As many as 2.45 million tickets are already sold out for Qatar <keyword id="653179" type="General" weightage="20" keywordseo="FIFA-World-Cup-2022" source="Orion">FIFA World Cup 2022</keyword>, and Indians too are planning trips to Doha. It comes as no surprise, since Doha is a four hour flight from India. Even without Indian representation, India has many football fans and the 32-team event with 65 matches across eight avenues, is taking a lot of them to Qatar. “We have booked over 160 travel packages until now. Over 70% of the queries have come from Kolkata. Although the tickets of the most important matches are sold out, we do have executive travel packages for flight and accommodation,” said Adit Sarin, founder of LestacIndia, a travel agency in India. Apart from LestacIndia, agencies like Fanatic Sports, Asia-based travel agency for customized sporting events and Make My Trip too have launched packages for the season. Travel and Ticket Categories for FIFA The average venue capacity of FIFA World Cup venues is 47,500 <a href="https://www.stadiumguide.com/tournaments/fifa-world-cup-2022-stadiums-qatar/">seats</a>. The FIFA federation has divided the tickets into four categories. Tickets for fans are only available in the categories 1, 2 and 3 as category 4 is reserved for Qatar residents. After the launch of the phase 1, 2 and 3 of FIFA tickets, the federation has announced the next sales phase to be launched in <a href="https://www.fifa.com/fifaplus/en/articles/fifa-world-cup-qatar-2022-tm-ticket-sales-reach-2-45-million">September</a>. This last minute sales phase will be allocated on a first-come first serve basis. The most expensive tickets would be from the Category 1 ticket finals costing over ₹1 lakh per person. Other categories are spread across categories 2 and 3 with the cheapest category 4 tickets only reserved for Qatar residents. In total, 65 games will be played at the FIFA World Cup 2022. While many travelers would reside at fan villages and hotels, food can be quite expensive. The average food cost for a tourist in Doha is ₹3,800 per day. “The public transport is free but the stay at the fan village is costly, with $70 per day only for accommodation. While whole milk is traditional for chai, you can really use any milk you like. Switch it up with non-dairy milk like almond, oat, or soy, or make your chai a little lighter with skim. A very traditional variation of chai even uses buffalo milk. <h3>Sugar</h3>How much and what kind of sugar you use is entirely up to you and how sweet you want your chai.Start with 1 or 2 teaspoons of plain sugar - remember, chai is supposed to be sweet - and you adjust to your desired taste from there. Sanyal suggests experimenting with demerara or brown sugar, maple syrup, or honey if you're looking to try something new.Quick tip: One 8-ounce serving of chai contains about 25 milligrams of caffeine. A Kolkata-based quick service restaurant chain ‘Wow! Momo’ is serving the Tibetan dish which has over years become one of India’s favourite street side snack in the most bizarre ways. A look at its menu flaunting Chocolate <keyword id="76833" type="UNKNOWN" weightage="100" keywordseo="momos">momos</keyword>, Moburg (momo burgers), prawn and fish momos, pizza momos and what not, can have you drooling! 

	The story of this startup reminds us of the famous phrase: every drop of water counts and together these drops can fill a dry pond. Here’s why!
 Based out of a small kiosk in a 30-square feet space in a Kolkata mall, two friends Sagar Daryani and Binod Homagai would sell momos to consumers on their own making Rs 2000 a day. Who would have expected the duo would soon become owners of a fast food restaurant chain that has spread it wings across six cities today (which include Kolkata, Bengaluru, Pune, Chennai, Kochi, and Delhi) and is expanding fiercely. After raising the first round of <keyword id="6357455" type="EVENT" weightage="100" keywordseo="Funding">funding</keyword>, the company is going really fast now with 43 outlets in March to 63 in December. 

	“We started with Rs 30,000 and we bootstrapped for the next 6.5 years to reach a turnover of Rs 20 cores last March without any funding,” Sagar told Business Insider. 
 By the time they approached investors and zeroed in on the first round of funding from <keyword id="328347" type="ORGANIZATION" weightage="100" keywordseo="Indian-Angel-Network">Indian Angel Network</keyword> (IAN), the startup was already at a turnover of Rs 20 crore, a run rate of Rs 2 crore a month from its 43 store count. 

	“I met Sanjeev Bikhchandani in Kolkata last year at Tiecon. We got talking and as destiny would have it, it somehow worked for both of us,” recounts Sagar, who was able to raise Rs 10 crore in August last year. The investment is being used to expand aggressively across cities and improving the product range for a better consumer experience. Currently, their product line comprises different variants of momos, thukpa, and meals. They serve 11 different flavors of momos available in steamed, fried, pan-fried, sizzler, and baked variants.

