Pav-bhaji, the buttery, delicious goodness that the streets of Mumbai rewarded us with many years ago has been everyone’s favourite street food.

Just picture those dollops of butter on the spicy bhajji you’re about to cream off with the softest pav available. Too good to be true, isn’t it?

Yep, still capable of inducing cravings at any hour of the day.

Along the years, we’ve also gone ahead and taken the liberty of creating the concept of fusion food with pav-bhaji at the very centre of of that process. Think, pav-bhaji fondue and pav-bhaji pizza.

But, this one Mumbai restaurant took it to another level altogether with its charcoal pav-bhaji.

Masala Bar, a recent addition to Carter Road’s ever growing list of restaurants has introduced a Carbon Pav-bhaji in its menu, which basically includes tossing all the ingredients together with carbon. Yes, even the bread.

According to the person who runs the Instagram account @foodhangovermumbai, this pitch-black version of Pav-bhaji tastes exactly the same as the Pav-bhaji you get on the streets, except with less butter, while another brave soul says, “It has a distinct taste and is a must try” while reviewing the restaurant on Zomato.

Nope, still not convinced!

But, incase you want to try it, you know where to head to. As for us, we’ll stick to our plates of extra buttered, unnaturally orange pav-bhaji, thank you.
