad’s Paradise Biryani, among others. “JFL is opening three restaurants in Gurgaon for Delivery, Takeaway and Dine-In, with more restaurants planned to open in NCR over the next few months. In our view, this is a positive move by the company, which would help JFL to boost the revenue growth significantly going ahead,” said Amarjeet Maurya, AVP, Mid Caps, Angel Broking. Last year in March 2019, Jubilant Foodworks had also forayed into the Chinese food segment with its own brand – Hong’s Kitchen. Having started with a single outlet in Gurugram, the brand has scaled to five more stores. And experts believe that both the biryani and chinese cuisine offerings will help the company. “In our view, the platform is in place to accelerate store additions to 100-125 per year in Domino’s and 30-40 aggregate between HK and Ekdum!. We believe there is room for Jubilant Foodworks to step up aggression and investments,” said the Kotak report.