	

	The question is why did they not look for funds in the nascent stage? Because, there was no desperation to get money. “Over the years, we were approached by VCs but we were not keen because we felt that in order to raise money, you need to have the right bandwidth to scale up at very good pace. We wanted to build that and we were very happy to build a brand at our own profits,” says Sagar. “Also, I felt a bias when it came to valuations to tech versus non-tech companies which disappointed me. We were not getting the valuations we were looking for despite running a successful business model, having a great team to drive the business and expanding operations on our own,” he adds.
 

	However, when they did think of approaching investors, Sagar highlights, not every experience was a pleasant one. “A renowned VC asked me once if we would be interested in selling our company in the next three years. We understand that they are here to make money and being a consumer market that we are in, a quick exit would be a big brand coming and taking over. However, we were confident that we can take Wow! Momo as a brand from Rs 1000 to 10,000 crore ourselves,” he says.
 

	The confidence in these folks at Wow! Momo comes from the fact that both Binod and Sagar have learnt it the hard way. They used to serve consumers themselves in the Spencer outlet back in 2008. Seeing that the product was doing well, they shifted to a 90-square feet space in one of Kolkata’s best malls in no time where they started making Rs 7 to 8 lakh monthly which was the turning point for their business. From here on, they were able to afford employees, only to build a great team that they have now. 
 

	Future plans:
 

	After raising Rs 10 crore from Indian Angel Network in August this year, the company is going really fast now. 
 

	“We are looking at 70 -75 stores by March next year and around 105 stores by March 2017 with a turnover of 60 crore per annum. Seeing the KFCs and Dominos in India, our long term goal is to become an Indian brand going abroad,” says Sagar. The company plans to go for second round of funding in December next year and is looking at an IPO in about 5 to 10 years from now.

New Delhi, One of India's most creative chefs who put nawabi <keyword id="19945772" type="General" weightage="20" keywordseo="lucknow" source="keywords">Lucknow</keyword>'s <keyword id="20612438" type="General" weightage="20" keywordseo="dum-pukht" source="keywords">Dum Pukht</keyword> cuisine on the world map, and also became the first practising member of his fraternity to ever get a Padma Shri in 2016, Imtiaz <keyword id="19974186" type="General" weightage="20" keywordseo="qureshi" source="keywords">Qureshi</keyword>, passed away on Friday at the age of 93. An unlettered cook who started working from the age of nine, Qureshi, who was known for his trademark handlebar moustache, Santa Claus-like personality and the chaste Urdu in which he would narrate his stories from the kitchen, was famous for inventing dishes whose ideas he would pick up from conversations with his patrons and fellow professionals. His influences and inspirations extended from the empress of ghazals, Begum Akhtar, for whom he invented a dessert named Lab-e-Mahshoukh, or pista kulfi drizzled with a sour cherry sauce, to <keyword id="20612440" type="General" weightage="20" keywordseo="roger-moncourt" source="keywords">Roger Moncourt</keyword>, the French chef who ruled the Continental kitchens of Delhi, from whom he picked up the secrets of the sauces that give French cuisine its distinctive personality. Qureshi started out training to be a pehelwan but ended up as an apprentice to his ustads, Haji Ishtiyaq and Ghulam Rasool, and started working with a Lucknow-based catering company that was serving the Indian Army during the Chinese War in 1962. It was then that Qureshi got to serve Pandit Jawaharlal Nehru, who was being hosted by the Uttar Pradesh chief minister, C.B. Gupta. To make the occasion special, and out of respect for Gupta's vegetarian sensibilities, Qureshi, who's best known for mutton and fish dishes, invented the Turush-e-Paneer, escalopes of cottage cheese stuffed with dried plum and oranges, quilted in a tomato plum sauce. As the fame of his culinary prowess spread, he moved up the professional totem pole, being hired by Lucknow's then go-to hotel, Clarks Avadh, and then being head-hunted by Ajit Haksar, the founder of ITC Hotels, for the group's new address in New Delhi -- Maurya Sheraton. And from there, he travelled the world, winning accolades wherever he went. At the Maurya, Qureshi became instantly famous. Diwan Gautam Anand, who was banquet manager when the chef was in his element, remembers how the nation's high and mighty would shower gifts on Qureshi in recognition of his food, which was then a novelty in the Butter Chicken-soaked national capital. According to Anand, Qureshi was indeed a self-taught powerhouse of culinary talent, but what made him stand apart was his 'milansar' personality, which enabled him to soak in whatever knowledge anyone had to offer. Anand remembers how Qureshi once came back excited from a dinner he had curated for the Afghan ambassador because he had discovered the brinjal dish known as 'badin jaan'. Overnight, he recreated it for Dum Pukht, the restaurant at the Maurya Sheraton, that became synonymous with the master chef and a standard-bearer for Indian fine dining. Dum Pukht's Badin Jaan consists of wheels of smoked brinjal with a spiced tomato topping and a smooth, creamy spiced yoghurt sauce. It was at Dum Pukht that the jugalbandi of the doyen of food writers, the late Jiggs Kalra, and Qureshi created sensations such as the Kakori Kabab (the melt-in-the-mouth version of the chunky mutton seekh kabab), with Kalra inventing the story of the toothless nawab in its honour, the signature Dum Biryani, and umami-packed gravy dishes such as the Koh-i-Awadh, the 'paya' reinvented with lamb shanks, and Mahi Dum Pukht, red snapper fillet cooked in an almond and brown onion sauce. He had created this dish first for the wedding of a Mumbai socialite's daughter in 1972 and he gave it a Bengali twist a couple of decades later with his Mahi Qaliya, where rohu fish cooked in mustard oil is the base ingredient, for a Kolkata-based news baron. With the passing of Imtiaz Qureshi, India has lost a chef who not only gave Indian fine dining a new lease of life and a personality of its own, but also, despite being unlettered, became its finest and most colourful spokespersons around the world.

