What a doctor who wrote a book about the Mediterranean diet eats for dinner

<p class="ingestion featured-caption">Dr. Simon Poole is a doctor and author of books on the Mediterranean diet.Getty/Simon Poole</p><ul class="summary-list"><li>The Mediterranean diet is considered the "gold standard healthy diet," a doctor said.</li><li>Dr. Simon Poole, an expert on the diet, shared three dinner recipes with Insider.</li></ul><p>If you're looking to add a Mediterranean flair to your dinners, try recipes like oven-baked fish with wholegrain rice and greens or chicken breasts stuffed with mozzarella and served with roasted vegetables.</p><p>Not only might these dishes whisk you away to an <a href="https://www.insider.com/the-white-lotus-hotel-room-tour-sicily-four-seasons-photos-2023-5">Italian island</a> (in your mind, at least), but they could make you healthier, too.</p><p>"The <a href="https://www.insider.com/mediterranean-diet-healthy-snack-ideas-2023-5">Mediterranean diet</a> is recognized as the gold standard healthy diet," Dr. Simon Poole, a UK-based expert on the diet who has written a book about it, told Insider.</p><p>The <a href="https://www.insider.com/mediterranean-diet-ranked-as-best-diet-of-year-6th-time-2023-01" rel>Mediterranean diet</a> focuses on vegetables, legumes, seafood, and olive oil, and encourages a reduction of processed and fried foods, red meat, refined grains, sugar, and saturated fat.</p><p>"It's a traditional, plant-predominant, natural, <a href="https://www.insider.com/guides/health/diet-nutrition/what-is-processed-food" rel>unprocessed</a> diet for which there has been a very <a href="https://www.insider.com/guides/health/diet-nutrition/mediterranean-diet" rel>considerable amount of really good, high quality scientific research</a> to show that it reduces the risks of really so many chronic diseases, from heart disease and stroke through to many cancers and even <a href="https://www.insider.com/mediterranean-mind-diet-linked-to-lower-alzheimers-risk-brain-study-2023-3">Alzheimer's disease</a>," Poole said.</p><p>He shared three of his favorite Mediterranean diet dinner recipes with Insider (check out Poole's <a href="https://www.insider.com/mediterranean-diet-breakfast-recipes-2023-6">breakfast</a> and <a href="https://www.insider.com/mediterranean-diet-lunch-recipes-2023-6">lunch</a> recipes, too). Poole's recipes are guidelines, so use quantities based on your personal preferences and how many people you're feeding.</p>
