A couple quit their jobs to open a floating pizzeria in the Caribbean - and their business is thriving
The couple bought a 37-foot, termite-infested boat that had been abandoned for nearly a decade. It took two years to transform it into a fully-equipped commercial kitchen.
“Business has been great,” Sasha Bouis told INSIDER in an email. “Our busiest day was International Pi Day (March 14) when we sold 90 pizzas. On an average day we sell between 30 and 40.”
The boat is outfitted with solar panels to power many of its appliances, the couple told Bloomberg. They even have an on-board “water maker” that desalinates ocean water so it can be used for cooking.
Chef Tara creates special pies like the Carbonara, with fresh-caught lobster, and the sandwich-inspired Cubano, with locally-smoked pulled pork, Swiss cheese, pickles, and mustard sauce.
PiZZA Pi is rated best of all 195 restaurants in St. Thomas, according to TripAdvisor.
The couple told Bloomberg they get a range of customers — from yachts to dinghies and everything in between. One customer actually swam up to the boat.
"As a native New Yorker I am quite a pizza snob and I am probably PiZZA Pi's biggest critic,” Sasha Bouis said. “New Yorkers say that the pizza is better than in New York, but that might be just because they are eating it on a boat in the Caribbean.”
PiZZA Pi is open daily from 11am to 6pm, serving classic pies plus out-there options like the coconut- and mango-topped Rasta Mon.