If a mall has a vacancy of more than 40%, it’s defined as a ‘ghost mall’. The highest number of ghost malls are in Delhi NCR , followed by Pune and Hyderabad. Lack of due diligence, mall shortcomings such as size and ownership patterns, design issues, faulty layouts with dark alleys, lack of customer walk flow management, low occupancy and lack of anchor tenants — have all contributed to the creation of these ghost malls. “All attempts to breathe life into these assets and attract a good retailer mix and footfalls have been unsuccessful. As a result, the revenue generation potential of such malls is far below the expected threshold,” the report said. In some cases, termination notices have been served to shut down a few large format stores which comprised an entire mall. Discontinuation of operations, demolition of shops inside the mall premises and auctioning of the mall property due to non payment of dues to the local mall authority are also underway, said the Knight Frank report. The report also has a few suggestions for utilising these ghost malls. “The vacant spaces of ghost malls can be used for thrift stores, food and clothing banks, exhibition, presentation and event spaces. <keyword id="153014" type="General" weightage="50" keywordseo="daycare" source="Orion">Daycare</keyword>, elder care, pet care and even elementary and secondary schools can be opened. Workforce training centres and human development centres for government services can also spring up in ghost malls,” said <keyword id="1417134" type="General" weightage="50" keywordseo="shishir-baijal" source="Orion">Shishir Baijal</keyword>, chairman and MD of Knight Frank India at the unveiling of the report. Leasing out empty spaces for long-term commercial use to local businesses that cannot afford high rents in prime office business parks or popular business districts can also be done, the report suggested. Demolition of the existing structure and sale of land to minimise the losses was another suggestion that was put forth. Malls witnessing growth despite rise of e-commerce The report also stated that excluding the ghost malls, the overall mall health has improved post pandemic. There were 255 malls in 2018 but it has risen to 271 now — adding over 15 million sq feet. Despite the rise of e-commerce, India’s physical stores still account for 95% of retail business, the report claimed. The retail industry will continue to account for 10% of India's GDP for the next five financial years. The organised retail sales grew at a CAGR of 24% between FY 2017- 22. The organised retail sector in India, despite taking a hit during the pandemic, is still growing. Post Covid, the recovery in operational metrics of malls has been healthy, with consumption in January-June 2022 growing 20-25% from the same period in FY2020, the report said. “With this large-scale pent-up demand, shopping centre development has seen a new rigour after being at a standstill for almost 2 years. In the next 12 months, we expect an addition of 8-9 mn sq ft of mall space.This is not just limited to the tier 1 markets. Tier 2 and 3 cities are also ready to support mid to large scale mall developments,” Rajneesh Mahajan, CEO of Inorbit Malls said. As per <keyword id="913436" type="General" weightage="50" keywordseo="knight-frank-research" source="Orion">Knight Frank Research</keyword>, organised retail sales volume is estimated to grow at a CAGR of 17%, from $52 billion in FY22 to $136 billion by FY28. New Delhi, Mumbai and Bangalore have the maximum number of malls, with Hyderabad performing the best in maximum occupancy in Grade A or premium malls. With a whopping 44,30,008 orders on Zomato and 5.5 lakh on Swiggy, it has enjoyed popularity across all states, leaving behind pizza, pasta and french fries. As per Swiggy’s StatEATstics report, Veg, Chicken, Mutton or Aloo, collectively some form of Biryani was ordered more than once every second in 2020! For every Veg Biryani, there were six Chicken Biryani orders. Chicken Biryani was the number one sold dish, Mutton Biryani snagged the 5th spot. Swiggy also added 3 lakh new customers because of Biryani as they made their debut on the app by ordering the dish. Zomato, on the other hand, delivered 22 biryani every minute in 2020!
