A bakery in Vietnam turned more than 66,000 pounds of dragon fruit, unsold because of the coronavirus outbreak, into wildly popular pink baked goods in just 3 weeks

Carb-loving crowds flocked to ABC Bakery as the chain added new pink baked goods to the menu in February.

The red dragon fruit baguette was an instant hit.

...and red dragon fruit buns made with durian filling.

The durian hints at ABC Bakery's larger mission to promote local Vietnamese ingredients.

ABC Bakery has turned to local ingredients in an effort to help Vietnam become more self-sustaining amidst coronavirus concerns, as well as add value to local agriculture, according to Angela Kao.

The bakery is using two tonnes — more than 4,400 pounds — of dragon fruit a day.

In recent weeks, the price of dragon fruit has risen closer to its normal rate, and Vietnam has eased up on trade restrictions with China.

ABC Bakery plans to create new recipes using local ingredients such as durian, watermelon, banana, yam, and sour sop.

But, the dragon fruit will not be forgotten. On Tuesday, Angela Kao shared a photo of ABC Bakery's latest product — a not-yet-launched red dragon fruit bun with salted egg yolk.
